#RECIPEFRIDAY: Easy Zesty Lemon Chicken Spaguetti...

I had some extra lemons laying around so I thought I'd make use of them.

Seeing that...

I've always enjoyed a citrusy flavour to my pasta...

I thought I'd make something specially for SuperFit in hopes that...

He'd also like his spaguetti a little zesty too!

I mean...

Who doesn't like a little zest in their life?! :P


But before I get to my recipe...

I'm happy to share that I've been running quite regularly on the treadmill (pain free!) since I was give the green light to run again so...

I can't wait to actually be able to go outside and see what my indoor training will bring! (I won't deny though, there is a part of me that fears the pain will come back but, we'll just have to wait and see...until the snow actually clears!)

But enough about me...

Let's get to the food!

Easy Zesty Lemon Chicken Spaguetti

Prep Time: 5 minutes
Cook Time: 15-20 minutes
Ingredients

  • Spaguetti (good for 2 servings - leftovers are always good)
  • 1 chicken breast
  • 1 lemon - zest + 2 tbsp juice on reserve
  • 8 cherry tomatoes, halved
  • Salt and pepper to taste

Optional

  • 1 garlic cloves, sliced

Instructions

  1. In a large pot of boiling water, add in your spaguetti
  2. In the meantime, oil your fry pan and turn your element on to medium/low heat
  3. Add chicken breast, flip every so often and cook until done (about 10 minutes - depending on size)
  4. Remove from heat
  5. In the same pan, add in your cherry tomatoes
  6. Add in salt and pepper to taste
  7. Cook for about 4 minutes
  8. Slice your chicken into pieces and throw into the pan
  9. Turn your element down to low
  10. Once your pasta is cooked, use a colander to drain the water
  11. Add in a serving or two of pasta into the pan
  12. Add lemon juice
  13. Mix around
  14. Turn you element off, plate your spaguetti and add a little zest to top.
  15. Enjoy!
optional
  • Add in some garlic when cooking your tomatoes for additional flavour
  • Parmesan cheese I'm sure would be quite delish too!

#RECIPEFRIDAY: Seared Tuna Salad in Under 15 Minutes...

I love seared tuna so...

This past week I bought us some tuna steaks and threw my portion into my salad.

It was the bomb!

It literally took under 15 minutes to assemble my salad and sear my tuna which...

Made for a real timesaver because I was hangry. (I kid, I kid)

But...

That being said...

If you're ever in a hurry and need to make something quick...

Try this!


Seared tuna salad in under 15 minutes

Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients

  • 1 Tuna Steak
  • MTL Steak Spice
  • Olive Oil, spray
  • salad
  • Spring mix lettuce
  • 1/2 avocado, small
  • 1-2 tbsp dehydrated onion
  • 1 tbsp balsamic vinegar
  • Pepper to taste
Instructions
  1. Over medium/high heat, spray your fry pan with olive oil
  2. While the pan is heating up, spray you tuna steak with a splash of olive oil, then add MTL steak spice to taste
  3. Once you are done doing that, combine the salad ingredients in a bowl
  4. As soon as your pan is heated, gently place your tuna steak in the pan
  5. Sear for 4 minutes on one side, reduce the heat to medium/low heat
  6. Flip to sear other side, 3-4 minutes
  7. The middle of the tuna steak should be pink in colour
  8. Remove from heat, slice up and add to your salad
  9. Enjoy!

5 ways to add more oophm to your treadmill runs...

Since I was given clearance to run by my Doctor about two months back…

I’ve slowly been treading my way on the treadmill to get my legs running again.

After being told that my 4 stress fractures had healed (which took a little over 6 months)

I was excited to put on my running shoes again! (How could I not be!)

Actually...
These Nikes are retired.

So…

As I made my way a top the treadmill…

I made a promise to myself to be…

  1. Aware of my state of being, with more emphasis on the physical  (the area of injury). In other words, not ignore any sign of discomfort thinking I can run through it (them). (I was wrong in thinking my last injury was nothing)
  2. Mindful of not over-doing it because my cardio vascular system could handle more than the time allotted to my run in re-introducing this exercise into my routine
  3. Forgiving of my being if it wasn't yet ready to run again. (It's amazing how hard your first few runs are after stopping for a while. No doubt, you have to give yourself, both mentally and physically, some time to get back on track!)

To be honest…

I was a little scared of my first run because I was afraid I’d feel pain or…

That I’d injure myself right off the bat.

But it turned out great.


I ran with the wind (at least the draft I was getting indoors) and…

I was so happy that the sweat dripping down my face was from the strides I was making. (Literally too!)

That was the first run…

And then I moved on to my second, third, fourth, and fifth! (I’m pretty sure I’m now on my 18th run on the treadmill.)

By # (I dunno) on the treadmill...

It occurred to me that I was doing a few things to add more oomph to my runs. (You know, things to keep me going!)

So today...

I'm sharing some of those extra oophms:
  1. Create a few playlist with songs that keep you moving or, if you're like me, have a variety of different genres (blues, pop, rock, R&B, hip hop, dance etc.). From old school, to new school, to a mix of both.
  2. Get a treadmill running partner. I swear, time flies when you're running with a friend by your side! It's a great way to catch up too.
  3. Listen to meditations (this is how I got my running groove back last year. I listened to daily meditations during my runs. Try it. I swear it brings so much zen into your runs and it truly enlightens you by the end!)
  4. Other than watching a movie, a show, or listening to an audio book...
  5. Enjoy your time doing something that gets you moving. I swear, sometimes I just run it out with nothing in ear or distractions in front of my eyes. I simply savour my time to breathe. There ARE times that the last thing you need is anything but a distraction to keep you moving. You just need to move. Period.

I don't have a recipe to share since I haven't had a chance to create something new!

But...

That doesn't mean you can't share what you've been making and loving lately!
