#RECIPEFRIDAY: Self-Care and a Hearty Anytime Omelette

Hey friends...

Happy Friday!

I mean...

Happy #RECIPEFRIDAY, of course :P

As things have been pretttty busy over on my end...

I've been making sure, as best I can, not to let the busyness get in the way of...

Taking care of myself.

In other words...

Eating well, exercising and keeping myself sane ;)

Oh...
And staying caffeinated too :P

I mean...

How often does it happen that when we get busy...

We find ourselves pushing aside those things we shouldn't ought to.

Like...

Making good food choices, pumping it up at the gym, running it out (or, whatever it is you do to keep yourself moving!) and/or taking some time to breeaaaaaaaatttthe.

Believe me...

I've been there.

I've been in situations where I've pushed the self-care out the window because...


Time to take care of myself, my health and my overall well-being.

And trust me...

During those busy times...

The thought of self-care was just too much to ask for because...

I just didn't have the time to FIT it in. 

No time to pump it up.

A few months ago...

I was there. 

And I was quickly reminded by SuperFit that simply because we may sometimes be taken oven by everything else...

Which leave us with little to no time to breathe that...

It's no excuse to forget about ourselves.

That in forgetting about our own self-care and doing those things we love doing best, for our own sanity well-being...

We risk hurting our very self as a result.

And that's the truth.

So...

As I am reminded of this during this busy time...

I am mindFUl of my health and...

I am making sure that I don't push myself aside because...

That is not a healthy option in neither body or mind. (Make yourself a priority!)

taking a minute to stretch it out is always a good pause.

And in talking about healthy options...

Here's a hearty recipe I have to share with you in this edition of #RECIPEFRIDAY!


Hearty Spinash and Smoked Trout Egg White Omelette

by *CaNdY FiT*
Ingredients

  • 6 egg whites
  • 2 slices of smoked trout (or salmon)
  • 1 handful of spinach
  • A few mushrooms, cut into pieces
  • 1 tbsp ground Northcoast Naturals Daily Cleanse
  • Salt and Pepper to taste
  • optional
  • Guacamole or sliced avocado to top.
Instructions
  1. Turn your element on to medium/low heat
  2. Spray your fry pan with cooking oil of choice
  3. In a bowl, combine the ingredients, with the exception of the smoked trout and spinach
  4. Pour the omelette mixture into your fry pan
  5. Once the omelette has turned slightly white in colour, add the smoked trout slices and spinach to one half
  6. Continue to cook until the liquid eggs are almost done
  7. Flip one half over the other
  8. Continue to cook for about 1 minute
  9. Flip the omelette over the other side for another 1 1/2 minutes
  10. Turn element off, flip omelette onto a plate and enjoy!

#RECIPEFRIDAY: Easy, Savoury, Smoked Salmon Sushi....

Okay...

So we all know I love sushi.


Well...

The other day...

I bought some smoked salmon and figured I'd make smoked salmon sushi...

The easy way.

No literally...

I decided 5 minutes before serving that I would make use of the smoked salmon in a way that...

Both SuperFit and I enjoy best.

In the form of little sushi delights.

Alongside this dish too...

I made my easy seared scallops



And...

Smoked Salmon stuffed avocados.

And the crowd goes wild over the word avocados!

But I won't take credit for the avocado recipe because...

I totally got inspired to make these via this girl. (Pretty sure I googled the word avocado and her recipe popped up....which is amazing by the way!)

Okay so back to the easy, savoury sushi! (Or did you mind already wander?) :P

They are easy to make, and FUn to eat so...

Don't stress about shaping or nothing...

Just worry about running out! (They are totally not professional, but tasty mind you!)

SuperFit's Yummmmmm-eh plate!

Easy, Savoury, Smoked Salmon Sushi

Ingredients

  • Smoked Salmon slices (however many you want to make)
  • Cooked Rice (sushi or short grain rice)
  • 1 tsp Korean BBQ sauce (I used President's Choice)
Instructions
  1. Once your rice has slightly cooled, form little balls with your hands
  2. Simply top the balls with smoked salmon
  3. Brush a touch of Korean BBQ sauce to top.
  4. That's it, that's all.

#RECIPEFRIDAY: Super Yummy Salad....

I couldn't think of a better way to describe this salad combo I'm about to share with you so you're stuck with...

Super Yummy Salad. (Hey, it's straight to the point!)

But trust me...

It IS yummy and I've been eating for the past two weeks so...

Something must be tasty to keep me making it again and again.

It's really simple (like really) yet...

Very flavourFUl at the same time that...

I had to share it with you today in this edition of #RECIPEFRIDAY.

Plus....

It's something I've been eating on the regular so...

Why not share the goodness which I have been savouring as of late :)

Oh and one last thing...

You can pretty well add anything you like to it for extra flavour...

So...

Have FUn with it!



Super Yummy Salad

Ingredients

  • Spring Lettuce
  • Handful of spinach
  • Oven broiled salmon, flaked
  • Or
  • Cooked chicken, cut into cubes or stips
  • 1 hard boiled egg, sliced
  • 1/2 avocado, mashed
  • 1 tbsp Dried onions
  • Salt and pepper to taste
  • 2 tbsp Balsamic Vinegar
Instructions

  1. Toss all of the ingredients in a bowl, take out a fork and enjoy!

Back to Running...

It's been a loooooooooong while...

No seriously...

It has been!


After being told well over 6 months ago that I had to take a break from running because...

I had four stress fractures all in one leg (yes four)...

I had no other choice than to...

Put my sneakers away until my results came back with no injuries in sight. (wanh wanh)


At the time I was told about my injuries...

I was presented with the following options:

1. No running until you get clearance
2. We'll put a cast on your leg if you don't listen to #1

Well...

The choice was easy...

But not favourable mind you! (And just when I had totally found my groove...or so I thought lol)

Having said that...

I was so completely grateFUl for (my amazing Doctor!!) the fact that I was even presented with options in the first place that...

I had to suck it up and simply take running out of the equation until FUrther notice.

Peace out.

I can't say that the time off from running didn't come without the temptation to put on my kicks and go around the block or something but..

I didn't want to risk worsening my current injuries! (As hard as it was sometimes!)

Plus...

I was told I could still do everything else...BUT run...

So...

That meant I could still bike, lift and, well, like I said...

Do everything else but!

Drink more coffee? :P

Now...

I totally could have let this news get me down...

But...

I didn't. (Well, maybe in the beginning I did! Actually, I totally did! I was totally bummed out at first!)

Eventually though...

I found light in the situation and..

I made the most of it.

Yes...

The news meant that I had to withdraw from my planned half-marathon race and that...

I couldn't spend my summer and fall days running with the wind...

Or the Swans.

But...

At least I was able to do all the other things I loved doing too! (I couldn't rush the healing. I had to be patient!)

To make a long story short...

Fast forward to this present day...

I've finally been given the green light to lace up again!

So believe me when I tell you...

The light is sure shining bright!

So bright my hair looks blonder! :P

And don't you worry...

I'm starting off wayyyyyyyyyyyyyy slow as I get back into my grooove! (It started with the treadmill this past weekend which was PAIN FREE!!!)

#RECIPEFRIDAY: Easy Seared Scallops...

Heyo!

It's #RECIPEFRIDAY (already!!) and I have a recipe that is FUn and easy to make!

Scallops.

Yep.

Scallops.

You know what comes to mind when I hear the word scallops?

Chef Ramsay yelling at his Chefs that they are cooking them "RAWWWWWW".

You know what I mean if you've ever watched Hell's Kitchen lol (Apparently they are hard to make, consistently!)

Who knew?

Anyway...

I saw them at the grocery store and figured...

Heck....

Why not give it a try?! It can't be that hard!

It's not.

Well...

Maybe I just got lucky but...

It's pretty simple!

Just see for yourself!


Easy Seared Scallops

by *CaNdY FiT*
Prep Time: 1 minute
Cook Time: 5 minutes
Ingredients

  • 6 small scallops
  • Olive Oil (sprayed to coat fry pan)
  • Salt and pepper to taste (alternatively, MTL Steak Spice)
Instructions
  1. Coat your medium sized fry pan with Olive Oil
  2. Turn your element on to medium/high
  3. While your element heats, salt and pepper your scallops on one side
  4. Once your fry pan is hot, place your scallops in the pan, making sure they do not touch
  5. Sear one side for about 1 1/2-2 minutes (until a golden crust forms)
  6. Flip to sear the other side, for the same amount of time.
  7. And that's it. You're done!

A New Year and #RECIPEFRIDAY...

Happy 2015 everyone!

I hope you all had a great NYE and are ready for what this New Year will bring.

My 2014 ended on a sweet note :P
We even watched the ball drop!
(Last goal of the y ear was a success! lol)

If there's something I've learned over time it's that...

As we go on living our lives...

Remember that every day is an opportunity to grow, to love, to live, to set intentions, goals, resolutions and to conquer our fears (etc)...

If anything...

We don't need to wait until a new year presents itself in order to take charge. 

Nope.

We can grab hold of any moment we want and move on forward from there!

Every second, minute, hour, day, week, month and year is yours for the taking so...

Take it, own it and...

Be sure to grab on tight because all directions are open for your exploration!

As I woke up this morning...

I realized it was Friday which means...

My holiday is officially coming to a close It's #RECIPEFRIDAY over here on the blog!

If there's one thing I've been doing a lot of this holiday season it's been...

Working on my sourdough baking! (Always looking to improve upon what I've grown to learn thus far!)

Can you believe a year has passed since I made my first loaf of bread?!
This was at  great workshop I took from a Master Baker!

On the subject of improvement...

After giving baguettes a number of tries...

My first baguettes of 2015 actually looked the part!

You should have seen the smile on my face when I took these out of the oven!

Seriously...

I've been so determined to make these and...

To make them presentable (lol) that...

After my many attempts...

One of the few...

I feel like the time spent learning, working on my methods, applying myself etc...

Has finally produced a result I am ubber happy with! (I brought them to a dinner party I was so excited! lol)

Now to remember what I did....

I kid, I kid. I've been documenting my attempts lol.
