#RECIPEFRIDAY: Savoury Recipes...

Seriously...

I woke up this morning and realized it was Friday!

This week (actually this entire season) feels like it has just flown right by me that...

In those moments I've had to slow down...

I've spent getting over that cold (which lasted me well over a month) and...

Simply being, in the moment. (Although, I have to admit, with the holiday season right around the corner, being still hasn't lasted me tooooo long! lol But, if we are mindFUl of the need to BE present, and at the very least take some time to breeeeaaathe, then that HAS to count for something...right?!)

Having said all that...

I am looking forward to this weekend and enjoying some time to unwind and relax! (In the warmth found on the inside...not the outside, it's cold out there!)

#RECIPEFRIDAY: Savoury Turkey Bacon Sandwich...

Every weekend...

I look forward to a homemade sandwich made with my very own, handcrafted sourdough bread.

Actually...

Both SuperFit and I do.


There's something really quite special about savouring something that you put your heart and soul into making and....

This is one of them.

I mean...

I don't just make a sandwich by quickly throwing toppings on bread....

Nope...

I take my time.


I take my time in deciding what flavours I want us to savour over our meal.

I take my time in putting ingredients together so that I know what to expect with every bite taken.

I take my time knowing that what I've made is going to FUel us just right :)


So...

With that being said...

Please enjoy my latest sandwich creation in this edition of #RECIPEFRIDAY!


Savoury Turkey Bacon Sandwich

Ingredients

  • 1 slice of sourdough bread, halved
  • 1 or 2 cooked pieces of turkey bacon
  • 1 tbsp guacamole
  • 1 tsp sundried tomato pesto
  • 1 slice of Allegro cheese, Swiss, Mozzarella or Cheddar is good too
  • 4 drops of Chipotle hot sauce (optional)
  • 1 or 2 spinach leaves
  • 1 slice of tomato
  • Montreal Steak Spice
Instructions
  1. Slice your piece of bread in half
  2. In a small bowl, mix together the guacamole, sundried tomato pesto, chipotle Tabasco sauce - add MTL Steak spice to taste
  3. Lather the guacamole spread on one half of the bread slice
  4. Add turkey bacon to top
  5. Place the cheese, spinach and tomato on the other half
  6. Top one half over the other and...
  7. Enjoy!

  • Like a warm toasty sandwich? If you have a panini grill, turn it on. Spray both half sides of the bread with olive oil, flip them over, then add toppings as per instructions laid out above. Once your panini grille is ready to go, place your closed sandwich on the grill, close the cover and grill for about 5-6 minutes.
  • If you don't have a panini grill, you can either bake your sandwich in the oven at 350F for about 5-6 minutes, grill it on the BBQ (watching carefully that you don't leave it on too long when getting those grill marks) or in a fry pan (like if you were making a grill cheese)

#RECIPEFRIDAY: Easy, Extra Lean, Smokey Style Chili...

It's been chilly here over the past few days and...

With that chill...

Has come the need to make something to bring on the heat...

From the inside out.


On top of that...

Seeing that I'm still sick with this cold (that just won't seem to go away!)...

A nice bowl of smokey chili has seemed to hit the spot quite nice.

So let's get to it shall we?

Smokey Style Chili

Prep Time: 15 minutes
Cook Time: 3 hours
Ingredients

  • 2lbs of Extra Lean Ground Beef
  • 1 (15 ounce) Can of Kidney Beans, drained and rinsed
  • 1 (15 ounce) Can of White Beans, drained and rinsed
  • 1 (15 ounce) Can of Black Beans, drained and rinsed
  • 1 (10 ounce) can Tomato Soup, reduced sodium
  • 1 (6 ounce) Can of Tomato Paste
  • 1 (28 ounce) of crushed Tomatoes
  • 1/2 large onion, diced
  • 1/2 cup water
  • 1 tablespoon of Olive Oil
  • 1 tablespoon of Cayenne Pepper
  • 2 tablespoons of Cumin
  • 1/2 teaspoon of Cinnamon
  • 1 teaspoon of Worcestershire Sauce
  • 2 tablespoons of Chipotle Tabasco Sauce
  • 1 tablespoon of Montreal Steak Spice
  • Salt and Pepper to taste
Instructions
  1. In a large saucepan over medium high heat, heat up your olive oil and brown your onions.
  2. Add in your meat, mix around and let cook until it has browned, slightly.
  3. Add in all of the spices, stir around, then add your crushed tomatoes and tomato paste.
  4. Add in your drained beans, slowly and carefully, mix around, gently.
  5. If the consistency is too thick, add in a bit of water.
  6. Cover and let simmer for about 1-3 hours (depending on how much time you have). Stir, occasionally - testing as you go - seeing if you require more salt, pepper and/or Tabasco sauce.
  7. Note: it can be served and ready to eat in about 20 minutes - but the longer you let simmer, the better tasting your chili will be.

#RECIPEFRIDAY: Curried Sweet Potato Soup (dairy-free)

You know what's amazing when it's cool out...

Soup.

A nice, warm bowl of fresh, homemade soup.


Since we had The Masta over for lunch this past weekend for sandwiches....

On homemade Olive sourdough bread of course :)


I thought...

In a spur of the moment decision...

Why not make soup too.

I mean...

Seeing that everyone (most) enjoy a nice cup or bowl of something warm...

Especially when the temperatures drop and...

When (perhaps) you're feeling a little under the weather (me, right now - wanh wanh)...

A great way to make yourself feel better...

Is soup. (Right?! Right.)

So I got all soupy and made this....


A perfect share for #RECIPEFRIDAY wouldn't you say?

Curried Sweet Potato Soup (dairy-free)

by *CaNdY FiT*
Prep Time: 10 minute
Cook Time: 30 minutes to 4 hours
Ingredients (4 bowls)

  • 3 medium sweet potatoes
  • 1/2 medium onion, chopped
  • 2 tbsp curry powder
  • 1 tsp ginger powder - or 2 inch, peeled and freshly pressed ginger
  • 1/2 tsp ground cinnamon
  • 1 tbsp chicken stock
  • 2 cups chicken broth (or veggie broth)
  • 1 cup water
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and pepper to taste
optional

  • 1/2 an apple, baked and puréed.
Instructions
  1. Cook your sweet potatoes in the microwave or in oven until inside is soft
  2. Spoon out the insides and place in a bowl, set aside
  3. In a medium pot, over medium/hight heat, add olive oil
  4. Let it heat up a little
  5. Add onions
  6. Let brown, slightly
  7. Add in your spices
  8. Stir around
  9. Add in sweet potatoes (and puréed apple if you so choose), followed by broth and water
  10. Stir, cover and bring to a boil
  11. Turn element down to low
  12. Stir and let simmer for an hour, while stirring occasionally
  13. Transfer to food processor or blender, and set to pulse until you reach a soup like consistency
  14. Transfer soup back to pot, and let simmer over low heat for another hour or so
  15. If the consistency is too thick, stir in some water as you see fit
  16. Once you are ready to eat, pour your serving into a bowl or mug and enjoy!
