#RECIPEFRIDAY: Cinnamon, Raisin and Walnut Loaf...

Guess what?

I have a recipe for you all today which...

I hope you try to make yourself!

As I've been testing a few things out in the kitchen over the past little while...

I thought I would share with you something I made just the other day.

So let's get to it shall we...

Seeing that it's #RECIPEFRIDAY and all!


It's easy and....

It can be gluten-free too if you so choose!

Plus...

The inner-mixings are truly up to you! 

Only thing is...

You just have to put some of your creative juices into it!

**Note: this isn't 'bread' so it doesn't have that bread consistency**

Easy Cinnamon Raisin and Walnut Loaf

by *CaNdY FiT*
Ingredients

  • 100 g All-purpose flour (see note for GF version)
  • 100 g Whole wheat flour
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped
  • 1 tsp cinnamon, ground
  • 1 tbsp ground flax seeds
  • 1/2 tsp salt
  • 1 or 2 packets of Stevia
  • 1 1/2 tsp baking soda
  • 1 cup milk
note

  • feel free to make this gluten-free by substituting the all purpose flour with the gluten-free kind.
  • Omit whole wheat flour if you are making gluten-free version - just add 100g more of the GF gluten-free all-purpose flour
  • you can use 1 1/2 tbsp sugar or 1 1/2 tbsp maple syrup instead of Stevia
  • You can try using almond milk instead of milk if you prefer that
Instructions
  1. Pre-heat your oven to bake at 350F
  2. Spray a loaf pan with cooking spray
  3. In a mixing bowl, add the dry ingredients
  4. Stir together
  5. Add wet ingredients
  6. Mix well until combined
  7. Pour batter into loaf pan
  8. Place in the oven and bake for about 30-40 minutes (until cake tester, knife or stick of sorts comes out clean)
  9. Remove from oven, let cool on a cooling rack for 5 minutes, then flip the loaf over onto the cooling rack and let cool for another 10
  10. Slice and enjoy!


note
  • If you want to toast the loaf and serve as slices, cut the loaf into thin pieces then place onto a baking sheet (sprayed with cooking oil)
  • Carefully place each of the slice
  • Put the baking sheet in the oven for about 10 minutes
  • Flip over
  • Bake for another 10ish minutes
  • Once they are nice and crispy, remove from oven, let cool and enjoy!
  • To conserve, put in a air tight container

Think About It....

So I'm sitting here (actually, I'm standing)...

Trying to find something to write about and...

I'm drawing a complete blank.

Usually (like 99% of the time)...

My urge to write comes straight from something...

I've seen, heard, felt, and/or experienced. (And often times too, something I've cooked or baked and wanted to share with you all hehe)

FUrthermore..

The desire to sit myself down in front of a computer (or a journal of sorts)...

Is often brought upon my need to FUrther my thoughts and see perhaps what lesson(s) there is (are) to be learned in the simplest or most complex of things. (Tangible or intangible in nature)

I mean...

It could be as simple, but yet as complex as being grateFUl.

GrateFUl for the freshness of the air.
Life's little things.

Because let me tell you...

Gratitude doesn't come easy to everyone if they aren't willing to see that what they have is plenty.

Why do we always want more?

Like what we have is never enough.

This must have been really good! lol

And why is that the moment we reach a point of when we thought enough was actually enough...

It isn't? (Or it is, but not to the degree we wish it was...)

Is it the media? Is it because we're always asked what's next, like where we are isn't far enough already? That we need more?  Or is it because we feel like our potential hasn't yet been met to the point of satisfaction?

Of course...

It's important to exercise our strengths (encourage growth!) and work on building upon what may not be so strong...

Pushing through.
Literally.

But...

When do we pause, stop, step back (maybe) and perhaps show gratitude towards ourselves (and others) for what we've accomplished (and not just with respect to goals) so far?

And then maybe...

At that point...

Bask in it for a while longer?

I mean really...

Think about it.

Seriously...

Think.about.it.

Over a cup of coffee or something :P

And would you look at that...

I just wrote a post :P

#RECIPEFRIDAY and On The Bright Side...

It's been raining practically this whole week...

And if it hasn't been...

Then it's been nothing but clouds.

That said...

I'm quite certain that the rays of sunshine are bound to light things up again! (Well, at least I'm hoping hehe)

Speaking of lighting things up...

My running shoes haven't seen the light in a while since I've been ordered not to run for a long time (6 months at least!)...

But on the bright side though...

I've been told that I'm able to continue training and cycling! (Thank goodness!)


Because for a second...

I thought I was toast! (Insert drum roll here)

Instead of being toast...
I've been eating my homemade sourdough toast :P

No doubt...

I do have days where I'm totally bummed out that I can't just slip on my runners...


And...

Go for a run but...

At least I can still do other things I love too! (So I gotta be grateFUl for that!)

Talking about things I love...

Lessons in clouded skies...

Over the past little while...

I've been looking up.

Looking way up high...


High above the trees, past the peak of each hill...


And up...

Up at the clouds.


Each day...

As I look up...

These marshmallow-like puffs have taken over the sky...

Each taking a shape of their own.


Which got me thinking...

As the clouds that wander the wild blue (sometimes grey) yonder...


The skies we sometimes see get clouded over, more and more...

Leaving little space for clarity to shine through.


And this my friends...

Can happen to us all as we go on living, moving, and breathing in all of the busyness that surrounds us.

You know...

That feeling when things get a little clouded over and you feel like...

You can't see clearly?


Well...

I know it happens to me.


With that in mind...

Slowing myself down in moments where I've felt clouded has been good practice for me. (Like blogging with the flow, taking time to see with my eyes, and not my screen...and really, taking time to just be...)


Quite honestly...

It's been good not only for me and my sanity but...

For all those that surround me because...

It's with clear, blue, and open skies that I can live, move, think and breathe freely, all at the same time, while keeping everything in somewhat of straight line! (How can I clear my mind if I never take any time to clear it? right?! right.)

Ahhh...
Clarity.

FUrthemore...

Yes, there's more...

Clouds have been a great reminder of my individual self and my strength.

Individual in a sense that no two clouds are the same and that...

We are all unique (we all are different)...

And realizing that...

It is in these differences where lies our strength.


Our strength to be, strength to continue on and learn from those days that may seem (and actually be) cloudy.

Ultimately, in all of the cloudiness ...

This in turn will give us the strength to grow in every way, shape and form as we work on clearing ourselves of the grey, not the blue and white.

All in all...

Remember there is always light waiting to shine through and that...

The sky is truly no limit to what we can achieve if we simply take a moment to see and work past what may seem cloudy to us at the time!

#RECIPEFRIDAY: Tasty Meatballs Made Easy...

Sometimes...

I prepare dinner on the fly.

I have no plan.

I have no real idea what I want to make and really...

No real craving to go on.


That said...

I do know I have food in the fridge and in the freezer from which I can create a tasty meal from! (And for that, I am grateFUl!)

Let's go back to this past weekend...

"What do you feel like eating SuperFit?"
"I dunno, you?"
"I dunno"
"Okay, let's see what we have"

So in the fridge I went where I realized I had some ground meat waiting to be balled up.

I swear...



They take no time to make! 

I mean...

You can add all of your favourite spices and make for "one tasty meat-a-ball"!

So with this idea now in mind...

I share with you a tasty meatball recipe in this edition of...

#RECIPEFRIDAY! 

Tasty Meatballs Made Easy

by *CaNdY FiT*
Prep Time: 10 minutes
Cook Time: 25-40 minutes
Ingredients (10-12 meatballs)

  • 1/2 pound ground meat (your choice)
  • 1 egg, whole (feel free to use just the egg white)
  • 1/2 onion, sliced and diced
  • 1/2 tsp Worcestershire sauce
  • 6 drops of Chipotle Tabasco sauce
  • 1/2 tsp dried parsley
  • 1 tbsp ground cumin
  • Salt and pepper to taste
Instructions
  1. Pre-heat your oven to bake at 400F
  2. Spray a baking sheet with Olive Oil (or a cooking spray of choice)
  3. In a bowl, whisk together the egg and the spices
  4. Add ground meat and mix well
  5. With an ice cream scoop or with your hands, take a small portion of the ground meat mixture and form into a ball
  6. Place on baking sheet
  7. Repeat this until you have no meatballs left to make
  8. Wash your hands clean (if you used them)
  9. Place baking sheet in oven and bake for 25-40 minutes (making sure your meatballs are cooked from the inside out)
  10. Remove from oven, serve along your favourite side and...
  11. Enjoy!

Gratitude and #RECIPEFRIDAY...

It's Friday and...

It seems like a week has passed since I posted last! (Wait, it has been!)

From last week to this week...
The leaves have been changing colours at lightning speed!

Since I've been blogging with the flow over the past few months...

I have to admit...

It's done me a lot of good in a sense that...

I've simply been writing as I feel, in the moment. (Sharing about all things as I go along, although perhaps not right away.)

If anything....

This revised approach has allowed me to be more present...

And...

It's allowed me to digest what I am experiencing, more FUlly.

In addition to that...

It's given me an opportunity to slow down while also...

Giving me a chance to appreciate more of what I'm doing...

So that eventually...

I can share anything that I may have learned along the way.


So with that in mind...

Let's catch up on a few things shall we?

As you know (or maybe not!)...

It was my birthday last week and...

I did my best to savour up as much goodness as I possible could! (In all senses! Can't say it was hard either hehe)

To my surprise...

SuperFit threw me a birthday party! (He's da best!)

Yay for surprises!

And...

I got to enjoy some of my favourite eats throughout the weekend too!

Sushi!

Of course...

That included some of my homemade bread!

Marquis Wheat and Emmer thrown into the mix.
Turned sandwich!

Aside from all of the eats I filled my belly with...

I also made sure that I filled myself up with gratitude.


If anything...

The past year has taught me so much about being grateFUl for both the little (and BIG) things in life that...

Not a days goes by I am not appreciative for all the things I have! (Being both tangible and intangible 'things'.)

No doubt...

GrateFUlness is sure to transcend in all aspects of my being as I continue forward in this new decade year! (By taking 'moments of gratitude' out of my day so that whether I'm having an awesome, good, so so or not so good day, that there is something in my life that I can and should be grateFUl for. It's often easy to forget how much we do have in the grand scheme of things.)

Take a moment to be grateFUl...
Every day.

Moving on...

Okee, so...

Seeing that it's #RECIPEFRIDAY and all...
