#RECIPEFRIDAY: Sweet, Refreshing and (slightly) Spicy Summer Salad...

You know...

I couldn't wait to share this recipe with you today.


I made it last week and...

I'm seriously addicted to this new combination of flavours that have entered my world!

Not only me...

But Mr. FUntastic and SuperFit too!


I have to admit...

It's a recipe that was inspired by a cooking show I saw on TV (in passing! lol) and...

I tried to re-create it based on my memory! (If it serves me well! lol)


Honestly...

It's so refreshing in taste that...

It will leave you wanting more as soon as it's gone! (My brother loved it so much that he immediately asked me for the recipe...which I had winged but turned out to be quite tasty! #WIN)

Have it as a side or, put your chicken (or protein of choice) right in it!

Ever since I tried, tested, and loved...

I've been savouring it ever since!

I've also been adding guacamole for some added flavaaaah!

So I guess I should stop talking about it and...

Just share the recipe with you already!


Sweet, Refreshing and (slightly) Spicy Summer Salad...

Prep Time: 20 minutes
Ingredients
    Salad Dressing

    • 1/4 cup Extra Virgin Olive Oil (a little less will do)
    • 1/2 lime, juiced
    • 1 tsp brown sugar
    • 1 tsp Sriracha hot sauce
    • 1 tsp fresh cilantro, chopped (coriander works fine too)
    • Salt, to taste
    Chicken(or protein of choice)

    • 1 or 2 chicken breasts
    • 1 tbsp Original Char Crust Seasoning
    • Or
    • MTL Steak Spice
    Salad Mixings

    • 1 large bowl of spring mix lettuce
    • 1 small mango, cut into cubes or sliced thinly into pieces
    • 8 cherry tomates, halved
    • 2 tbsp fresh coriander
    • Roasted peanuts, halved (amount to your liking)
    • Guacamole (optional)
    Instructions
    Salad Dressing
    1. Whisk your ingredients together in a bowl, set aside

    Chicken (or protein of choice)
    1. Coat your chicken with your seasoning of choice
    2. BBQ, pan fry or bake until cooked
    3. Once cooked, slice into thin pieces, set aside

    Putting it together
    • In a bowl, add your lettuce, coriander, tomatoes, mango, peanuts and chicken.
    • Add the dressing then mix everything together until evenly coated.
    • Plate, serve, enjoy!

    It's Not Always About Performing...

    Performance is a word that's been floating around me over the past few weeks so...

    Seeing that I'm in a town that is currently thriving on the performing arts...

    I'm going to take this as an opportunity to share my thoughts on the notion of performance when...

    It comes to healthy living and...

    Life in and of itself. (I think there may be multiple posts on this subject, but let's start with this one here...for now.)

    I have to show this goose who's the leading star of this performance ;)

    **

    Think of life as a stage and...

    You are the director.

    Heck...

    You're even the leading star of the show....

    The star of your own performance, really, and...

    You have the ability to write your own script (and re-write, if need be) and...

    Learn from every single scene and act you are in. (If you so choose to open yourself up to the lessons to be learned!)

    FUrthermore...

    As you go on performing...

    It's up to you to shine as bright as you will have it and...

    Do what you can when you can to keep that glowing presence alive.

    There are no lines to memorize and, there are no characters you need to embody other than...

    You, yourself, as you are.

    **With respect to doing what you can when you can, this is meant to say that you don't always have to give your best performance in order to shine.We all need time to breathe, rest and, time to re-focus in order to truly understand our direction...and essentially, how to better our performance, and/or keep it just the way we like it which, will make us shine brighter, really. We all have batteries that need re-charging so, expecting to always give your best performance is somewhat unrealistic. So, if that means we need  to call for intermission and go behind the curtains to breathe , that's okay. Don't feel the need to always push yourself because you risk having that light burn out. Do what you can when you can in order to keep that light shining.**

    Of course...

    As you go on, performing...

    There will be ups, downs, and turnarounds but...

    In all of it...

    There will be lessons.

    Lessons to be learned in your story and...

    Lessons that can and will eventually turn into teachings for you to share...

    With your audience. (Your surroundings)

    My audience has been a captive one over the past few days ;)

    **

    So how does this relate to healthy living? Let's take running as an example.

    As I've been running on the regular as of late...

    Performing is something I've been doing, in waves.

    This photo might be a little dramatic for the point I'm trying to make.

    In other words...

    Sometimes...

    My focus is to get out and perform;

    Perform up to an expectation I've set out for myself...

    Sweet!
    While, other times...

    My focus is simply to forget any of these expectations and...

    Simply....

    Get out there and enjoy what it is I'm doing instead of spending my time...

    Thinking that my performance is the most important thing of all.

    Because it's not.

    Sometimes...
    I have no focus at all other than to savour what there is right in front of me.

    Of course...

    I want to give my best performance and improve as I go along but...

    My best isn't always what's required needed from me.

    I mean...

    If I'm always spending my time performing then...

    When am I able to take it easy? (Rehearse. Practice. Take time to breathe. Slow it down...)

    If anything...

    I've learned that...

    I don't always need to perform, give it my all and push(Because my all isn't always something I have to give, and that's okay...I recognize that I need the time to bring it down a notch. I don't want to stop enjoying the act of running because there is this pressure to always give my best performance.)


    So, with all of that being said...

    I'm going to continue to run along and...

    Simply soak in the lessons to be learned with every stride I take knowing that...

    I'm the lead runner in this performance of mine. (And I don't need to perform for anyone else but me!)

    It's my show to applaud.
    And...
    I totally applauded this performance of mine that was seemingly breathless.
    No intention. No goal. And perhaps my fastest pace this year.

    #RECIPEFRIDAY: Apple Cinnamon Sweet Potato Bites For You and Your Dog!

    As I've been investing more time in myself...

    I've also been spending some good quality time in the kitchen...

    Making treats for the puppies!


    After a slew of articles indicating that there are certain dog treats out there that may be...

    Posing health risks to our FUrry pals...


    I didn't want to take a chance with ours! (I usually get the Chicken Strips jerky from Costco. The brand isn't one that is currently being investigated but, I took it as a sign that I should make my own puppy treats for the time being. Plus, it would be a FUn way to get creative in my baking, for the puppies...and maybe me...you know, for taste testing purposes! hehe)

    ***

    Now...

    Before I share my recipe that is good for you and your puppy(ies)...

    Let me recap a little bit from the week alright?

    ***

    Blogging and being connected...

    You may noticed that I've slowed down on the blog a little bit (just a weeeee bit, not much)...

    If anything...

    It's been both intentional and unintentional.

    Intentional in a sense that...

    I want to spend a little less time in front of a computer and...

    Unintentional in a sense that...

    There are days that go by that I just don't end up on the blog.

    Essentially, I guess you can say that I've been spending more time....

    Being present, looking up, and not down (at my phone or straight ahead at a screen lol)! (It's so easy to get distracted by our phones that it becomes more difficult to stay FUlly present, and in the moment if we don't make a point to 'disconnect' from time to time.)

    So far...

    It's been doing me lots of good!

    Soaking it all up...
    Just like my Bear ;)

    **

    Training...

    I felt like I was due for a little lifting break so...

    I listened to my body and embraced the rest! (7 days worth!)

    If anything...

    I felt mighty strong this week! (Taking a break really did me good!)

    I spread my bat wings and flew...
    My way to the gym :)
    **

    On the run....

    After getting back to...

    Running and all back in April...

    I must say that...

    I've really been enjoying it! (I have to admit, I have had some 'not-so-amazing' runs but, not all runs (just like days) are (can be) great ones so, you do what you can!)

    And, since I've been taking my time...

    Getting into my groove...


    You know...

    Just going with the flow and stuff...

    This has really enabled me to savour every single stride taken!

    It has also eliminated any pressures or stress  to keep up to a certain pace etc so...

    With this no pressure frame of mind...

    I woke up one morning this week (yesterday) with the intention to run for a couple of hours...

    And...

    I ended up running the distance of a half marathon! (21.1kms)

    It was soooo nice out I couldn't resist! (No humidity!)
    Last 3 kms were a little tough but, I got through it!

    If anything...

    It (I) felt awesome! (Minus the armpit burn on my left side lol)

    But...

    Enough about me...

    Let's get to my (and your!) recipe of the week for this edition of #RECIPEFRIDAY!


    If there's one thing I know for sure...

    The puppies absolutely LOVE them...

    Another bite sized recipe for another day ;)

    And...

    As do I! (I may have had one right before my long run ! hehe lol)

    Apple Cinnamon Sweet Potato Bites 4 You and Your Dog!

    Prep Time: 10 minutes
    Cook Time: 15-20 minutes
    Ingredients

    • 2 large sweet potatoes
    • 1 small apple, diced (apple core removed)
    • 1/2 cup oatmeal
    • 1/2 tsp ground cinnamon
    • 2 heaping tablespoons of peanut butter
    • 1 tbsp ground flax seeds
    Instructions
    1. Pre-heat your oven to bake at 375F
    2. Place the sweet potatoes in the microwave until cooked (each microwave is different. Mine takes approx. 8 minutes) Or, bake the your sweet potatoes in the oven at 350F until the interior is soft.
    3. Once cooked, slice open the sweet potatoes and spoon the insides out into a bowl
    4. Add remaining ingredients and mix until well combined
    5. Take an ice cream scooper and scoop the 'batter' into small bites onto your a lightly sprayed (with olive oil) baking sheet (feel free to use your hands too, making sure the 'batter' has cooled slightly)
    6. Bake the bites at 375F for about 15-20 minutes
    7. Remove from oven, place on cooling rack and enjoy one (or two) with your pet(S) once cooled!

    Optional
    • Feel free to do a no bake version. Simply scoop out the 'batter' into balls, place them on a baking sheet or plate enjoy about an hour later.
    • Also, feel free to make brownies (baked or not). Just spread the 'batter' in a baking pan and put it in the oven at 375F for about 15-20 minutes. Or place them in the fridge for about an hour or so for the no bake version.

    Invest Time in Yourself....

    As I was going through my blog post drafts...

    I came across this title. (See above) ;)

    No words were yet written in the body but...

    At some point in time...

    Something inspired me to get this post (thought) started...

    And not forget it.


    To be honest...

    I don't know how much more I can say on this topic other than...

    It's true.

    We all need a little time to decompress right? :)

    But...knowing me...I must elaborate.

    I mean...

    We all need to invest time in ourselves (because the rewards are endless) and...

    No matter the reason for our investment, whether it be for purposes of...

    Rest
    Relaxation.
    Renewal.
    Refreshment of the mind and body...

    And (or, including) for reasons to...

    (Re)Focus (on our goal(s) etc...)
    Spend more time on our well-being (habits, exercise, eating/FUelling) and (not limited to)...
    For reasons to simply enjoy ourselves and our surroundings, wholly and presently...

    We all require some time that is set aside to serve ourselves. (For the sake of our own physical and mental wellness.)

    No doubt...

    If we're always on the go...

    Never taking a moment(s) to...

    Slow down...
    Pause (let alone stop)...
    Breathe and...
    Savour what is in and around us...

    How can we not get lost in the shuffle of all things that be? (If you never take time for yourself, how are you expected to grow and learn as you go along in your journey through life?)

    Take a minute to slow down and enjoy what you have in front of you :)

    As for me...

    I invest and spend time on myself by doing things I love. (And that make me feel like what I'm doing (or not) is doing me good in more ways than one.)

    Be it by way of...

    • Exercising (lifting, running, cycling etc...)
    • Reading
    • Baking
    My zen.

    • Listening to music
    • Writing (not just on the blog) and/or (not limited to)...
    • Doing absolutely NOTHING (which I do really enjoy! Seriously lol)...

    This allows me to...

    Reconnect with myself in a way that...

    (Re)Energizes my being so that I can feel at my best from the inside out. (Consistently, and not just periodically.)

    And... 

    If I feel at my best then...

    There's no questioning that this will also radiate from me, as a person. (And I can let that light shine through...ya know?)

    With that being said...

    As I continue to learn more about the importance of time spent on oneself and all the good that will come of it...

    My hope is that...

    You too (will, can) are able to reap from the benefits it has to bring into your life :)

    So, what are you waiting for?

    Take a moment and invest some time into yourself because...

    The return is worth every second spent!

    #RECIPEFRIDAY: Sweet and Savoury Sweet Potato Tots...

    And so it was Friday! (Hooray! Minus the rain!)

    Thumbs up :)

    Seems like this week has just flown by and...

    Here I am, 7 days later posting...

    Another recipe for #RECIPEFRIDAY :)

    If anything...

    I've spent the past week just taking thing slow and...

    Enjoying my time looking up, savouring all there is to be savoured. (It's not that I was super duper busy or anything, but I was both intentional and unintentional in wanting to slow down, which felt good. I felt more connected with myself and my surroundings) :)

    Although savouring did include me...
    A Pesto Chicken Sandwich smeared with homemade guacamole...
    And of course...
    My own, freshly baked sourdough bread.

    Speaking of bread...

    Here is my lastest!

    I used more whole wheat flour that I got from Watson's Mill.
    I sifted some of the bran out and used it to top.

    No doubt...

    I am looking forward to baking some more this weekend!


    Alright so on with #RECIPEFRIDAY!

    Please enjoy this recipe I've been making on the regular.

    It's quick and easy and...

    Makes for a great side dish!


    Sweet and Savoury Sweet Potato Tots...

    Prep Time: 10 minutes
    Cook Time: 30-40 minutes
    Ingredients

    • 1 or 2 sweet potatoes, diced into cubes
    • 2 tbsp Fresh Rosemary
    • 1/2 tsp Cinnamon (optional)
    • Salt and Pepper to taste
    Instructions
    1. Pre-heat your oven to bake at 425F
    2. Dice your sweet potatoes into cubes (or wedges, but then they are no longer tots lol))
    3. Place into a large bowl and spray tots with Extra Virgin Olive Oil or Coconut Oil
    4. Add remaining ingredients and mix well
    5. On a baking sheet, coat with cooking oil of choice
    6. Add your tots, spread out and place in the oven
    7. Toss and turn your tots about 15 minutes in, then again 15 minutes later
    8. Once they are fully cooked, plate, and serve alongside your favourite protein.

    #RECIPEFRIDAY: Easy BBQ Pesto Chicken

    Is it already Friday?!

    Holy schmokes time fly's when you're way up high ;)

    Hey...
    Sometimes the grass IS greener on the other side ;)

    But I'll be landing shortly (I'm not actually on the plane right now lol) which...

    I'm looking forward to!

    Sushi here I come!
    lol

    That said...

    I did enjoy a little time to savour my surroundings on the ground! (hehe)

    I rocked it out.
    Literally.

    No doubt about it though...

    You all know I'll be excited to get back in my kitchen and loaf around this weekend! (I'm going to try something new in my baking, so I'm crossing my fingers (and toes) that it will turn out. And if it doesn't, then I will try and try again until I get it! That's how you learn right?!)

    This was a really great sourdough loaf.
    I was really pleased with it and...
    I did savour me a few slices :D

    And in addition to loafing around the house...

    I can't wait to get outside and run!

    And get me a high five...
    Running on the treadmill just isn't the same ;)
    I may even get a bike ride in with SuperFit :)

    But enough about me...

    It's #RECIPEFRIDAY today so it's time to share our recipes of the week!

    I'll go first k?

    Actually...

    This is something I whipped up on the fly which...

    Turned out to be so SO savoury!

    So...

    I do hope you get to enjoy it as much as I did!


    Easy BBQ Pesto Chicken

    Prep Time: 4 minutes
    Cook Time: 15 minutes on BBQ
    Ingredients

    Instructions
    1. Turn your BBQ on
    2. In a bowl, place your chicken breast
    3. Add pesto sauce to stop and coat evenly
    4. Salt and pepper to taste
    5. Place the chicken breast on the BBQ and cook for about 5-7 minutes, then turn over to grill the other side
    6. Remove from heat when chicken is fully cooked
    7. Served with side salad and/or baked sweet potatoes
