#RECIPEFRIDAY: Low Carb Tomato Basil Portobello Mushroom Pizza

And so...

It was the day before the weekend! (Finally!)

After a great week of... 

Good food...

I knead to rest...
Just as much as my dough kneads resting time too hehe
This is my sweet & Sour(dough) Artisan Bread :)

I'm looking forward to taking things slower for the next little bit! (Sure am!)

As I'm going to be disconnecting (as of Monday'ish) for just a little over a week (don't worry, I'll be back before you know it hehe)...

I wanted to share something savoury with you all before I rest my fingers! (HA lol I'll be reverting to a pen instead hehe But really, I can't wait to breathe, together, with SuperFit!)

#RECIPEFRIDAY and all...

There's a little something I've been making over the past few days that's been hitting my taste buds just right!


Low Carb Tomato Basil Portobello Mushroom Pizza

by *CaNdY FiT*
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients

  • 4 large Portobello Mushroom Caps
  • 1/2 cup Tomato Sauce even spread amongst the mushrooms (feel free to grind up tomatoes, garlic salt, oregano and pepper)
  • 2-3 slices of Allegro Cheese (or cheese of choice) per mushroom cap
  • 1 or 2 Basil Leaves
  • Salt and Pepper to taste
Instructions
  1. Pre-heat your oven to bake at 375F
  2. Spray you baking pan with cooking oil of choice
  3. Wash and lay out your mushroom caps on your pan
  4. Spoon some tomato sauce on top of each cap
  5. Add cheese, basil leaves, then your salt and pepper
  6. Place in the oven and bake for about 20-25 minutes (until cheese has melted)
  7. Remove from oven, plate, and enjoy!

  • Feel free to add more topping such as veggies, chicken, herbs and spices

Practice Breathing More Often...It's Good For You.

Lately...

I've been talking a lot about slowing down and savouring life, for what it is, right now.

Hi.

As my writing often serves as my own reminders (too!) that I need to pause, and breathe just a little deeper, longer...

I feel like I'm getting better and better at becoming more mindFUl about my knead need to step on the breaks, more often than not.

As I've been focusing much of my attention on bringing myself into a state of calm (day to day), in both mind and body...

More and more do I feel like it is coming more naturally, and freely into my days.


Trust me...

I am no expert when it comes to slowing things down but...

I am conscious of the importance of it and...

How much of a necessity it is for me and my overall well-being.

I mean...

In a world where we are always on the go...

We must remember to pause and breathe, and take that extra breath of air because...

It will help us unwind (even if only for a split moment), and give us a moment of 'ahhhhhh (say it out loud now) that we may very well need. (No matter how short or long our breath...it's important that we find our own way(s) to slow things down in the 'rush' of it all.)

It sure is.
And you know what...
You can still keep on going even while resting.

If anything...

Those moments are definitely worth savouring too!

I thought I would give you a glimpse into what I've been into as of late!

Coffee.
Perfectly balanced....
Literally.
Sweet and Salty Egg Whites.
Dash of salt,  pepper, NOW Vanilla Stevia, Cinnamon and Ground Flax Seeds
Protein Shake.
Salmon Salad.

SUUUUSSSHHH.
My fave ever.
Mmm yes...
Can't forget about these.

My drink of choice as of late.

Our Knead [need] To Enjoy The Journey...

I just needed to knead this past weekend and...

What's even more awesome is that...

I got to knead with my little sister Kiki...

How neat is that!

And......

Teddy of course!

In yo face! hehe

If anything...

Baking Artisan Bread has become more and more therapeutic for me since my very first loaf and..

As I continue taking care of my Levain (by feeding and reactivating it)...

My Sourdough starter I got from Master Baker John back in December.
As you can see...
It's still alive and growing ;)

I'm seeing an interesting connection between...

My knead need to continue taking care of myself and my overall well-being  (both in body and mind.) and...

My knead to continue taking care of my Starter in order for it to grow, and stay active! (Alive.)

Another vessel to my inner-ohm.
Feeling alive when I'm active and in motion.
But also...
At rest.

Much like the process of making bread (taking care of my Starter and creating my own recipes while developing my own techniques as I go along <---learning by reading and watching different hand work(wo)manship)...

The different phases of baking Artisan Bread reminds me of my journey to healthy living.

Having to...


All of these things have enabled me (and my bread hehe) to...

Grow in every way shape and form.

Always changing and evolving with each day (and baking session) that passes me by.

Without a doubt...

We all knead to live life without rush and understand that...

We knead to trust the process, take things slow, and work at our craft in order to...

Move forward, knowing that each day and every effort will be worth it!

In addition to this...

We knead to ensure that...

We enjoy each moment of our journeys through life because...

When the crumbs fall where they may (and we achieve whatever result it is we seek)...

We will be present, ready to savour it all up :)

Enjoy the journey...
You knead to.
Slow down.
You knead [need] to.

#RECIPEFRIDAY: 3 Ingredient Chocolate Protein Pudding.

Mmmmm...

Friday...


The day where we all get to savour in the goodness we've been making in our kitchens.

As my week has gone by fairly quickly (and restFUlly)...

I've also been getting lots of extra sleep into my routine (as in I've been going to bed earlier than normal)...

And as a result...

I've been feeling well rested in body. (In mind too, but I know that I will be getting more mind rest once I'm packed up and away on holidays...coming up real soon!)

If anything...

I've been doing what my being has been calling for and that is...

Giving it some extra zzzz's! (I typically get 7-8 hours of sleep..but I've been adding an extra 1/2 to 1hr more each night...unintentionally...just letting myself fall asleep.)

This little book has been a great vessel to my inner-ohm.
In addition to this.

I ain't no machine...

My workouts this week in a nutshell ;)

So...

It's only normal that I need some recharging too! (And I plan to do a whole lotta that this weekend while I loaf around with my sista!)

And...
Teddy of course ;)

Alright....

Onto my recipe of the week!

What I'm about to share is actually something I've been drizzling on top of my low carb protein pancakes...

Recipe

But...

In the midst of being on the road last week...

I've been enjoying this little cup of protein goodness ever since!

It only requires 3 (or 4) ingredients and...

It's as tasty and filling as ever!

Enjoy!


3 Ingredient Chocolate Protein Pudding

by *CaNdY FiT*
Prep Time: 1 minute
Ingredients

  • 1 1/2 scoops Chocolate Protein Powder (brand of choice)
  • 2 tbsp Cocoa Powder
  • 1/4 cup water (enough to get it thick and gooey)
Optional

  • 1 (or 2) packets of Stevia or a few drops of sweetener of choice (I use NOW Vanilla Stevia)
  • 1 tsp ground flax or chia seeds (optional)
Instructions
  1. Mix ingredients together in a small bowl or mug
  2. Enjoy as is or, refrigerate for 1 hour or, freeze for 2 hours.

note
  • The consistency changes as you enjoy mixed, refrigerated or when frozen. My fave is when it's frozen because it's like ice cream.

Rest, Nourish and Savour.

It's already Wednesday!

After Monday's Family Day holiday...

This week sure has been going by quickly.

That being said...

Since a migraine knocked me out at 830pm last night...

By the time I woke up...

It was already today ;)

Now...

In talking about rest...

Today is a rest day so...

I'm going to take FUll advantage of slowing down and savouring my time to recover and give my body a break.

I won't be headed to the gym tonight.
Instead...
I'll  relaxing in the comfort of my PJs ;)

In addition to that..

I'm going to continue to nourish my being the best way I know how so that...

I can feel at my best both inside and out! (I need to FUel by body and mind right in order to be healthy in both of these areas!)

With that in mind...

Oatmeal Zucchini Protein Bites (squares)
Recipe
Chicken Salad with Sundried Tomatoes and Hummus.
Egg Whites topped with lettuce, mustard grain mustard, and Tabasco (Chipotle) Hot Sauce
Oven Baked Rosemary Sweet Potato Chips.
Sprinkled with sea salt and olive oil.
(Baked at 425F for about 25 minutes)
The new Cookies and Cream Quest Nutrition Bar.
I haven't had it yet...
I'm saving it :)
