Take a Minute and #RECIPEFRIDAY: Easy Ginger Chicken Stir-Fry...

Raise your glasses, coffee mugs, tea cups, forks, protein pancakes (whatever!)...

It's Friday!

Honestly...

I am so happy it's the weekend because this has been one busy week and...

I'm pretty sure my brain is running on overdrive ;)

Teddy's all like...
"Give my crazy dog mom a nap" hehe

That said...

I took my own advice and...

Stopped and smelled the flowers (more than once)...

Because...

I knew that my entire being would thank me for the time spent breathing...

Just a little deeper! (No matter how busy we are, it's important to slow down and catch our breath, even if only for a minute...or two!)

Go on...
Take a good sniff.
No need to scratch ;)

Also (thankFUlly)...

I did have my Teddy Bear to remind me to savour the new Spring air...

Which...

I do believe (I hope) is here to stay!

We took each other out for a walk because...
We both needed to soak in the sun and warmer temps.

Speaking of slowing down and savouring...

I am looking forward to spending some time baking more loaves this weekend! (Honestly, I'm finding such tranquillity in baking bread that, every weekend I get excited about the hours I get to spend engulfed in my loafty zone!)

Last weekend's experiment.
It felt good to take things slow which...
Is something I believe is 'kneaded' not only when it comes to bread making but...
Life as well.
SuperFit said this Sourdough Olive Loaf was the best he'd ever had.
I really did enjoy it as well!
I gave 3 halves away and...
Got  really amazing reviews which...
Filled me right up!

I think I was blushing hehe

**I realize that I mention slowing down and savouring a lot but, I've been very mindFUl to actually take the time to do just that. I'm not just saying it for the sake of blah blah ya know? Slowing down for me can simply mean taking a few moments out of my day to step on the breaks before continuing on again or, giving myself some breathing space to do the things I love like read, bake, watch The Blacklist, paint a mug, anything that relaxes me, really. In other words, just making sure that I instill breathing/me time into my day without the need to rush through it.**

As simple as enjoying each sip I take from my coffee :)

Now seeing that it's #RECIPEFRIDAY...

I do have a recipe to share with you all today!

It's simple, requires very few ingredients and...

It's quite tasty! (If I do say so myself! hehe)


Simple Ginger Chicken Stir-Fry

by *CaNdY FiT*
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients

  • 1 chicken breast, sliced
  • 1 inch ginger, peeled and sliced
  • 2 tbsp green onion, chopped
  • 1/2 tsp sesame oil, optional
  • 1 tsp low sodium soya sauce, optional

note

  • Using Chinese Fondue pre-sliced chicken is great for stir-fry's.

Instructions

  1. Pre-heat a medium sized fry pan on low/medium heat.
  2. Add sesame oil, ginger and green onions
  3. Once it starts to sizzle, add chicken, then soya sauce
  4. Cook for about 5 minutes, tossing and turning
  5. Let cook for another 10 minutes, until chicken is no longer pink
  6. Remove from heat, and serve alongside some rice (optional)

    I am hoping to ease my anxiety this weekend by doing some cooking an lots of yoga! I really need it right now.

  2. Yum! That sounds great, and easy too! I did stop a few times this week to smell the flowers, and it was beautiful. When I ran in my favorite place (video on mg IG), I took some time to take in the beauty of it, and look at the sprouts of green starting to appear, made me feel so much happier!

  3. it was thunderstorming and tornadoing all week so i didn't have time to literally stop and smell the roses :) :) plus i was crazy busy so figuratively i didn't have time either haha i'm looking forward to stepping back this weekend!!
