I am so happy it's the weekend because this has been one busy week and...
I'm pretty sure my brain is running on overdrive ;)

I took my own advice and...
Stopped and smelled the flowers (more than once)...
I knew that my entire being would thank me for the time spent breathing...
Just a little deeper! (No matter how busy we are, it's important to slow down and catch our breath, even if only for a minute...or two!)

I am looking forward to spending some time baking more loaves this weekend! (Honestly, I'm finding such tranquillity in baking bread that, every weekend I get excited about the hours I get to spend engulfed in my loafty zone!)

**I realize that I mention slowing down and savouring a lot but, I've been very mindFUl to actually take the time to do just that. I'm not just saying it for the sake of blah blah ya know? Slowing down for me can simply mean taking a few moments out of my day to step on the breaks before continuing on again or, giving myself some breathing space to do the things I love like read, bake, watch The Blacklist, paint a mug, anything that relaxes me, really. In other words, just making sure that I instill breathing/me time into my day without the need to rush through it.**

I do have a recipe to share with you all today!
It's simple, requires very few ingredients and...
It's quite tasty! (If I do say so myself! hehe)
Simple Ginger Chicken Stir-Fry
Prep Time: 10 minutes
Cook Time: 15 minutes
- 1 chicken breast, sliced
- 1 inch ginger, peeled and sliced
- 2 tbsp green onion, chopped
- 1/2 tsp sesame oil, optional
- 1 tsp low sodium soya sauce, optional
- Using Chinese Fondue pre-sliced chicken is great for stir-fry's.
- Pre-heat a medium sized fry pan on low/medium heat.
- Add sesame oil, ginger and green onions
- Once it starts to sizzle, add chicken, then soya sauce
- Cook for about 5 minutes, tossing and turning
- Let cook for another 10 minutes, until chicken is no longer pink
- Remove from heat, and serve alongside some rice (optional)
