#RECIPEFRIDAY: Low Carb Tomato Basil Portobello Mushroom Pizza

And so...

It was the day before the weekend! (Finally!)

After a great week of... 

Good food...

Yes...

Just as much as my dough kneads resting time too hehe
This is my sweet & Sour(dough) Artisan Bread :)

I'm looking forward to taking things slower for the next little bit! (Sure am!)

As I'm going to be disconnecting (as of Monday'ish) for just a little over a week (don't worry, I'll be back before you know it hehe)...

I wanted to share something savoury with you all before I rest my fingers! (HA lol I'll be reverting to a pen instead hehe But really, I can't wait to breathe, together, with SuperFit!)

#RECIPEFRIDAY and all...

There's a little something I've been making over the past few days that's been hitting my taste buds just right!


Low Carb Tomato Basil Portobello Mushroom Pizza

Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients

  • 4 large Portobello Mushroom Caps
  • 1/2 cup Tomato Sauce even spread amongst the mushrooms (feel free to grind up tomatoes, garlic salt, oregano and pepper)
  • 2-3 slices of Allegro Cheese (or cheese of choice) per mushroom cap
  • 1 or 2 Basil Leaves
  • Salt and Pepper to taste
Instructions
  1. Pre-heat your oven to bake at 375F
  2. Spray you baking pan with cooking oil of choice
  3. Wash and lay out your mushroom caps on your pan
  4. Spoon some tomato sauce on top of each cap
  5. Add cheese, basil leaves, then your salt and pepper
  6. Place in the oven and bake for about 20-25 minutes (until cheese has melted)
  7. Remove from oven, plate, and enjoy!

note
  • Feel free to add more topping such as veggies, chicken, herbs and spices

  1. Disconnecting is a wonderful idea. Extra bear snuggle time included. I hope you'll have a great rest and come back fresh and recharged. That being said I should probably take at least a full day off/unplugged soon again, too. My brain would probably thank me for the technology break.

  4. Yum! Love turning portobellos into pizzas :) I used a portobello as a bun for my turkey burger the other day too and I was equally pleased.

  8. Great idea for a pizza crust! I've stuffed portobellos before so why didn't I think of topping them like pizza. Your food photos make my stomach growl. I need names of a little of this and a little of that :)

  10. Those pizza mushrooms look and sound so delicious! I love using veggies as a pizza base eg cauliflower crust pizza, zucchini pizza boats, they are all so good. I love using nutritional yeast sauce on pizza as well as pineapple and olives :)
