#RECIPEFRIDAY: Quick & Easy Hearty Vegetable Soup

Not going to lie...

I'm so totally happy it's Friday! (And, that I have the day off to attend to a few errands, which includes bringing Teddy Bear to the Groomers!)

Gosh I love this puppy.
(He will not look like this by this afternoon lol)

Seriously though...

This week has felt ubber long, so...

I'm just looking forward to enjoying this day ahead! (Especially the sushi SuperFit and I will ingest this eve! lol)

That said (and from this moment onwards)...

I'm going to take these moments I have to breathe just a little deeper, and be grateFUl for each breath that I take. (The little things!)


My workouts this week have been good. 

I got to train Back with Nikki on Monday, as well as kick my own butt during my indoor group cycling class! (Thanks to everyone who attended!)

I've been lifting strong and efficiently and...

I've been feeling great pumps after each training session! (My focus is not on setting PRs, it is to perfect and maintain good form throughout each and every rep. My workouts are not defined by how much I can lift nor how many PRs I can set.) 

In addition to my training...

I've also been mindFUl to take rest days in order to...

Give my body and mind the rest they deserve, and need. (And I'm not talking about rest days that still involve cardio or weight training, I mean real rest.)

That involves more cuddle time with my Bear ;)


Yes, it's #RECIPEFRIDAY today and I do have a recipe to share.

I bought myself some new literature because..
I want to learn more about the science behind baking bread....
Sourdough bread, more specifically.
(Although the Artisan Bread in 5 isn't so much about sourdough...
 it's still very interesting and informative!)

That said...

My recipe isn't for bread yet...

It's for a soup that's been warming me up through these frigid temperatures!

It's quick and easy (but don't rush the making of it) and...

It is sure to fill you right up to the core!

Quick & Easy Hearty Vegetable Soup

Prep Time: 15 minutes
Cook Time: 1 hour (if you want to get all the flavours in)
Ingredients (8 servings)

  • 28oz can diced tomatoes
  • 8oz tomato paste
  • 1 can of reduced sodium tomato soup
  • 1 T chicken (or veggie) stock powder mixed in with 1 cup water
  • 2 cups vegetable broth (reduced sodium)
  • 1 medium chopped Onion
  • 1 cup mushrooms
  • 2 small zucchinis, sliced
  • 10 asparagus, chopped into 1/4
  • 2 T Extra Virgin Olive Oil
  • 2 T dried Oregano
  • 1 T dried Parsley
  • 1 T Garlic Powder
  • 1 tbsp Chipotle Tabasco Sauce (optional)
  • Salt and Pepper to taste
  1. In a large pot, over medium/high heat, add in your olive oil and onions
  2. Once heated, add in your spices, followed by vegetables
  3. Stir around until slightly softened
  4. Add in the remaining ingredients one by one
  5. Once you've reached a boil, reduce heat to low
  6. Let simmer for about 1 hour
  7. Taste as you go and season as you please
  8. Enjoy!
