Savouring Time + #RECIPEFRIDAY: Oven Roasted Pesto and Goat Cheese Tomatoes

Happy Valentines Day everyone!

Whether or not you love this day (no pun intended hehe)...

What I can tell you as that I am so looking forward to going home today and...

Getting back to my lovelies! (I've been on the road since Saturday...)

Zippy Bear be missing from the pic.

I'm also looking forward to baking bread for my family...

Last week's Sourdough/Wheat Loaf.
I can't wait to get back into my tranquil space.

Savouring my coffee and oatmeal protein zucchini bites...

Nespresso rocks my coffee cup.
Recipe.

As well as...

Getting back to FFA!

The hotel gym is great...
But...
Nothing beats your home base.

That being said...

I have been savouring my time in temporary surroundings!

Mmmm.
A lovely morning wouldn't you say?
I took some time to slow down and paint myself a new mug.
I haven't gone skating in over a decade.
So...
I decided to put some skates on and make the most of the ice.
Enjoying some in-room creative goodness.
Recipe.
Hot lemon water.
So calming for me and my belly.
The sun...
Setting.

Now (moving on)...

As it is Valentines Day and all (I'm pretty sure I didn't have to remind you of this, again! lol)...

I thought I would share a little something something I made last week that won over SuperFit's belly!

This was the whole plate.
Oven roasted rosemary and sea salt seasoned sweet potatoes with...
Chicken topped with hummus and sundried-tomatoes.

Of course...

Any meal made with love is a successFUl one but...

This little side dish he truly enjoyed and...

I hope you will to!

Oven Roasted Pesto & Goat Cheese Tomatoes

by *CaNdY FiT*
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients

  • 4 roma tomatoes, cut in half or tiered (vertically)
  • 2 tbsp Pesto (I use Le Grand)
  • Goat cheese (to top each tomato slice)
  • Salt and Pepper to taste

Instructions

  1. Pre-heat your oven to 375F
  2. Spray a little bit of cooking oil to your roasting pan, then place your sliced tomatoes
  3. Top with a little bit of pesto and goat cheese, then salt and pepper to taste
  4. Place your pan in your oven, on the middle rack
  5. Roast for about 15 minutes, checking periodically that the tomatoes don't burn
  6. Remove from oven after about 20 minutes, let cool then...
  7. Enjoy as a side to your main dishes.
