#RECIPEFRIDAY: Chinese New Year Recipe Round-up!

Gung héi faat chōi!

In case you didn't know...

Today is Chinese New Year and...

We are celebrating the year of the Horse Goat (if you are reading this today)! (If you want to know your Chinese sign, you can go here)

Interestingly enough...

I don't know what our exact celebratory plans are but...

What I do know is...

A traditional dinner will likely take place this weekend!

I'll have to make my way to the market...
And fill up on some goods.
I might even buy these traditional lucky candies to share too.
My Grandma always had these out.
Lots of memories around these little candies
Red envelopes filled with money (no minimum) are given to the children.
It's what we call Lucky Money.
If we are giving money as a gift, they will come in these envelopes.
Here we are at Christmas time :)

That being said...

I thought I would round-up a few Chinese recipes I've made overtime and shared on the blog in light of this occasion!

Living life without rush update:

As I mentioned the other day...

I've been doing my best to slow myself down.

There have been days this week that have been so completely rushed that, inevitably, left me feeling exhausted (and slightly cranky) but...

I've been mindFUl (and making a point to) pause. stop. and breathe so that I can find my calm. My peace.

Finding calm in the simple things.

I'll continue on with this practise as the days go on.

Enjoying and savouring moments like these :)

Cooking Is Art In The Making...

Coming from...

The non-cook who eventually found a passion for creating (and enjoying) healthy recipes...


I've been finding myself more and more in the kitchen, comfortable, and in my zone.

In a way...

It's been a place for me to relax, and slow myself down.

A place to...

Create whatever it is my gut is calling for.

From getting my ingredients together, to chopping up my veggies, to the actual cooking up of the dishes...

Whatever it is I end up making is...

My very own piece of artwork, prepared to my very own liking! (And SuperFit's too!)

Having said that...

I want to share with you a few things I've been making as of late that have been...

FUelling my passion for food, FUn and creativity...

Oatmeal Protein Bites.
Extra Lean Spaghetti Sauce
I made this recipe with Bison meat.
I add Tabasco Sauce for an added smoky taste.
Oven broiled salmon topped with MTL Steak Spice served with onions and a side salad.
Doused in Chipotle Tabasco sauce (amazing)
Protein Shake with some added Core Power.
Will be sharing these recipes soon.
And of course...
Some bread making too ;)

Live Life Without Rush...

Our home is a little more quiet lately.

With the passing of our oldest of three Bears...

There's a sense of stillness that surrounds us.

As much as we knew Yogi did not have much 'time' left with us (he was almost 14 and lived two more years beyond what we had anticipated (Yogi Bears made his way into my life 4 years ago). No words could ever tell you how grateFUl we are for the extra time we had with him and the added memories we have with us to stay)...

Having said that...

It doesn't take away from the sadness you feel, and the emptiness that presents itself in your life, and in your home when the final moments take place. (Waking up on Saturday morning was when it really hit...with one less bowl to fill at breakfast time.)

But, there is no doubt in our minds that...

Yogi Bears is happy up in puppy heaven and that...

He is looking down at us (from up above), and at each and every one of those lives he has ever touched.

If anything...

His prints are here to stay, and the love he filled us with will be...

Ever-present in our hearts, always.


It's amazing how fast life passes us by.

As I had intended on taking this weekend to slow myself down...

Yogi's passing made me realize, even more, my need to focus my attention on living, without rush.

In my attempt to pace myself...

I spent this past weekend taking things slow.

From waking, to baking, to eating, to training...

I took my time.

I took my time to make this meal with L.O.V.E.
In other words...
I took things nice and slow.

I took my time because...

I want to live life soaking in what it is I am doing. (As opposed to going from one thing to the next, without appreciating the present.)

I don't want life to be a blur or a snap shot...

I want life to be FUll of colour, vivid in every way, shape and form.

I don't want to have vague memories yet...

Memorable ones.

Ones that are...

Clear and rich both in heart and body.

So as I continue on forward...

I will be mindFUl of living my life without rush knowing that...

Each and every moment is meant to savoured, slowly, and FUlly.

It is.

Rush, Rush, Rush and #RECIPEFRIDAY: 5 Ingredient Low Carb Protein Pancakes!

I feel like this week has been one big rush.

And I don't mean like...

"Holy moly that was such a rush!" but more like...

"Holy cow, it's already that time!".

Good thing I got some FUel to keep me going ;)

Despite my being mindFUl of slowing down...

I still feel as though I've been going from one thing to the next without real pause in between everything.

With that said...

I'm finding myself standing here, writing this post, sipping coffee, while cooking and eating pancakes (recipe below) as I go along!

**Actually, just before writing that sentence, I told myself to take a deep breath, savour my food, my coffee, and the moment, instead of scarfing everything down.**

Standing, eating, sipping and writing.

And...I'm back.

As I've been embracing my change of pace (even with the motion sickness I've faced over the past few days)...

I can tell you, without hesitation that...

There is still some adjusting that needs to take place. (I'm not going to lie, as much as I've been enjoying taking the bus, it's been cutting into my time to decompress.)


have faith that I will find my groove soon enough.

My word of the year....
I had this little rock sitting right in front of me at my desk.
It's been there for years.

That being said ....

I've been doing as much as I can when I can...

Reminding myself of this notion pretty well each and every day of this week.

Love that I got to train with my awesome friend Nikki on Monday!
Feeling strong during my workouts...
Yet slightly rushed to get to the gym.
Taking time to rest up because my body and cranium called for it.
You gotta listen :)

You better believe though (with the weekend upon us!) that...

I'll be enjoying my time loafing around this weekend, in my pjs!

Now for my recipe you've all been waiting for! (Right?!! lol)


For the past couple of weeks...

I've been on a pancake kick.

I've been trying out different pancake versions as I go along (testing out different combos and protein powders<--they all pretty well generate the same results)...


I've been keeping them low carb too. (The carbs being from fibrous sources. Although, I did make a high carb version as well.)

After much experimentation...

Please enjoy my 5 ingredient low carb protein pancakes!

5 Ingredient Low Carb Protein Pancakes

by *CaNdY FiT*
Prep Time: 2 minutes
Cook Time: 15-20 minutes
Ingredients (3 medium/large sized pancakes)

  • 1 scoop protein powder (of choice)
  • 1/2 cup egg whites (I use Burnbrae Farms Egg Whites)
  • 1/2 small zucchini (not necessary)
  • 1 tbsp ground flax seeds
  • 1/4 cup water (or a little less)
optional ingredients

  • 2 packets of Stevia (to sweeten)
  • 1 tbsp Cocoa Powder
  • 1/3 cup berries, 1/2 cup oats, 1/2 sweet potato, 1/2 banana (this no longer makes it low carb)
  1. Blend your ingredients in a blender
  2. In a small or medium sized fry pan, spray with cooking oil, over medium heat
  3. Once hot, pour in 1/3 of your mixture
  4. Let cook for about 2-3 minutes
  5. Flip to cook other side
  6. Another 2 to 3 minutes
  7. Once both sides are cooked, flip onto a plate, and repeat process
  8. Sprinkle with stevia (I like NOW Vanilla Stevia) or your favourite topping :)

  • Don't get flip excited! Wait to flip your pancake once the bottom half is 'hard'. If not, you won't get the perfect pancake.
