The Holiday Season...

Just checking in today as it's been a while....
.
I hope you've all been savouring the holiday season thus far and that...

You've all been able to relax in the business of it all! (It's a busy time of year that's for sure!)

Teddy's been taking it easy that's for sure! :P
(It was his 3rd birthday yesterday!)

If anything...

I can tell you that I've been soaking it all up and that...

I've been enjoying every moment I've had to spend with family, friends and the puppies of course!


FUrthermore...

I've been loving the extra time I've had to bake in the kitchen...

Sourdough Bakes.
Golden Raisin and Fennel Sourdough Loaf.

And...

All the things that have been holiday season related!

The only time of year when you get to wear decorations as pants :P
Boxing day deals.
Outdoor FUn.

No doubt...

The last few days of 2014 have been wonderFUl and...

I hope they have been for you as well!

Time to Refresh and #RECIPEFRIDAY...

I really can't believe how quickly the holiday season arrived this year.

Knowing me though...

I'm sure this is something I say every year.

But really...

I feel like the Fall soon turned into Winter and then...

BAM....

It was time to get thinking about everything to do with this festive season.


I won't deny....

I think I've left most of my holiday thinking to the last minute and now...

My eyes have been opened to what needs to get done (with so little time left!).

That being said...

I'm reminded that the holidays shouldn't be about rushing nor...

Should they be about stressing out.

The holiday season should be about celebrating and...

Sharing in the warmth we have to offer one another.

And FUrthermore...

We should be welcoming this time of year with open and loving arms (minus the cold and snow? lol)...

And truly...

Greet it with an abundance of gratitude for all the good that fills us in our lives.

With that in mind...

I'm going to be taking a little social media breather over the next week so that...

I can truly be present. (Looking up ya know!)

If anything...

I know this 'present' time will serve as a refresher for me before the year's end!

But don't worry...

I'll be back before you know it...

Ready to embrace the New Year ahead with you all!

Weighing the lifestyle without numbers...

If there's one thing I know...

I don't weigh my healthy lifestyle results by how much I've lost or gained (in lbs) along the way.

If anything...

I measure my successes in health by...

The way I feel, from the inside out.

Which is grrrrrreat :P

As I've seen my body transform itself (with effort and commitment!) over the years...

I've come to understand it more as I continue forward on this healthy living journey of mine.

I must admit...

I've had my fair share of ups and downs (who hasn't?!?) but...

Through it all...

I've become more confident in the way I am, presently, because...


Even if it ain't all 'chizzled'. (A six pack doesn't define who I am nor my commitment to my overall wellness.)

This is me stage ready.
I gotta say...

Right now...

At this point in time...

I'm happy in the body I'm in.

I'm happy with my routine.

I'm happy with how I FUel myself to keep me going and...

Really...

I'm just happy that I found a place that allows me to grow in any direction I so choose. (I'm not working towards any fitness goals other than staying true to the lifestyle I've chosen to live by - for me, and my overall well-being!)

This is me, normally.
My day to day routine is based around balance, of all things...
Including my body.
It's FUll, all around.

Don't get me wrong though......

I may some day choose to compete again (it's been a over a year since I competed last).

I may decide to lean out to the point where my abs will be clearly defined...

I may choose to do a lot of things...

But in the mean time...

I know that currently...

I feel strong.

I feel FUll (in heart and body) and...

I feel grateFUl for my health and wellness. (And I'm so grateFUl to SuperFit for opening my eyes and making me see that my health does matter! That taking care of myself IS a priority!)

To put it simply...

I just feel great so...

Why would change anything?

Why would I let (almost) every media outlet influence me into believing that I need more?

Why would allow anyone (or anything) define what I ought to look like or try to achieve?

Why would I strive for anything but doing what's good for ME? Really.

What about you...

Do you weigh success in numbers?

*I get that numbers do matter to some, I know they mattered to me when I first started on my journey to health and wellness. But overtime, I came to focus less on numbers and more on feeling. Like, how I loved feeling energized after exercising, how loved that FUelling myself with good food left me feeling great, and how I loved the feeling of knowing that my physical and mental self  had become stronger as I continued forward in my commitment to take care of myself. Eventually, health, fitness and everything in between would become more than just body, but mind too (and I would see the connection!). It would now be about living a lifestyle, and not just something meant to be lived temporarily (until I reached a goal) . All of that being said, whichever way you measure success, that is your way, I'm simply sharing mine right now, at THIS point in my life :)*

A Reminder to Breathe and #RECIPEFRIDAY...

I'm sitting here...

Pausing.

Taking a deep breath.

And breathing.

Breathing in deeply, and exhaling ever. so. slowly.

breathhhiiiiiing...



It feels like the first time this week where I've been able to slow myself down and really...

Take the time to put my thoughts into my space, here, on the blog.

I'm in a coffee shop right now...

Sipping on a beverage warming me from the inside out...out to my very fingertips. (And their cold because I took the time to go for a brisk walk just before settling in here.)

I must admit...

I was reminded today about the importance of slowing down, and truly taking the time necessary to just be.

Be present. Be in the moment. And simply be. (Because in the busyness of life and the holidays this time of year, sometimes this state of being is quite distant from us, yes?)


Although I am very well aware that today is #RECIPEFRIDAY...

I do not have a recipe to share.

Although I do have something else to share which...

Comes in the form of a reminder.

A reminder to find a moment in your day and fill it with stillness.

A reminder to take a breath of fresh air to freshen you up.

A reminder to see the importance of focusing yourself on YOU.

A reminder to step on the breaks, because being in fast lane doesn't always get you to where you wanna go faster.

And lastly...

A reminder to enjoy the weekend we have coming up while taking the time, if you can, to breathe. (But I think I already reminded you of that hehe)

#RECIPEFRIDAY: Savoury Recipes...

Seriously...

I woke up this morning and realized it was Friday!

This week (actually this entire season) feels like it has just flown right by me that...

In those moments I've had to slow down...

I've spent getting over that cold (which lasted me well over a month) and...

Simply being, in the moment. (Although, I have to admit, with the holiday season right around the corner, being still hasn't lasted me tooooo long! lol But, if we are mindFUl of the need to BE present, and at the very least take some time to breeeeaaathe, then that HAS to count for something...right?!)

Having said all that...

I am looking forward to this weekend and enjoying some time to unwind and relax! (In the warmth found on the inside...not the outside, it's cold out there!)

#RECIPEFRIDAY: Savoury Turkey Bacon Sandwich...

Every weekend...

I look forward to a homemade sandwich made with my very own, handcrafted sourdough bread.

Actually...

Both SuperFit and I do.


There's something really quite special about savouring something that you put your heart and soul into making and....

This is one of them.

I mean...

I don't just make a sandwich by quickly throwing toppings on bread....

Nope...

I take my time.


I take my time in deciding what flavours I want us to savour over our meal.

I take my time in putting ingredients together so that I know what to expect with every bite taken.

I take my time knowing that what I've made is going to FUel us just right :)


So...

With that being said...

Please enjoy my latest sandwich creation in this edition of #RECIPEFRIDAY!


Savoury Turkey Bacon Sandwich

by *CaNdY FiT*
Ingredients

  • 1 slice of sourdough bread, halved
  • 1 or 2 cooked pieces of turkey bacon
  • 1 tbsp guacamole
  • 1 tsp sundried tomato pesto
  • 1 slice of Allegro cheese, Swiss, Mozzarella or Cheddar is good too
  • 4 drops of Chipotle hot sauce (optional)
  • 1 or 2 spinach leaves
  • 1 slice of tomato
  • Montreal Steak Spice
Instructions
  1. Slice your piece of bread in half
  2. In a small bowl, mix together the guacamole, sundried tomato pesto, chipotle Tabasco sauce - add MTL Steak spice to taste
  3. Lather the guacamole spread on one half of the bread slice
  4. Add turkey bacon to top
  5. Place the cheese, spinach and tomato on the other half
  6. Top one half over the other and...
  7. Enjoy!

optional
  • Like a warm toasty sandwich? If you have a panini grill, turn it on. Spray both half sides of the bread with olive oil, flip them over, then add toppings as per instructions laid out above. Once your panini grille is ready to go, place your closed sandwich on the grill, close the cover and grill for about 5-6 minutes.
  • If you don't have a panini grill, you can either bake your sandwich in the oven at 350F for about 5-6 minutes, grill it on the BBQ (watching carefully that you don't leave it on too long when getting those grill marks) or in a fry pan (like if you were making a grill cheese)

#RECIPEFRIDAY: Easy, Extra Lean, Smokey Style Chili...

It's been chilly here over the past few days and...

With that chill...

Has come the need to make something to bring on the heat...

From the inside out.


On top of that...

Seeing that I'm still sick with this cold (that just won't seem to go away!)...

A nice bowl of smokey chili has seemed to hit the spot quite nice.

So let's get to it shall we?

Smokey Style Chili

by *CaNdY FiT*
Prep Time: 15 minutes
Cook Time: 3 hours
Ingredients

  • 2lbs of Extra Lean Ground Beef
  • 1 (15 ounce) Can of Kidney Beans, drained and rinsed
  • 1 (15 ounce) Can of White Beans, drained and rinsed
  • 1 (15 ounce) Can of Black Beans, drained and rinsed
  • 1 (10 ounce) can Tomato Soup, reduced sodium
  • 1 (6 ounce) Can of Tomato Paste
  • 1 (28 ounce) of crushed Tomatoes
  • 1/2 large onion, diced
  • 1/2 cup water
  • 1 tablespoon of Olive Oil
  • 1 tablespoon of Cayenne Pepper
  • 2 tablespoons of Cumin
  • 1/2 teaspoon of Cinnamon
  • 1 teaspoon of Worcestershire Sauce
  • 2 tablespoons of Chipotle Tabasco Sauce
  • 1 tablespoon of Montreal Steak Spice
  • Salt and Pepper to taste
Instructions
  1. In a large saucepan over medium high heat, heat up your olive oil and brown your onions.
  2. Add in your meat, mix around and let cook until it has browned, slightly.
  3. Add in all of the spices, stir around, then add your crushed tomatoes and tomato paste.
  4. Add in your drained beans, slowly and carefully, mix around, gently.
  5. If the consistency is too thick, add in a bit of water.
  6. Cover and let simmer for about 1-3 hours (depending on how much time you have). Stir, occasionally - testing as you go - seeing if you require more salt, pepper and/or Tabasco sauce.
  7. Note: it can be served and ready to eat in about 20 minutes - but the longer you let simmer, the better tasting your chili will be.

#RECIPEFRIDAY: Curried Sweet Potato Soup (dairy-free)

You know what's amazing when it's cool out...

Soup.

A nice, warm bowl of fresh, homemade soup.


Since we had The Masta over for lunch this past weekend for sandwiches....

On homemade Olive sourdough bread of course :)


I thought...

In a spur of the moment decision...

Why not make soup too.

I mean...

Seeing that everyone (most) enjoy a nice cup or bowl of something warm...

Especially when the temperatures drop and...

When (perhaps) you're feeling a little under the weather (me, right now - wanh wanh)...

A great way to make yourself feel better...

Is soup. (Right?! Right.)

So I got all soupy and made this....


A perfect share for #RECIPEFRIDAY wouldn't you say?

Curried Sweet Potato Soup (dairy-free)

by *CaNdY FiT*
Prep Time: 10 minute
Cook Time: 30 minutes to 4 hours
Ingredients (4 bowls)

  • 3 medium sweet potatoes
  • 1/2 medium onion, chopped
  • 2 tbsp curry powder
  • 1 tsp ginger powder - or 2 inch, peeled and freshly pressed ginger
  • 1/2 tsp ground cinnamon
  • 1 tbsp chicken stock
  • 2 cups chicken broth (or veggie broth)
  • 1 cup water
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and pepper to taste
optional

  • 1/2 an apple, baked and puréed.
Instructions
  1. Cook your sweet potatoes in the microwave or in oven until inside is soft
  2. Spoon out the insides and place in a bowl, set aside
  3. In a medium pot, over medium/hight heat, add olive oil
  4. Let it heat up a little
  5. Add onions
  6. Let brown, slightly
  7. Add in your spices
  8. Stir around
  9. Add in sweet potatoes (and puréed apple if you so choose), followed by broth and water
  10. Stir, cover and bring to a boil
  11. Turn element down to low
  12. Stir and let simmer for an hour, while stirring occasionally
  13. Transfer to food processor or blender, and set to pulse until you reach a soup like consistency
  14. Transfer soup back to pot, and let simmer over low heat for another hour or so
  15. If the consistency is too thick, stir in some water as you see fit
  16. Once you are ready to eat, pour your serving into a bowl or mug and enjoy!

#RECIPEFRIDAY: Cinnamon, Raisin and Walnut Loaf...

Guess what?

I have a recipe for you all today which...

I hope you try to make yourself!

As I've been testing a few things out in the kitchen over the past little while...

I thought I would share with you something I made just the other day.

So let's get to it shall we...

Seeing that it's #RECIPEFRIDAY and all!


It's easy and....

It can be gluten-free too if you so choose!

Plus...

The inner-mixings are truly up to you! 

Only thing is...

You just have to put some of your creative juices into it!

**Note: this isn't 'bread' so it doesn't have that bread consistency**

Easy Cinnamon Raisin and Walnut Loaf

by *CaNdY FiT*
Ingredients

  • 100 g All-purpose flour (see note for GF version)
  • 100 g Whole wheat flour
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped
  • 1 tsp cinnamon, ground
  • 1 tbsp ground flax seeds
  • 1/2 tsp salt
  • 1 or 2 packets of Stevia
  • 1 1/2 tsp baking soda
  • 1 cup milk
note

  • feel free to make this gluten-free by substituting the all purpose flour with the gluten-free kind.
  • Omit whole wheat flour if you are making gluten-free version - just add 100g more of the GF gluten-free all-purpose flour
  • you can use 1 1/2 tbsp sugar or 1 1/2 tbsp maple syrup instead of Stevia
  • You can try using almond milk instead of milk if you prefer that
Instructions
  1. Pre-heat your oven to bake at 350F
  2. Spray a loaf pan with cooking spray
  3. In a mixing bowl, add the dry ingredients
  4. Stir together
  5. Add wet ingredients
  6. Mix well until combined
  7. Pour batter into loaf pan
  8. Place in the oven and bake for about 30-40 minutes (until cake tester, knife or stick of sorts comes out clean)
  9. Remove from oven, let cool on a cooling rack for 5 minutes, then flip the loaf over onto the cooling rack and let cool for another 10
  10. Slice and enjoy!


note
  • If you want to toast the loaf and serve as slices, cut the loaf into thin pieces then place onto a baking sheet (sprayed with cooking oil)
  • Carefully place each of the slice
  • Put the baking sheet in the oven for about 10 minutes
  • Flip over
  • Bake for another 10ish minutes
  • Once they are nice and crispy, remove from oven, let cool and enjoy!
  • To conserve, put in a air tight container
