#RECIPEFRIDAY: Extra Lean BBQ Bison Burgers

Heeeeeeeeeeeyyyy everyone and...

Happy #RECIPEFRIDAY to you!

Hoooooray for FUriday ;)

Gah...

I'm so excited that it's Friday today because...

It's the long weekend and...

SuperFit and I are headed to Lake Placid!

But not to bike!

Our plan is to...

Hike up Mount Marcy and...

Simply enjoy our time together in a new environment! (For me at least, I've never been!)

Hiking up to the Fire Tower at the top of Luskville Falls!
We have amazing trails near us :)

Having said that...

The weather is definitely not on our side so...

We will do our best given what we have to work with!

It's not looking good lol

Now...

I should probably tell you that I'm a newbie when it comes to hiking  (I don't think the Spartan Races count as hiking excursions right?! lol)...


I mean...

I've only ever gone less than two handFUl of times and therefore...

I know I'm in for one total new experience! (It's supposed to take an entire day to hike up Mount Marcy...like 7-8 hours to summit but, be rest assured...we are both mindFUl of the weather...)

Having said all of that...

SuperFit is a master hiker (is there something he's not good at?! lol)...

My amazing cycling coach :)

So...

I know I've got what (and who) I need for this hiking adventure!

I never, ever, ever, thought I'd own a pair of hiking boots.
But...
I also said I'd never get into fitness either lol

Anyway...

I'm looking forward to what this weekend will bring! (Which I know, is a lot of rain lol!)

At least we've been FUelling up nicely this past week ;)

Extra Lean BBQ Bison Burgers with Oven-Baked Sweet Potato Fries :)

Extra Lean BBQ Bison Burgers

by *CaNdY FiT*
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients (serves 4)
    The Patty

    • 1/2 lb Extra Lean Ground Bison (or meat of your choice)
    • 2 tbsp Egg Whites (or 1 egg)
    • 1 tsp Ground Sage
    • 1/2 tsp Ground Cumin
    • 1 tsp MTL Steak Spice
    • Salt to taste
    The add-ins

    • 3/4 cup Mushrooms
    • 3/4 Small Onion, chopped
    • BBQ Sauce (of choice, to flavour)
    • Goat Cheese (to top)
    Burger Bun

    • Your choice!
    Instructions
    1. In a medium sized bowl, add in your meat, egg whites and spices
    2. Mix together until evenly combined
    3. Roll your meat into 4 small patties
    4. Place aside
    5. In a heated, large non-stick EVOO Oil sprayed fry pan, gently place your 4 patties
    6. Let cook
    7. Turn over once 1/2 the patty has turned brown
    8. Leave in pan until cooked then, remove from heat

    The Toppings
    1. While the patties are cooking....
    2. In a small, non-stick EVOO Oil sprayed fry pan, add in your onions and mushrooms
    3. Cook and stir around until slightly browned
    4. Add in your BBQ Sauce to coat your mushrooms and onions
    5. Let cook for about 2 more minutes then, remove from heat

    Burger Bun
    • Feel free to toast or grill your burger bun (or, leave it as is)

    Putting it together
    1. Place your burger patty on one 1/2 of the bun and, top it with your BBQ Mushrooms/Onions then, add the Goat Cheese
    2. Serve alongside Oven-Baked Fries or Salad.
    3. Enjoy!

    Mindfully Fuelling, Replenishing and Resting...

    That's right.

    There's been a whole lot of FUelling and replenishing going on here! (And, some resting too!)

    hehehe
    We are both loving Menchies right now! :)

    Let's discuss...

    Since I've been running...

    I ran 24km this past weekend with...
    2 amazing ladies!

    And...

    Cycling a lot more (as of late)...

    I attacked the hills last night!
    Keeping my Nuun Hydration infused water with me to replenish as I go.

    We (as in Coach SuperFit and I) have revised my food intake...

    My mom made me Rice Krispie Squares.
    I shared ;)

    To ensure...

    I'm getting the right amount of FUel to power my training sessions!

    In-workout FUel.
    These Clif Shot Blocks are awesome.

    In other words...

    We've switched things up a little bit so as to...

    Give my body more of the energy it needs given all that I've be doing! (Which makes total sense!)

    I went out for a 5K run after my 24K.
    It felt good to flush out my legs :)
    Did I mention how much I'm loving my Nike+ GPS Sportwatch?!
    Working on my hiking skills as we prepare for Lake Placid!

    Having said that...

    Not only am being more mindFUl of how I am nourishing my body but...

    I am also...

    Being mindFUl of giving my body the rest it needs to recover! (I must thank SuperFit for reminding me of my need to take a break because sometimes, I forget! Not going to lie!)

    Chilling and taking it easy with my Bear.

    FUrthermore...

    I am very cognisant that...

    I need to be fair to my body by giving it more of what it needs! (I ask so much of my body that, it's only fair that I give back to it too! My body is my home and, I need to ensure that I give it all the love and nourishment it requires! Cheesy, but true!)

    I mean...

    My body is treating me so well that...

    I have to continue taking care of it the best way I know how! (I'm still learning as I go along in my journey through life so, by continuing to gain the knowledge I need by listening, reading and being in tune with myself and my body, this I know will allow me to bring out the very best in me in every way, shape and form!)

    Just like I take care of my Teddy Bear ;)
    We thought he had an ear infection...
    He didn't.
    FUew!

    With all of that being said....

    Here's a peek into what I've been eating as of late in this edition of...

    What I Ate Wednesday! (I'm eating more to FUel my tank so, you're not going to see any big changes in the food I eat. When I mention the word 'diet', it simply refers to the food I'm having, nothing more. I'm living, enjoying and savouring. By switching things up, this will only ensure I'm giving my body the energy it needs so that we together (both in body and mind), can perform at our very best without running on empty...perhaps literally too hehe!)

    **My long run: I had planned on running 21km on Saturday...alone. I was so excited when Nookie and Nikki were available to run too! (Finally!!!) Nikki did 16km with us and Nookie and I ended up running 24km (it just happened lol). I felt really good throughout the run and was no doubt, proud of myself to have gone my farthest ever! The last time I ran anything close to 24km was at my half-marathon last year! Post-run, I was a bit sore but, stretching consistently every day helped! Today, my legs feel like themselves again ;)**

    Powerful Connections...

    Isn't it amazing to see the ways in which we've come to connect with one another and...

    How we've been able to strengthen our connections as a result of the many ways technology has evolved?

    Where would we be without posting selfies?! ;)

    I remember a time long ago when I visited Disney's FUture World at the Epcot Centre and...

    Being amazed at the fact that one day...

    I would be able to face time! (It blew me away to know that some time in the FUture, I would be able to see the person to whom I am speaking to over the phone!)

    I mean...

    There's no way I would've ever imagined myself with a gadget that would allow me to do something like that at the convenience of...

    My fingertips! (I figured it would only happen when cars started to fly!)

    Connecting to the world around me with the help of my fingertips!

    But now, lo and behold...

    I'm sitting here with a number of gadgets which...

    Allow me to connect with my family and friends (and, the world around me) not only through face time but...

    Through many other avenues too!

    Technology has enabled us to be together and connect virtually when we cannot, physically.

    Through the evolution of technology...

    Our connections to one another have grown exponentially and...

    As a result of this...

    It has allowed us to open ourselves up to a world (and people) perhaps we'd never come know!

    The face of not knowing ;)

    Just think about it...

    If it wasn't for your computer, laptop, smart phone, iPad (whatever it is you are on right now)...


    You likely wouldn't be here, visiting my blog or...

    Even know that a FU existed! (And, I YOU!)

    Some things never change ;)

    I mean...

    We are now at a time where we can...

    Easily build new connections through the many different facets available to us with just one click or push of a button!

    It's pretty incredible if you take the time to think about it.

    Having said that...

    I still believe it is very important to know and be mindFUl of...

    The length of time we stay plugged in vs. connecting and interacting with others!

    As Pavement Runner puts it (so well)...

    "There is a fine line between being connected and constantly plugged-in"! (True! To use technology (and social media) to connect and interact with others is what bring us together, whether virtually or in person. It can also motivate us on a multitude of levels to get after what we want! But, being constantly plugged in without getting out there to put these connections and interactions into play, well, that does not. The line is fine so be mindFUl of it!)

    ***

    Now, after taking some time to...

    Reflect upon the ways in which technology has influenced me over the years...

    Not a days goes by am I not grateFUl for all the connections I've made overtime and...

    For all of the interactions that have sprung out of them because of it!


    In many ways...

    The power of being connected has enabled me to stay in touch with myself and others on a much deeper level and...

    It has also influenced my growth as an individual! (By sharing share my thoughts, goals and experiences through life via the many different channels I have to utilize, these things have allowed me grow in so many ways!)

    My growth in...
    Health and Fitness.

    FUrthermore...

    As technology and the world of social media continue to widen...

    The powerFUl connections I have and will come to experience will only continue to grow as...

    I move forward into the FUture!

    Hold on tight cuz...
    We're in for a wild ride ahead!

    Having shared all of this with you...

    Here are just a few ways in which technology and social media have enabled me to become more connected with my ever-evolving self and those around me!
