#RECIPEFRIDAY: Oh The Low Carb Pastabilities!

Hey everyone and...

Welcome to another edition of #RECIPEFRIDAY! (Cheers to the loooooong FUreakin' weekend!)

Before I share with you a new recipe of mine (yes friends, I finally have a new recipe to share!)...

I just wanted to let you all know that...

I ran for 20 minutes yesterday!

Yes...
This is the look of 20 minutes on the treadmill.

It may not seem like a long time but trust me...

I was excited simply because it beat the 2 minutes I've been running as of late! (I will get my running mojo back and I will finish the Super Spartan Race this coming Sunday!)

In speaking about the race...

Did I mention we will be spending the weekend in Mont-Tremblant? (That's where it's taking place)

Yep...

Our Super Spartan Team (SuperFit, friends and I) are all staying together so...

No doubt...

We will have a FUlippin' blast! (The whole weekend is going to be FUn...including the race hehe)

We usually go to Tremblant every summer for the day except this time..
We are staying for a FUll weekend :)

Alright...

You ready to talk food now?!

As mentioned to you the other day...

The friendly people over at Quest Nutrition sent me a huge package of goodies to try! (No review was requested nor was I compensated in any way! Everything I'm about to share is because I want to. Why? Because I've been loving what I've been making and eating! Simple as that!)

Teddy was on a QUEST of his own ;)

Okay so today...

I want to talk Pastabilities! (I'll talk about the Quest Bars another time but let me just say...Holy Yum!!)

Yes friends...
The low carb pastabilities!

Now...

For anyone that knows me...

I love pasta!

Especially my Mama's spaghetti and meat sauce!

But sometimes...

I can't have me the big bowl of carbs! (It's all dependant on my training program and what my goals are at the time!)

That being said...

Quest Nutrition's Pastabilities have introduced a line of noodles that enable me to enjoy pasta-like meals!

Like this one!
Only 40 calories and 8 carbs per package (fibrous carbs)

As I was given a sample of both the...

Spaghetti Noodles...

The Spinach Fettucine...

I made sure to enjoy each of them to the FUllest!

As I've tried low carb noodles before...

I knew I would like them if they were similar in texture and taste!

Having said that...

I'd never come across or seen the Spinach Fettucine before and...

After trying them out...

They are, by far...

My favourite!

Hellllloooo!

Now that I've shared all of this with you...

Are you ready for my recipe?

Low Carb Extra Lean Ground Chicken Spinach Pastabilities!

by *CaNdY FiT*
Prep Time: 5 minutes
Cook Time: 15-20 minutes
Ingredients (1 serving)

  • 1 package of Quest Nutrition Pastabilities
  • 2/3 cup of Extra Lean Ground Chicken (or Protein of choice - if you are looking for the crusted fish recipe, check here)
  • 1/2 cup Broccoli
  • 1/2 Bell Pepper, diced
  • Handful of Spinach
  • 1 tbsp Cumin
  • Dash of Montreal Steak Spice
  • Dash of Red Pepper Flakes
  • 1 tsp Garlic Powder
  • Pepper to taste

Instructions

The Meat of the dish
  1. In a heated, EVOO Oil sprayed fry pan, add in your vegetables
  2. Once they have slightly softened in touch, add in your meat and spices
  3. Cook until slightly browned, stirring occasionally

Pastabilities
  1. Boil water in a small/medium sized sauce pan
  2. Cut open the package, drain and rinse the noodles once or twice
  3. Once the water has boiled, add in your noodles and cook for 2 minutes
  4. Drain
*When opening the package, there is a slight smell. Don't worry, that's just the scent of alkalized water that keeps the noodles fresh. Once rinsed and cooked, the smell goes away.**

Putting it together
  1. Plate your noodles and top with your protein and veggies

  1. What I like doing as well is adding the noodles to the fry pan and mixing it all together. Like a noodle stir-fry.

AROO: Channelling My Inner-Spartan!

Hey everyone...

I hope this day finds you well! (Just one more day until the long weekend for us Canadians!)

If anything...

I'm happy to tell you that I'm feeling 90% better since my food allergy and/or stomach flu! (Mild cramping here and there but manageable nonetheless! FUew!)

Needless to say...

I was happy to be back at the gym last night!

I trained like my old FU self again :)

Alright so down to some business...

As mentioned to you yesterday...

I haven't been able to find my running mojo!

Sad but true.

I mean...

I just don't know what's going on!

I dunno.

And, unfortunately for me...

It's not really coming at the right time!

Nope.

Why? Because...

I have my Super Spartan Race coming up this weekend (ya, this race seems to have creeped up on me out of nowhere lol)...

Channelling my inner-warrior again!
Finding my inner-Spartan last June at the Spartan Beast Race!

Like...

I can't even seem to run a kilometre without trouble!

Not even on the treadmill!

Honestly...

My body just doesn't want to go yet...

My mind does! (Or maybe not and I'm just FUling myself!)

I mean...

I get excited when putting my runners on but then...

The moment I hit the pavement...

Or trail.

I just can't seem to get going. 

I'm thinking I should call Nookie.

Anyway...

I'm hoping I can get one #brilliantrun in before this Sunday! (At least one!!!)

We'll see how it goes! (Crossing my fingers I survive the race lol)

Super Sly, Nookie, SuperFit, Annie and myself are
running this race as a Team.
I'm sure it will be FUn and...HARD! lol
There's always time for a FUFACE no matter the situation ;)

#WIAW: Life as it is...

Hey everyone and...

Happy What I Ate Wednesday to you!

I hope you all had a fabulous weekend filled with nothing but goodness!

As for me...

My weekend consisted of hanging out with my sister Kiki to officially welcome the summer season...

It was so hot that our Froyo turned into soup!
This is the before shot lol

Helping out backstage at the Serious About Fitness and Physique Canada competitions (and cheering on my FFA Teammates who did amazingly well!!!)...

Hosting a post-competition potluck...

Nom Nom.

Riding my bike with SuperFit...

I attempted to run after our ride but I just can't seem to find my running mojo.
I get excited to run but then the moment I start running I just want to stop.
This is my 3rd attempt.
Not sure what's going on with that.

And...

Finishing off the weekend with some time spent at a campground with my family!

Teddy and Zippy were a hit!

I should also mention that...

I fell ill Sunday night (moments after we left the campground) with some kind of stomach flu!  (I really don't know what it is I got! I think it's a mix of the flu and a food allergy!)

After going through a mix of odd symptoms on Sunday night then going through hell on Monday (with a small break from Monday late evening until about yesterday afternoon)...

Whatever it is I have (had) is something I haven't experienced in years!

I won't go through the gory details but...

I've been dealing with severe, severe cramping and hives all over my face and body! (The hives are now gone!)

Let's just say...

It hasn't been FUn! 

**About 4-5 years ago, I suffered from food allergies on 3 separate occasions (all causes were so very different in nature). One was so bad I was prescribed an EpiPen. Until Sunday night, I hadn't suffered from anything of the sort (thank goodness!). Now, the reason why I'm leaning towards more of a food allergy is because there are some similarities in the symptoms I've experienced. Food allergy or not, I just can't wait for it to officially pass...literally I guess!**

On the bright side of things though...

I'm feeling confident that I'm better today! (I haven't had any issues since dinner last night! Woo Hoo!)

Now, on the subject of food...

Today's WIAW will focus on some of the things I ate before getting sick! (None of which are the cause of me getting ill!)

Natural Greek Yogurt flavoured with...

I had this while thinking I'd recovered from being sick.
I didn't end up digesting it. sigh.

 Quest Nutrition Chocolate Chip Cookie Dough Protein Bar.
I microwaved it for 30 seconds and it was heaven in my mouth.
Soft and chewy like a cookie :)
190 cals, 21 grams of protein, no added sugar, 3g active carbs (from nuts)
I was lucky (excited and grateFUl) to receive a huge box of Quest Nutrition goodies last week!
I've been trying out their stuff ever since.
I was not asked to review their product.
I'm simply sharing my love for Quest because I've totally fallen for them!

And...

Because so many have been asking for my Banana Oatmeal Protein Bites recipe lately...

Here it is again!

Banana Oatmeal Protein Bites

by *CaNdY FiT*
Prep Time: 3 minutes
Cook Time: 15-20 minutes
Ingredients

  • 8 Egg Whites
  • 1 or 1/2 a mushed banana
  • 1/2 Cup Oatmeal
  • 1 tbsp Ground Flax Seeds
  • 1 tsbp Cinnamon
  • 1 or 2 Packets of Vanilla Stevia (I like to sprinkle it on top once cooked)
  • 1/2 tsp Baking Powder (optional)

Instructions

  1. Lightly spray, with olive oil, your mini oven safe muffin pan
  2. Set your oven on to bake at 375F
  3. Mix ingredients together in a bowl
  4. Spoon out the mixture into each mini muffin space
  5. Place your tray in the oven for about 15-20 minutes
  6. Remove from oven and enjoy :)
