#RECIPEFRIDAY: Slow Cooker Chicken with Cauliflower Curry

Good morning everyone and...

Happy #RECIPEFRIDAY to you!

As I've been preparing for the OPA Ontario Championships coming up in June...

You know that I've been putting my creativity to the works when it comes to my competition eats!


I mean...

Why make my food boring when the journey to the stage is the exact opposite?! (The journey is a lot of things but one thing it's not...is boring!)

Putting my creativity to work ;)

Onto the 'meat' of #RECIPEFRIDAY...

Last week...

I had one of my FFA Teammates share with you her recipe for...

Sharing a recipe she's been loving as she gets ready for the stage!

Thanks FU and hi everyone :)

As a competitor, I eat so much chicken that baking without sauce can become boring so, when I found a new way to cook my chicken breasts online, I couldn't wait to give it a try! To my excitement, it ended up being a cooking method that kept my chicken moist and full of flavour so, ever since then, I've been cooking my chicken like this!

Get shredded.

To me, dieting is all about experimenting and being creative with the food you're allowed to eat. If you think about it, there are so many different types of veggies, herbs and spices to choose from that you simply can't get bored!

If I crave something, I try my best to make a healthier and cleaner version of it while keeping the same taste.


So, with that in mind, here's a recipe I hope you will enjoy!

It has a blend of my favourite flavours mixed together. It's spicy yet fresh and light all at the same time!

MP's Slow Cooker Shredded Chicken and Cauliflower Curry!

Ingredients (1 serving)
    Slow Cooker Chicken

    • 1 chicken breast
    • Water or sodium free chicken broth (just enough cover chicken in the pot)
    • Spices of your choice (I've used Mrs. Dash, Garam Masala, Curry and Mexican spices)

    Cauliflower Curry

    • 1 cauliflower chopped into pieces
    • 1 bag of fresh spinach
    • 1 onion chopped
    • 2 cloves garlic minced
    • 1 piece of fresh ginger grated
    • 1 tsp. Red curry (I love very spicy curry)
    • 1 tsp. cumin
    • ½ tsp. curcuma
    • 1 tbsp. paprika
    • A handful of fresh cilantro


    Instructions

    For the slower cooker chicken
    1. Put the chicken breast in the slow cooker, add just enough liquid to cover and spices
    2. Cook on low for 6 to 8 hours
    3. Once done put your chicken in a Pyrex container and cut it with a spatula
    4. Add a bit of the cooking liquid to keep it moist

    Optional
    • Enjoy it as a snack, added it to a meal or mix it with salsa!

    For the cauliflower curry
    1. Spray a pan with non-stick spray add onion garlic and ginger and cook until soft
    2. Add spices and cook a few more minutes
    3. Add cauliflower pieces and a bit of water (about a 1/4 cup only ), turn the heat up and cover to steam until cauliflower is cooked but still firm
    4. Add spinach mix and cover for 2 /3 minutes more (note: they cook pretty fast)
    5. Finish off with the fresh cilantro
    6. Serve with some chicken and brown rice or quinoa

    • When not in contest prep I would make this using coconut oil instead of Pam and I would add some dry raisins at the end :)

    Growing Slowly is Better Than Standing Still!


    Hi everyone...

    I hope this Thursday morning finds you well! (My weekend has officially started! YabadabaFUuuuu!)

    Cheers to an extra long weekend ahead!

    To be honest...

    I wasn't planning on posting today but...

    I came across a quote in one of my books the other night that's...

    Been making me think ever since! (So, I want to touch on it a little bit as I believe it's an important one!))

    But just before I get into that...

    In keeping with Monday's post on affirming yourself...

    There's no doubt in my mind that...

    What I think, believe and tell myself about the things I do and work towards has the potential to affect...

    The outcome of my experience, what I will learn from it and essentially...

    How I will grow as a person in my journey through life!

    That's why...

    I must positively affirm myself and my goals every.single.day. so that I can remind myself of...

    1. Who I am (and stand for as a person - it's easy to get lost in the shuffle of things when we focus so much on getting ahead);
    2. What I'm doing; and (not limited to)...
    3. How I plan to achieve what I've set out to accomplish! (Both mentally and physically)

    With that in mind...

    Here are my daily affirmations for today:


    Onto the quote...

    Before bed...

    I most often read a number of quotes and sayings which sometimes...

    Leave an everlasting impression on me! (They make this FU reflect and ponder much!)

    So the other night...

    I came across this one:


    Gasp.

    This is what I've been alluding to for so long in my journey to the competition stage! (And through life!)

    Those words were perfect for this FU!

    Think about it.

    We are always in such a rush to achieve and see results that more often than not...

    We forget that with every step taken...

    We grow.

    No matter how slowly things may feel or be progressing...

    We are moving forward (and growing) with every effort made towards our goals and in life!

    Now, I realize that sometimes...

    We get frustrated or impatient with ourselves and with your bodies but....

    We have to remember that...

    Things take time and...

    We just have to be patient! (We have no choice but to be!)


    Pay attention.

    Pay attention to those things you have the opportunity to learn from as you grow and evolve through life!

    I mean...

    Without acknowledging what you are doing and how you are progressing...

    You are missing out on some of the most important lessons in all that you are doing!

    Having said all that...

    My hope is that we can all take a step back and realize...

    No matter how slowly things may feel and move...

    Know that it's better to grow slowly than to be standing still!

    Fitness Competition Eats: Food 4 FUel!

    Hi everyone and...

    Happy What I Ate Wednesday to you!

    My name is FU and...
    I'm happy it's Wednesday :)

    If one thing's for sure...

    I'm really glad to be back home and in my kitchen after spending 5 days on the road!

    Let's just say...
    Things have been popping in my cuisine!

    I mean...

    I missed my home cooked meals and simply being in the comfort of my own home!

    Mmm Mmm.
    How I missed these!

    Over the past few days in my competition prep...

    My eats have been pretty repetitive (on the menu front of things) if I compare them to weeks past!

    I mean, at this point...

    I've pretty well figured out some key dishes I love so no doubt...

    They find themselves on the rotation quite often! (But don't you worry, I'm still creating and will be sharing some tasty new things soon!)

    That being said though...

    As I get closer to the date of my competition...

    My eats will get a little more plain as we move forward! (Which is okay because food in its natural state is good too! Unless of course, it's dry lol)

    Nothing beats heart shaped Tuna Steaks :)

    But really...

    It's the name of the game so I just have to roll with it!

    In other words...

    The regime I'm following is to FUel my body with the energy it requires (given all the exercise I do)...


    And more specifically...

    It's meant to generate results! (But don't get me wrong, I love food and I love to eat which is a big reason why I keep things FUn and interesting in the kitchen no matter if things are plain or not!)

    I may not be able to have cake but I can most certainly smell like one! 

    With all of that being said and...

    In keeping with my competition themed WIAW...

    Here's a peek into what I've been eating as of late!

    Recipe

    You know I love me my Egg White Bites!

    Oven Baked Dijon and Rosemary Salmon!
    Recipe
    Nothing like mustard to brighten things up hehe
    Bowl of greens :)

    And lastly...

    Speaking of food, proteins and greens...

    Here's a recipe for one of my fave chicken salads!


    Spiced Chicken Salad with Lemon Sumac Dressing

    by *CaNdY FiT*
    Prep Time: 5 minutes
    Cook Time: 15-20 minutes
    Ingredients 

    • 1 Chicken Breast (cubed)
    • 2 T Dry Rub Seasoning of choice (or a pinch of Garlic Salt, Dried Oregano, Paprika and Chili Flakes)
    • Splash of Olive Oil for coating
    • Lettuce
    • Veggies of choice

    Dressing - Optional

    • 1/4 cup Olive Oil
    • 1/4 cup Lemon Juice
    • 1 T Maille Dijon Mustard (optional)
    • 1 tsp Sumac
    • Salt and Pepper to taste
    Instructions
    1. In a bowl, add in your chicken and give it a light spray of Olive Oil (I use EVOO)
    2. Add in your dry rub or the seasoning blend I listed up above
    3. Mix the chicken and spices around until it is evenly coated with spices
    4. In a heated, non-stick fry pan, add in the chicken and cook for about 10 minutes (keep an eye on the chicken and turn it over from time to time)
    The Dressing
    1. Add the listed ingredients in a bowl and whisk together until it becomes thick in consistency (there shouldn't be any kind of separation between the olive oil and the Lemon juice)
    Putting it together
    1. Once the chicken has cooked, remove from heat
    2. In a large bowl, add in your lettuce (and any other vegetable you wish to include in your salad)
    3. Add 1 T of dressing to your salad (save the rest of the vinaigrette for later by storing it in the fridge in a Tupperware container)
    4. Mix your salad around
    5. Top with Chicken
    6. Serve and enjoy!

    Affirm Yourself!

    Good morning everyone and...

    Happy Monday to you!

    Hi.

    Honestly...

    Where did the weekend go?! (Time sure has flown by since I got back!)

    If you're wondering what I got up to since getting back from my time away...

    I've been relaxing!

    Relaxing at its best.
    I did Arms with SuperFit and Little M on Saturday!
    We rocked out our StrongerRx training gloves too :)

    But seriously...

    I did take some much needed time to rest (and nap) after a long week on the road!

    Tired FU.

    And I gotta say...

    Teddy was a great partner to chill with too while I took it easy! (He was soooo cuddly after I got back, it was the cutest thing ever!)

    My Mom not me.
    You get the point though ;)
    Missed you Mom!
    I realize how cheesy I am! lol
    Gah...
    I love my puppy!

    In the time I took to relax...

    It also gave me time to think! (Yep, I do that sometimes lol)

    I think I have no more coffee left in my mug.

    But in all seriousness...

    I had time to think about...

    The power of positive affirmations and the power of perspective! (In life and towards our goals!)

    In what I will use as an example of my getting ready for the OPA Ontario Championships coming up in 10 weeks from now...

    I believe that what I will share also applies to life in general! (And, not only the tangible goals we (or I) set out for ourselves!)

    As I've been preparing for the Provincials (officially) for just a little over a month now...

    What I've been able to experience and what I've been able to take from it...

    Is directly related to how I've chosen to view what I'm working towards and the affirmations I've given myself that are associated to what is is that I'm actually doing! (How's that for a mouthFUl of a sentence! lol)

    In other words...

    My perspective and frame of mind are the basis for how I will come to experience the journey! 


    Without a doubt...

    The power of my thoughts and views...

    Has everything to do with what I will come to learn about myself and my body as I go along!

    There's no questioning that...

    My perceptions have a direct impact on whether or not...

    This venture (or any other venture I choose to go on) will be a positive one!

    It's my choice to make my  journey to my goals as good or as...
    Unpleasant as I want it to be!
    (I'm really happy here, I swear lol)

    Competing is a choice that I've made and...

    If I'm going in with a negative mindset without positively affirming myself and my goals then...

    How am I to enjoy what it is I'm about to experience?

    Honestly...

    My perspective (the way in which I choose to see and experience things as they come) has...

    The power to change everything! (My thoughts, my feelings and my goals even!)

    My thoughts affect my actions and my overall sense of self so...

    If I choose not to think positively about what I'm doing then...

    My experience will be a less than a positive one! (Make sense?)

    I will continue giving 110% to my goals because I believe in myself
    and the things I am capable of achieving.
    As opposed to...
    I just want to give up. I see no results and I'm just wasting my time.
    I'll never get there.
    I don't actually think that, it's just an example!

    I guess what I'm trying to say is...

    No matter what your goals are...

    Go in thinking positively about them! (Don't self-sabotage yourself! Grow and learn no matter how things turn out! Just take it one step at a time!)

    And remember...

    If and when times prove to be difficult...

    Hold strong (both mentally and physically) because...

    The power you hold will impact your entire state of being and the goals you have set before you!

    With all of that being said...

    Here are a few of my own daily affirmations I tell myself as I work towards my goals and live life itself! (These affirmations remind me that my perspective and views on all things have the power to change what I do, feel and experience in an instant!)
