#RECIPEFRIDAY: Savoury Blueberry Zucchini Protein Bites!

Hey everyone and...

Welcome to another edition of #RECIPEFRIDAY!

Are you reaaaaaa-dyyyyyyy! ;)

I hope this Friday finds you well and that...

You're all ready for the weekend! (I got the day off today so I plan on going for a run later this morning, fill up the fridge with food, get in a shoulders workout and then...well I don't know and then, we shall see where this day takes me! lol)

Anyway...

On the topic of running...

I'm super happy that I found my mojo again!

I mean...

It took me months (like 9 months) to get it back! (I stopped running after my first half-marathon for no specific reason other than I just wasn't in the mood to run as much as I tried to get back into it!) 

That being said and now that...

I've found my groove...


And...

A running frame of mind that FITs me just right...

I look forward to my runs and...

savour the time I have to myself to just be...

Be in my (new) shoes and be with myself in the peaceFUlness I've found with every stride I take! (Even if the run proves to be hard, I work at strengthening my mind and what it tells me I can and can't do. Removing the can't from my inner-dialogue of course lol!)

Alright so...

On with my new recipe yes?!

Before I share it...

I just wanted to say that...

This recipe was totally inspired by Sarah over at Ingredients of a Fit Chick! (Seriously, she is so creative and her eats always look so amazing!)

After posting her Savoury Zucchini Oat Cakes in last week's edition of #RECIPEFRIDAY...

I thought to myself...

"Okay, I need to try Zucchini in my Oatmeal Protein Muffin Bites!"

And that my friends....

Is what I did!

I just added it to my original recipe.
Plain and simple lol

But then...

I decided to have a little more FUn with it so...

I added a whole bunch of others things to the blend which...

Resulted in this strange but good combination!


It turned out tasting super yummy (I'm on a huge Zucchini kick now!) so...

Why not share the recipe right?!

Right.

Here it is friends!

Savoury Blueberry Zucchini Protein Bites!

Prep Time: 4 minutes
Cook Time: 20 minutes
Ingredients

  • 1/2 cup dry Oatmeal
  • 8 Egg Whites
  • 1 small Zucchini
  • 1/2 cup Blueberries
  • 1 tsp Maille Dijon Mustard
  • 1 tsp Maille Dijon Mustard Grain
  • 1/2 tsp Sriraka Hot Sauce (if you like it hot)
  • 1 tsp dried Oregano
  • 1/4 tsp Montreal Steak Spice
Optional
  1. If you are watching your carb intake, you can remove the oatmeal from the list
  2. Feel free to replace the blueberries with raspberries, blackberries or 1/2 a banana
  3. If savoury is not what you like, remove the mustard and spices and add 1 tsp of cinnamon and 2 packets of Vanilla Stevia to the blend.
Instructions
  1. Pre-heat your oven to bake at 400F
  2. Lightly spray a non-stick mini muffin top pan (or large one) with EVOO Oil
  3. Blend all of the ingredients together with the exception of the oatmeal
  4. Once blended, pour into a large bowl
  5. Add your oatmeal
  6. Mix together with a spoon
  7. Spoon in the mixture into each empty hole
  8. Place in oven and bake for 20 minutes
  9. Remove from oven and enjoy!

Optional
  • If you don't have any type of bakeware you can fill the mixture with, make pancakes in a fry pan :)
  • If you don't have a mini muffin pan, you can use the larger ones. Cook time may vary...

  8. Sometimes I want and sometimes I want savory, I definitely have different moods in that regards!

    I try and "collect" myself a few times a day, a few minutes to just breathe and be alone with my thoughts. Usually it happens in the morning and then again right before bed. Lately I have also been taking 5-10 minutes when I get home from work to just sit and relax and that has helped my stress level!

    Love the new shoes, super bright!

  11. I love your oatmeal protein bites, does your recipe usually make more than 24 mini muffins? Mine did! And then I made two big muffins too, tons of batter! The big muffins needed to cook a little longer though :) I will keep experimenting with these!
