This week has just been flying by to the point where I can’t
tell yesterday from today! (Well, maybe I can but you get the drift lol!)
As I’m now…
10 sleeps away from competing at the OPA Ontario Championships which I qualified for back in November…
The last cycle/phase of my prep is officially in FUll
motion!
So what does this mean?
Well…
That the next few days (from here to the competition) will be
about fine tuning ‘my package’ so to speak, continuing my workouts (which will change next week), and...
When it comes to my eats…

Like I've mentioned to you in week's past...
Things are pretty plain and simple...

I gotta admit...
I was thrilled when she said this after her first bite…
“Mmmmm…this is so good! I can’t believe you went from not
cooking to being a great cook!” (Yes, three years ago you would have not found
me in the kitchen but on the couch or a restaurant! lol)
Here's the recipe:
Pesto & Olive Tapenade Chicken Pasta

Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients
- Spaghetti (amount to fit to your plan)
- 1 sliced (cubed) Chicken Breast (cooked)
- 1/2 cup chopped Sundried Tomatoes
- 1 tbsp Extra Virgin Olive Oil (or use spray EVOO Oil)
- 1 tbsp Pesto (homemade or store bought)
- 2 tbsp Olive Tapenade (homemade or store bought)
- 1 tsp Dried Oregano
- 1 tsp Dried Basil
- 2 Garlic Cloves (chopped)
- Pinch of Garlic Salt
- Pepper to taste
- Spinach and or Broccoli (optional)
Instructions
Spaghetti:- Bring salted water to a boil and add in the spaghetti
- Cook until pasta is cooked to your liking
- In a medium, olive oil coated fry pan, add in your sundried tomatoes and dried spices
- Cook for about 3-5 minutes
- Add in your pesto, olive tapenade and sliced/cubed chicken and mix around until evenly coated
- Cook for another 5-7 minutes and set aside
- Once you've drained the pasta in a colander, transfer the pasta back into the pot
- Pour the sauce over your pasta and mix together
- Portion your serving and enjoy!

Things are changing with every day that goes by and…
I’m noticing all of it! (From big changes to small changes,
I’m seeing them all and I’m finding this part to be so exciting! I'm also really appreciating the process too!)
No doubt…
I’m getting super-duper pumped (I mean, I have butterflies
in my tummy) and…
I seriously can’t wait for the big day!
I also can’t wait for…
All the FUn to be had during our trip to Toronto
(with my teammates, family and friends)…
In addition to…
Competing alongside everyone else (and making new friends
while at it!) and…
Bringing out the very best I can in what I’ve been working
towards from the start!
I mean…
Competition day will be about having a great time, celebrating my accomplishments (and of those around me!) as well as...
Getting there without any regrets! (Giving 110% of myself allll the way to the stage!)

It will also be about…
Standing strong and proud with everything I’ve surmounted, worked towards and dedicated myself to! (It's been an incredible journey!)
It will also be a great reminder that…
You really can achieve anything you put your mind to if you
simply believe in yourself!

It's really hard to say what my favorite part about training/competing is...probably the satisfaction seeing all the amazing things I am capable of doing. Sometimes you just have to stop and breathe and think about how far you have come, nothing beats that!

DeleteThat's so great how you've taught yourself to cook--I had the same experience. Before I became focused on healthy eating, I never cooked more than Kraft mac&cheese, and I just fell in love with it! I also love that you're not putting yourself in a place where you feel bummed about not being able to eat what you make--as long as YOU are happy, that is all that matters! :)

Deletei am not a big pasta fan but i could eat a bowl of that chicken and olive tapenade by itself! love her little fuface, so cute. you have quite the drive, it'd be way hard for me to watch your man and sis eat those yummy things that you would normally enjoy when not in prep mode, but you're determined and i know that the triumph you'll feel in competition day will be the best feeling ever!
