Reach For It!

Hey everyone and…

Happy What I Ate Wednesday to you!

This week has just been flying by to the point where I can’t tell yesterday from today! (Well, maybe I can but you get the drift lol!)

As I’m now…

10 sleeps away from competing at the OPA Ontario Championships which I qualified for back in November

The last cycle/phase of my prep is officially in FUll motion!

So what does this mean?


That the next few days (from here to the competition) will be about fine tuning ‘my package’ so to speak, continuing my workouts (which will change next week), and...

When it comes to my eats…

Perhaps making some slight changes depending on how my body progresses through! 

Like I've mentioned to you in week's past...

Things are pretty plain and simple...

But still delicious!
Oatmeal Protein Bites.


Whether that looks (and sounds) boring...

No salt seasoned chicken.

It’s generating results! (That we're happy with! (and I think that's really important in all of this...that....I'm happy!))

Oats and Eggs.
I love me my fish!

That being said…

I have been making other food for those around me who are not a competition diet...

Making SuperFit tasty eats that keep within his own clean eating lifestyle!
Oatmeal Crust Pizza!

And, I must say...

It's been interesting Nothing beats cooking with your sense of smell as opposed to taste!

I winged this recipe and SuperFit really enjoyed it!

Does it bother me that I can’t have what I’ve been making for others?

Not at all! (I just hope it's edible lol)

Why? Because...

It ain’t part of the plan!

My plan is to follow my program to the end!

As long as my cooking is being enjoyed (without being able to test it out for consumption lol)

I’m happy!

And speaking of happy eaters...

Here’s a little something something I made for my little sis the other night!

We had a pyjama and movie party :)
She brought the leftovers to school!
A sign that it was good lol

I gotta admit...

I was thrilled when she said this after her first bite…

Mmmmm…this is so good! I can’t believe you went from not cooking to being a great cook!” (Yes, three years ago you would have not found me in the kitchen but on the couch or a restaurant! lol)

Here's the recipe:

Pesto & Olive Tapenade Chicken Pasta

by *CaNdY FiT*
Prep Time: 5 minutes
Cook Time: 30 minutes

  • Spaghetti (amount to fit to your plan)
  • 1 sliced (cubed) Chicken Breast (cooked)
  • 1/2 cup chopped Sundried Tomatoes
  • 1 tbsp Extra Virgin Olive Oil (or use spray EVOO Oil)
  • 1 tbsp Pesto (homemade or store bought)
  • 2 tbsp Olive Tapenade (homemade or store bought)
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 2 Garlic Cloves (chopped)
  • Pinch of Garlic Salt
  • Pepper to taste
  • Spinach and or Broccoli (optional)
  1. Bring salted water to a boil and add in the spaghetti
  2. Cook until pasta is cooked to your liking
  1. In a medium, olive oil coated fry pan, add in your sundried tomatoes and dried spices
  2. Cook for about 3-5 minutes
  3. Add in your pesto, olive tapenade and sliced/cubed chicken and mix around until evenly coated
  4. Cook for another 5-7 minutes and set aside
Bringing it together
  1. Once you've drained the pasta in a colander, transfer the pasta back into the pot
  2. Pour the sauce over your pasta and mix together
  3. Portion your serving and enjoy!

I have to honest in telling you that…

Things are changing with every day that goes by and…

I’m noticing all of it! (From big changes to small changes, I’m seeing them all and I’m finding this part to be so exciting! I'm also really appreciating the process too!)

No doubt…

I’m getting super-duper pumped (I mean, I have butterflies in my tummy) and…

I seriously can’t wait for the big day!

I also can’t wait for…

All the FUn to be had during our trip to Toronto (with my teammates, family and friends)

In addition to…

Wearing my new bikini as a Daydreams Fitness Wear  Sponsored Athlete

Competing alongside everyone else (and making new friends while at it!) and…

Bringing out the very best I can in what I’ve been working towards from the start!

I mean…

Competition day will be about having a great time, celebrating my accomplishments (and of those around me!) as well as...

Getting there without any regrets! (Giving 110% of myself allll the way to the stage!)

It will also be about…

Standing strong and proud with everything I’ve surmounted, worked towards and dedicated myself to! (It's been an incredible journey!)

It will also be a great reminder that…

You really can achieve anything you put your mind to if you simply believe in yourself!

I mean...

All you have to do is...

Reach for it! (And the skies the limit as they say!)

  21. It's really hard to say what my favorite part about training/competing is...probably the satisfaction seeing all the amazing things I am capable of doing. Sometimes you just have to stop and breathe and think about how far you have come, nothing beats that!

    Rock on--LOVE your great attitude and approach to your competition diet. Yup, gotta be happy about it, and it IS only for less than two weeks, then you get to get onstage and then have a liiiittle more fun in your food, haha. That chickpea curry looks delish! You can come cook for me while you prep, I'll be sure to enjoy it enough for the both of us :)

  29. That's so great how you've taught yourself to cook--I had the same experience. Before I became focused on healthy eating, I never cooked more than Kraft mac&cheese, and I just fell in love with it! I also love that you're not putting yourself in a place where you feel bummed about not being able to eat what you make--as long as YOU are happy, that is all that matters! :)

  34. i am not a big pasta fan but i could eat a bowl of that chicken and olive tapenade by itself! love her little fuface, so cute. you have quite the drive, it'd be way hard for me to watch your man and sis eat those yummy things that you would normally enjoy when not in prep mode, but you're determined and i know that the triumph you'll feel in competition day will be the best feeling ever!
