#RECIPEFRIDAY: Clean and Savoury Ultra Low Carb Chicken Pizza!

Hi everyone and...

Before I get into today's tasty recipe...

I just gotta say that I am beyond excited that it's Friday as...

This week has felt quite long on my end! (I plan on getting in some good rest and relaxation over the next couple of days by simply taking it easy and by minimizing my what's on plate a little bit!)

Only a few things left to get done and I shall savour the rest.
Literally ;)
There will be lots of cuddling with my Teddy Bear no doubt :)

Onto this yummy recipe I have to share with you all!

As you know...

I'm currently getting ready for the OPA Ontario Championships coming in June so...

I've been keeping things in my kitchen competition friendly!


As I found myself looking for a little something savoury to get in my belly after a workout one day...

I decided to get creative and satisfy exactly what it is I wanted!

A delicious Pizza! (à la FU!)

Seeing that I've been carb cycling lately...

I had to rethink how I was going to make what I wanted (given what I could play with on this particular day in my cycle) which...

I did! (There were no two buts about it!)

Mmmmm Mmmm!

Honestly...

After taking my first bite...


I found myself with barely any left after my second! (I may have inhaled it lol)

I looked like this with every bite.

With all of that being said and eaten...

You're probably tired of me talking about how good my pizza was so...

I'll stop right now and share with you the recipe for my...


Clean and Savoury Ultra Low Carb Chicken Pizza!

Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients

    For the 'crust'

    Toppings

    Note: You can opt out of the chicken and replace with ToFU.


    Instructions

    For the Crust
    1. Preheat your oven to bake at 375F
    2. In a bowl, combine the egg whites, flax seeds and baking powder
    3. In a lightly sprayed olive oil coated fry pan, pour in the mixture
    4. Once one side has browned, flip over to the cook the other side (make sure not to break the round shape)
    5. Once cooked, remove from oven and place onto a baking tray
    6. Let cool for about 2 minutes

    The Toppings
    1. Add the chili sauce (or tomato sauce) first, followed by each of the remaining ingredients as listed.
    2. Switch the oven to broil, and place the baking pan in the oven for about 10 minutes (until cheese has melted and slightly browned)
    3. Remove from oven and enjoy!

      I always go crazy with mushrooms, peppers and chillies on my pizzas; can't get enough of them.

    4. YUM! ok i really like how the crust has just a few ingredients... i've always wanted to make my own "healthy" crust, but all the recipes i've seen are way too involved. this looks doable!

    5. This might just be the thing I need in order to make an omlette-like creation. I cannot do them withouht flipping but this way I can have eggs and all the good fillings without it turning into a scramble! :)

    10. I've been wanting to experiment with a low carb pizza crust. I've been seeing that cauliflower one, and I've thought about trying a crispy almond meal one, but I love the egg whites and flax seeds--so smart! I also love that you told I could eat as much cheese as I wanted. That's like granting permission for happiness ;)

    24. ALL OF THIS IS TOTALLY HAPPENING... Minus the CHEESE!! Holy Moly KABOLE!! Ah ha ha, Kabole?? Yeah, not sure where that came from... But hot dog, I want this WHOLE PIZZA right now... However, I probably shouldn't because sometimes FLAX makes me.... A LITTLE (aka: A LOT) bloated! lol
