Fitness Competition Eats: A Taste of Progress!

Hey everyone and...

Happy What I Ate Wednesday to you! (Sharing food really excites me! lol)


In keeping you up to date with my competition eats as I get ready for the...

OPA Ontario Championships coming up on June 1, 2013 in Toronto...


I'm going to give you a glimpse into some of the things I've been making and eating in prep towards the stage!

Of course...

I'll be doing so by linking up to Jenn's WIAW!


Now...

In getting myself ready for my competition...

I have to ensure that I don't miss a meal or workout and that...

I follow my program to a T!

The face of a good workout!

As the days and weeks go on...

SuperFit, my Coach, calls the changes (if required) on a needs basis, which...

Is based on what he sees! (Or doesn't see lol)

Having said that (you better believe)...

I listen and do as he tells me! (He's amazing at what he does and never do I question what program he gives me!)

Coach and Me:)

Since I've now put FUll trust into my body and...

Focus on how I feel and...

What I see (as opposed to focusing myself on any type of numbers...FYI...the scale and I have broken up!)...

This switch has...

Taken my mind and body off the scale (literally) and...

It has allowed me to appreciate my progress and myself for everything I have reached thus far!

That being said...

I feel good!

Actually, you know what?

I feel great! (I feel so much lighter and I don't mean in weight! lol)


Honestly...

Not getting on the scale has taken a lot of pressure off of me! (I walk by the scale every day at the gym but, I reFUse to get on. Unless there is a huge need for me to track my weight (I'm not talking measurements), I'm not going to get on that darn thing lol )

No scale is going to define me, how I feel or measure how I'm doing! (Nooooooooooooooope!)

So...

With that in mind...

Here's a taste into what I've been eating as I progress in my journey towards the championships!!! (Did you like that segue?! <---Segue, totally didn't know how to spell that correctly until today! lol)

Well, unless you've made it lol

Of course...

Not only do I make food for me but also...

For SuperFit!

He makes my heart go BOOM!

So...

In light of all the food I've been eating and sharing...

Here's the recipe for a dish I made for my man (not me) the other day! (Perhaps one you can enjoy as well!)

I started off by making SuperFit's favourite salad.
Followed by a simple Chicken and Veggie Spaghetti!

Simple Chicken and Veggie Pasta

by *CaNdY FiT*
Prep Time: 5-10 minutes
Cook Time: 20 minutes
Ingredients
  • 1 Chicken Breast (sliced)
  • 2 T Extra Virgin Olive Oil
  • 1 serving of Pasta (amount to your discrestion)
  • 1 cup Spinach
  • 1 Red Pepper (diced)
  • 3/4 cup Mushrooms
  • Chili Flakes to taste
  • Salt and Pepper to taste

optional ingredients
  • 4 Garlic Cloves (halved)
  • 1 T Pesto
  • Goat Cheese to top
Instructions
  1. In a medium fry pan, add in your olive oil and heat
  2. Once heated, add your veggies - let cook for about 5 minutes while stirring around from time to time
  3. In a pot, boil your water with some salt and add in your pasta of choice
  4. When the veggies have slightly browned and your spinach has wilted, add in your chicken and spices
  5. Stir occasionally until chicken has fully cooked

Putting it together
  1. Drain the cooked spaghetti and place it back in your pot
  2. Pour in the chicken and veggies mixture into your pot and mix together until evenly spread out (if you require a bit more olive oil, add in a touch more)
  3. Plate your pasta and top it goat cheese
  4. Enjoy!

  12. Can I come take a spin class??? I'm not really a huge pasta fan. I used to be once upon a time, but kind of weened myself off of it so I don't really think about it now. I do, however, need to pick up some seaweed wraps!

      Once upon a time I ate 2 large serving of pasta. 3/4 of the box actually. Yep.

  14. Love your positive attitude and I can FEEL every bit of your energy through this post! Look great girlie!!

    I definitely judge my progress based more on how my clothes fit/feel than based on a number on the scale because I know I can be a the same weight and have more or less muscle weight on my frame.
