As you all know by now...
Every Wednesday I get to share with you what I've been eating through Jenn's WIAW...
And, most recently...
The focus has been on what I've been making and putting into my belly as I get ready for the OPA Ontario Championships!
I play within the rules in respect to what I can have as I get ready for the stage and...
I make sure I whip out my creative juices to make things that will leave me very satisfied! (If I'm going to diet for a competition, I need to make it so that I still enjoy what I'm eating!)
Here's a peek into some of the things I've been enjoying in preparation towards the Championships in June!
|No Carb Muffin Tops.|
|Oatmeal Protein Muffin Tops.|
|Greek Yogurt mixed with NOW Foods Vanilla Stevia and placed in the freezer for about 30 minutes.|
|Chicken with mustard!|

|Burnbrae Farrms Egg Whites with Tuna, Cumin, Chives and Pepper.|
|Oven baked Salmon with Steamed Veggies...|

A great little dish I made for dinner last week!
I'm sharing the recipe with you! (But, I'm not sharing my own serving lol)
Garam Masala Chicken Stir-Fry
Prep Time: 5-10 minutes
Cook Time: 10-15 minutes
Ingredients (1 serving)
- 1 Chicken Breast (diced)
- 1 cup Green Beans
- 4 cloves of Garlic (I love Garlic!)
- 2 tbsp of Garam Masala
- 1/4 cup Water
- In a heated, lightly sprayed olive oil fry pan, add in your garlic (I like my cloves halved)
- Let cook for about 1 minute
- Add in your green beans and cook for another 3-5 minutes (until they soften up just a tad)
- Throw in your chicken, Garam Masala then your water (to thicken the spice blend)
- Let simmer, stir occasionally.
- Once chicken has cooked, remove from heat, plate and...
Feel free to add in more spice or water (to taste and desired thickness of spice blend).
