Competition Prep: Kitchen Creations!

Good morning everyone and...

Happy What I Ate Wednesday to you!

I'm loaded, ready to cook and...
EAT!
There's no doubt about it...
I love my egg whites!

As you all know by now...

Every Wednesday I get to share with you what I've been eating through Jenn's WIAW...


And, most recently...

The focus has been on what I've been making and putting into my belly as I get ready for the OPA Ontario Championships!


Like always...

I play within the rules in respect to what I can have as I get ready for the stage and...

With that...

I make sure I whip out my creative juices to make things that will leave me very satisfied! (If I'm going to diet for a competition, I need to make it so that I still enjoy what I'm eating!)

So...

Here's a peek into some of the things I've been enjoying in preparation towards the Championships in June!

No Carb Muffin Tops.
Recipe
Oatmeal Protein Muffin Tops.
Recipe
Nom Nom.
Greek Yogurt mixed with NOW Foods Vanilla Stevia and placed in the freezer for about 30 minutes.
Chicken with mustard!
I love my mustard!
Burnbrae Farrms Egg Whites with Tuna, Cumin, Chives and Pepper.
Oven baked Salmon with Steamed Veggies...
Compliments of my Dad, The Masta!
He's so good to me when I go over for dinner!
So, SO grateFUl!

Don't worry...

I'm sharing the recipe with you! (But, I'm not sharing my own serving lol)

Garam Masala Chicken Stir-Fry

by *CaNdY FiT*
Prep Time: 5-10 minutes
Cook Time: 10-15 minutes
Ingredients (1 serving)
  • 1 Chicken Breast (diced)
  • 1 cup Green Beans
  • 4 cloves of Garlic (I love Garlic!)
  • 2 tbsp of Garam Masala
  • 1/4 cup Water

Instructions

  1. In a heated, lightly sprayed olive oil fry pan, add in your garlic (I like my cloves halved)
  2. Let cook for about 1 minute
  3. Add in your green beans and cook for another 3-5 minutes (until they soften up just a tad)
  4. Throw in your chicken, Garam Masala then your water (to thicken the spice blend)
  5. Let simmer, stir occasionally.
  6. Once chicken has cooked, remove from heat, plate and...
  7. Enjoy!
note
Feel free to add in more spice or water (to taste and desired thickness of spice blend).

  2. we love mustard on everything!! the spicier the better. hehe. And i wish i could stomach plain egg whites, but the yolk helps my tummy. I know it's important for your prep though

    1. Mustard is so good and I love how many varieties and flavours there are!

      Interesting about the yolk...what is it about it that helps? Vitamins, Choline, minerals? I'm interested! :)

  5. I love garam masala! I used it in the curry dish I made this week, along with curry leaves.

    all of your eats make me smile. More proof competition diets don't HAVE to be boring. Cheers to keeping it tasty. :)

  6. Ahhh there's your garam masala! I need to add it to the grocery list again. I think I used the last of it the other day. I love that you try to be creative with your dishes and show that eating clean doesn't have to be boring and tasteless.

  7. I need to use more mustard! I've been 'saucing' with green salsa, but can't get too comfortable! Your pic reminded me to go grab eggs from Sams club..they were out of egg whites...good thing they come in 5 packs and I had extra!

  8. i LOVE mustard! I eat it on almost every sandwich. One of my pre-healthy days sandwiches was white bread, lots of mustard, and nacho cheese doritos. Sounds horrible,huh? It was pretty tasty though. Try mixing your tuna with a little mustard! :)

  13. OH MY GOD! I love mustard. I'm glad I'm not the only one! I would put it on everything if I could! Love the creativity. When I did competitions, I pretty much stuck to the same foods all the time because I'm boring. :)

    Mustard - LOVE Trader Joes Hot & Sweet - LOVE!!!!! I put it on & in everything!!! Chicken, tuna, veggies, turkey meatloaf, homemade guac - you name it - I use it! :)

    I have been experimenting with my Designer Whey products & other people's recipes! ;)

  29. I have meaning meaning to try a recipe with Garam Masala but haven't gotten around to it yet. I need to get on that! Those muffin tops look so simple to make and I of course love the short ingredient list, they might just have to go on next week's food prep list!
