#RECIPEFRIDAY: Protein Packed Pesto!

Hey everyone and...

SuperFit is mad excited about RECIPEFRIDAY!
As you can tell ;)

This week...

I have a protein packed recipe for you to try out that was made by both...

SuperFit and me with our new KitchenAid Food Processor! (We were so excited about it that we wanted to make something together using this new gadget of ours!)

SuperFit was so excited to press the buttons.

The first thing that came to mind to make was...

I mean...

I've loved Pesto (especially in my pasta) for as long as I can remember...

I decided that since I've always wanted to make my own...

Now was the time to take advantage of our new kitchen gadget! (SuperFit just wanted to play with our new toy lol)

As I've seen my Mom make Pesto before...

I thought I'd replicate the recipe (it's pretty basic and universal!) with the only difference being...

The added protein I would add to it!

I mean, you know me...

I'm all about the protein!

One quick processing job later...

This is what SuperFit and I ended up making:

Protein Packed Pesto

by *CaNdY FiT*
  • 2 cups fresh basil leaves (packed)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (fresh is better)
  • 1/3 cup pine nuts
  • 1/4 tsp each salt and pepper
  • 1/2 cup extra-virgin olive oil
for a Protein Packed Pesto
  • 1 cup 0% Natural Greek Yogurt per 2 1/2 tbsp of pesto (optional)
  1. In a food processor, add the Basil Leaves, Garlic, Parmesan Cheese, Salt, Pepper and Pine Nuts
  2. Process at low speed
  3. While processing the ingredients, slowly add in the Olive Oil
  4. Turn your food processor on high speed.
  5. Spoon out and conserve in an airtight sealed container.
for protein packed pesto
  • In a small bowl, spoon in 1 cup of 0% Natural Greek Yogurt. Add 2 1/2 tbsp of your Pesto. Mix together and serve. You can use it as a dip, sandwich topping or in your spaghetti!

I gotta say...

The KitchenAid Food Processor worked amazingly well and...

It was a hassle free cleaning job too!

I won't deny...

I was a little intimidated by this kitchen tool at first but...

It proved to be super simple to operate!

Needless to say...

I can't wait to use it again! (And get my turn to press the buttons! lol)

I mean...

Just look at how much FUn we had with it! (Warning: the video is super cheesy)

Okay so enough with me...

Now it's your turn to share your recipe!

I can't wait to see what you've all cooked up!

I'm sure Teddy won't mind trying out your recipes ;)

  2. LOVE this pesto recipe! Awesome protein-packed version.

Weekend plans = the usual. Homework, gym, errands.

    1. Thanks Liz! Have a great weekend doing the usual ;) xo

  3. You guys are so cute lol. We laugh at everything too....and then when we fight we laugh after because its so dumb....but I digress lol. I love adding Greek yogurt to everything, works wonders!

  4. Good tools make all the difference. Love the recipe!

  5. lol you guys are seriously adorable! i've never made my own pesto before and last time i used my food processor i tried to make almond butter and it freakin' broke! still haven't done anything about that... boo!

    1. I think it's time you do something about itz Linz!

  6. I love pesto and I love that just by adding in some greek yogurt you've made it protein packed! You are incredible!

  7. Great recipe! I honestly could not do half the cooking I do without my food processor!

  8. Ohhh... I have a TON of basil right now. This might have to happen today. I have a food processor, which I love, and a Vitamix. Some people argue you don't need bother, but the processsor works so much better for dips and nut butters.

    1. I can now taste the difference!!

  9. I love pesto! I like to make pesto chicken salad sandwiches but haven't made them in a long time. Thanks for sharing your recipe. This looks great!

    1. Oh that sounds sooooo good! Pesto Chicken Sandwich on a warm panini! Mmmm Mmmm!

  10. I love pesto too! I have a have a food processor and a Vitamix. I mostly use the Vitamix but my husband prefers the food processor for some recipes.

Now I'm craving pasta with pesto :)

  11. Okay, you think of everything. As I was reading I kept wondering if you ate this on your contest prep. But of course you answered my question! I do have a food processor and I've made Oreo Cookies in it and sauces and really all types of things. I'm now to lazy to stir things by hand. :)

    1. lol oh FUew! ;)

Oh my..Oreo Cookies! You must send me some in...June! lol

  12. I just got the same food processor and am so excited to use it! This could be my first recipe--love the idea of adding the yogurt to it.

    Have a great weekend!

  13. This sounds like heaven! Thanks for sharing!

  14. I haven't made pesto in ages. I have actually made one with silken tofu for a creamier pesto (and a boost of protein).

  15. Yum! Great idea to add the yogurt! I LOVE pesto.

  16. The addition of yogurt is brilliant!

  17. Haha! Cute! I never thought to add yogurt either. I bet it makes it deliciously creamy for a great sandwich or stuffed chicken/fish spread! Genius!

    1. It's awesome! You must try it Beka! xo

  18. I do have a food processor and I love it!!! thanks for the fabulous dish! I look forward to trying it out!

  19. Love pesto, sounds interesting with the Greek yogurt, wonder if I could sneak it in without my yogurt hating hubby figuring it out? ;)

  20. Awesome idea! I am always looking for new and creative ways to incorporate more protein into my diet. I am loving this :).

  21. I was so curious to see what you were going to add to pesto... love the yogurt idea! We're obsessed with our food processor, too.

  22. I love pasta and miss it soooo much!! Another 20lbs and then I can introduce it back into my diet. Looks yummy

  23. Love your new food processor. So jealous! :-)

I also love pesto. I make it without cheese of course and it is still delicious. My recent thing is to serve it with zucchini "pasta." Raw, gluten free, awesome!

    1. Zucchini pasta...I have yet to make it! I have the peeler though :)

  24. That's awesome. Crunched more. :)

Super Fit is super buff. It looks like a gerbil crawled under his sleeve and is trying to break free. DAAAAAANG!

  25. Loved seeing SuperFit as part of the Friday roundup!!! :)Great idea!!! I mean recipe & SuperFit! :)

  26. Oh I love that recipe! Pesto is the only way my child will eat pasta. I could squeeze in a little more protein into his diet.

  27. SOOO IN LOVE WITH THIS RECIPE!! One of the things I have decided to start doing when I am able to start seriously training again is really focusing on consistent nutrition and fueling. I want my body to function at maximum efficiency - so every Saturday before my long training runs I am going to eat the same meal to fuel - PESTO PASTA being my go-to dinner. Totally making this!

  28. That's an awesome idea!

    And super cute video ;-)
