#RECIPEFRIDAY: Protein Packed Pesto!

Hey everyone and...

Welcome to #RECIPEFRIDAY!

SuperFit is mad excited about RECIPEFRIDAY!
As you can tell ;)

This week...

I have a protein packed recipe for you to try out that was made by both...

SuperFit and me with our new KitchenAid Food Processor! (We were so excited about it that we wanted to make something together using this new gadget of ours!)

SuperFit was so excited to press the buttons.

Now...

The first thing that came to mind to make was...

Pesto!


I mean...

I've loved Pesto (especially in my pasta) for as long as I can remember...

Recipe

So...

I decided that since I've always wanted to make my own...

Now was the time to take advantage of our new kitchen gadget! (SuperFit just wanted to play with our new toy lol)


As I've seen my Mom make Pesto before...

I thought I'd replicate the recipe (it's pretty basic and universal!) with the only difference being...

The added protein I would add to it!

I mean, you know me...

I'm all about the protein! 


So...

One quick processing job later...

This is what SuperFit and I ended up making:

Protein Packed Pesto

Ingredients
  • 2 cups fresh basil leaves (packed)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (fresh is better)
  • 1/3 cup pine nuts
  • 1/4 tsp each salt and pepper
  • 1/2 cup extra-virgin olive oil
for a Protein Packed Pesto
  • 1 cup 0% Natural Greek Yogurt per 2 1/2 tbsp of pesto (optional)
Instructions
  1. In a food processor, add the Basil Leaves, Garlic, Parmesan Cheese, Salt, Pepper and Pine Nuts
  2. Process at low speed
  3. While processing the ingredients, slowly add in the Olive Oil
  4. Turn your food processor on high speed.
  5. Spoon out and conserve in an airtight sealed container.
for protein packed pesto
  • In a small bowl, spoon in 1 cup of 0% Natural Greek Yogurt. Add 2 1/2 tbsp of your Pesto. Mix together and serve. You can use it as a dip, sandwich topping or in your spaghetti!

I gotta say...

The KitchenAid Food Processor worked amazingly well and...

It was a hassle free cleaning job too!

I won't deny...

I was a little intimidated by this kitchen tool at first but...


It proved to be super simple to operate!

Needless to say...

I can't wait to use it again! (And get my turn to press the buttons! lol)


I mean...

Just look at how much FUn we had with it! (Warning: the video is super cheesy)

  3. You guys are so cute lol. We laugh at everything too....and then when we fight we laugh after because its so dumb....but I digress lol. I love adding Greek yogurt to everything, works wonders!

  5. lol you guys are seriously adorable! i've never made my own pesto before and last time i used my food processor i tried to make almond butter and it freakin' broke! still haven't done anything about that... boo!

  8. Ohhh... I have a TON of basil right now. This might have to happen today. I have a food processor, which I love, and a Vitamix. Some people argue you don't need bother, but the processsor works so much better for dips and nut butters.

  10. I love pesto too! I have a have a food processor and a Vitamix. I mostly use the Vitamix but my husband prefers the food processor for some recipes.

    Now I'm craving pasta with pesto :)

  11. Okay, you think of everything. As I was reading I kept wondering if you ate this on your contest prep. But of course you answered my question! I do have a food processor and I've made Oreo Cookies in it and sauces and really all types of things. I'm now to lazy to stir things by hand. :)

    I also love pesto. I make it without cheese of course and it is still delicious. My recent thing is to serve it with zucchini "pasta." Raw, gluten free, awesome!

  27. SOOO IN LOVE WITH THIS RECIPE!! One of the things I have decided to start doing when I am able to start seriously training again is really focusing on consistent nutrition and fueling. I want my body to function at maximum efficiency - so every Saturday before my long training runs I am going to eat the same meal to fuel - PESTO PASTA being my go-to dinner. Totally making this!
