{WIAW} Competition Food: No Carb Protein Muffin Tops!

As I'm now entering into my third week of my...

Competition prep towards the OPA Ontario Championships in June...

I thought I'd share with you some of my eats that I've been enjoying as of late, which of course...

But, just before I share the goods with you all...

I just wanted to mention how following my program (on the eating front of things) hasn't been bad at all! (I know often times people think that the limitations of contest prep are strict but, there are so many ways to keep things interesting and tasty within the limits we have to play with! Some diets aren't as strict as others (mine definitely is lol) but, having said that, it doesn't mean you can't find a way to enjoy your food! It's up to you to get creative! I did...I had no other choice lol)

**I also got creative when I introduced healthy eating into my life (coming from the girl who never cooked!). I had to learn how to keep things tasty in order for me to stick with it! I love food so, there were no two ways about it!**

Without making you wait too long...

Here are a few things I've been loving lately as I get ready for the Provincials!

Coffee.
Duh.
No Carb Protein Muffin Tops!
They look the same but they are different compared to these ones:)
Egg Whites.
Not creative but I like them nonetheless.
Bell Peppers to munch on.
Dijon Mustard Grain and Rosemary Salmon.
I have this a lot.
Lemon Pepper Haddock and Spinach.
(This wasn't as good as I had hoped!)

Since I've had many requests for my No Carb Protein Muffin Tops...


I thought I'd share the recipe with you all! (I mean, how could I not right?!)


So...

Here it is :)

No Carb Protein Muffin Tops

by *CaNdY FiT*
Prep Time: 2 minutes
Cook Time: 10-15 minutes
Ingredients
  • 8 Egg Whites
  • 2 tbsp Ground Flax Seeds
  • 2 tbsp Cinnamon
  • 1 tsp Baking Powder
  • 2-3 packets of Vanilla Stevia (optional - for a sweetened taste)

note
  • You can mix in the stevia with the other ingredients or, you can sprinkle it on top of your muffins. Your choice.
  • You can also use 4 egg whites (instead of 8) and add 1/2 scoop of Protein Powder (flavour of choice).
Instructions
  1. Turn your oven on to bake at 375F
  2. Mix all of your ingredients together in a bowl
  3. Lightly spray your muffin tin with Olive Oil
  4. Spoon in your mixture into each empty space and place in the oven for about 10-15 minutes.
  5. Remove from the oven and plate.
  6. Enjoy!

    Haven't been too creative in the kitchen lately (I'm a creature of habit with my eats, especially since I know what works for my body for training/workout fuel), but your recipes keep me inspired to try other flavor combinations.

  4. I so agrre with you about competition food - it doesn't have to be boring!!! There is just so much you can do. Egg whites can be turned into just about anything - love these muffins! I may try them with my peanut flour for some PB-cinnamon bites. :)

  6. I would like to say yes about the creative in the kitchen thing, but usually I am taking a recipe and making it to my own tasting. Only 1-2x I've just gone in and pulled whatever I had and made up something :) But they turned out tasty so I guess that is a plus! I love your recipes for the muffin tops - so easy!
