I'm super duper excited for our date! (Maybe even a little nervous too! lol I do wish Morgan from Life After Bagels could come out as well but she's sick with a crazy cold/flu that's been going around! Boo!)

In keeping with tradition...
Today is the day I get to share with you a new recipe via...

So...
In light of my making a few appetizers for my big brother's birthday (by request)...
I thought I would share with you a new recipe I will be putting out and using in one of tonight's appz!
Let's rewind a little bit...
As of late...
SuperFit and I have been enjoying Hummus with our meals!
Having said that...
I thought enough was enough...
I just had to make my own!

And, can you believe...
I even got SuperFit to help out?! (He sure did! lol)

Without following any recipe (don't worry, I took notes)...
I went with my gut and went for it!
I gotta say...
I think it turned out great!
Here's the recipe!
Protein Packed Hummus

by
Cook Time: 15 minutes
Ingredients
- 2 big cans Chickpeas (drained)
- 5-6 oz Chickpea juice (from can)
- 1/3 cup Lemon Juice
- 1/2 cup 0% Natural Oikos Greek Yogurt (optional)
- A dash of Paprika
- A dash of Oregano (to top)
- 1 tbsp Chili Sauce (if you like it hot)
- 2 tbsp Tahini
Instructions
- Blend (pulse) all of the ingredients together with the exception of the Oregano.
- Blend until silky smooth.
- Remove from blender, bowl and enjoy! (However it is you like to eat your hummus! With pita, pita chips, veggies, protein..whateva!)
You will have leftovers so, your place the surplus in a Tupperware container and refrigerate.

Now (as promised)...
This is how I will use the hummus in one of tonight's appetizers!
Crispy Filled Hummus and Goat Cheese Shells

by
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients
- #1 Hummus and a Sundried Tomato.
- #2 Goat Cheese, Olive Tapenade and a sprinkle of Paprika and Parsley to top.
Instructions
- Adding fillings to each shell.
- Bake at 350F for about 10 minutes (or until slightly browned).

I love hummus! How have I never added Greek? Did you peel all the casings off the chickpeas? It's a pain but makes it crazy smooth.

I have two variations I enjoy making; one with sundried tomatoes and the other with roasted red peppers. Very, very yummy!
