I must admit...
I had a bit of hard time creating a recipe this week as...
The thing I had initially wanted to share didn't quite turn out as I had hoped! (Although the idea in my head was awesome!)

| It's not that it didn't taste good ... It just wasn't AS good as I had envisioned it to be. I don't want to give out a recipe that's doesn't really work so... I'll rework it another time :) |
Anywho....
I did end up concocting something that came out tasty so...
That's exactly what I will be sharing with you today!
It's easy...
It's quick..
It's tasty and best of all...
It's protein packed!
Now...
If you're like me then...
You love adding a little sweetness (and a little protein) to some of your favourite eats!
So...
I decided to come up with my very own Berrylicious Protein Spread/Topping!
So far...
I've used it to top my Greek Yogurt...
And...
To spread on my Oatmeal Protein Bites!
I won't deny...
Both ways have been quite delish!
But what's even better is...
Here's the recipe friends!
Protein Packed Berry Spread & Topping

by
Cook Time: 2 minutes
Ingredients
- 3/4 cup Mixed Berries of choice (I went with Blueberries and Blackberries)
- 2 tbsp Ground Flax Seeds
- 1 scoop High Whey Revolution Protein Powder (I only had Chocolate but I think Vanilla or Strawberry would have been really good too)
- 1/4 cup Water
Instructions
- Add your Berries into a medium sized bowl
- Place your bowl in the microwave for about 1 minute (until berries turn soft, almost into a liquid state)
- Remove from microwave and with a spoon, smoosh the berries
- Add your Ground Flax Seeds, stir and microwave for about 30 seconds
- Remove from microwave, add your Protein Powder and a touch of water (if necessary, you'll know based on the texture you prefer)
- Mix together until thick (and gooey like) in consistency
- Place your mixture into a Tupperware container and refrigerate until you're ready to spread or top the goodness around!
- You have the option of first combining the Berries, Ground Flax Seeds and Water then placing it the microwave for about 1 min 30. After mixing it all together, you would then add your Protein Powder (both ways work).
- You can also add more water if you want a less jelly and more liquid like texture.
Also, if you don't want to add the Protein Powder, enjoy the spread without it! Use it like you would a jam, spread or topping or sorts!

Simple and yet so perfect. You're so creative. I am thinking of making this and spooning it over chicken or a white fish, like Halibut or on a crostini with goat cheese and a glass of wine. Perfecto!

Other than the consistency being different I wonder how this would work without yogurt to make it vegan? So many ideas come to mind for using this topping. Pancakes...yum! Or in oatmeal!
