#RECIPEFRIDAY {Low-Carb}: Chocolate Protein Fudge Berry Clusters!

I gotta say...

This week has been a busy one (seeing that it's my first week back at work) but...

It feels good to be back to my regular routine and...

To be doing Taekwon-Do again! (The school was closed for the holidays!)

My Dad "The Masta" has been kicking my butt!

In keeping with tradition...

Today I have a new recipe to share with ya'll!

It is Mmmm Mmmm good!

Now...

Before I go ahead and give it to you, I thought I should first give you the low down as to how I came about to make what I've been enjoying! (Since yesterday!)

Looks good don't it?! ;)

So, here it goes...

You know sometimes when you're wanting to satisfy that sweet tooth (well, that's if you have one) and you find yourself looking through the fridge, pantry, cupboard, freezer, sock drawer (what?) and....

There's just nothing to eat! (Or, nothing really appeals to you...)

What do you mean there are no more marshmallow?! lol

Well...

I came up with something so when that time comes...

I'm prepared and ready to satisfy thy craving! (Yep, that's pretty much the story behind this recipe lol)

On with the goods....

I'm all about the quick, easy, simple and protein filled recipes so...

Without FUrther ado...

Here it is!

Here's my recipe for satisfying that sweet craving when it hits! (Or, if you need a snack that is protein filled!)

I initially called them blobs but it didn't sound very appealing lol
It's so tasty!

Chocolate Protein Fudge Berry Clusters

by *CaNdY FiT*
Prep Time: 5 minutes
Freeze Time: 2 hours

Ingredients (serves 6)

  • 6 Scoops Chocolate Protein Powder (I used High Whey Revolution)
  • 2 1/2 tbsp Cocoa Powder
  • 1/2 cup Berries (I chose blueberries and raspberries)
  • About 1/4 cup Water (enough to thicken)
  • 1 tbsp PB2 (optional)
  • 1 tbsp Ground Flax Seeds (optional)

Instructions
  1. In a bowl, combine all of the ingredients together.
  2. Make sure you add enough water so that the consistency of the mixture is thick and gooey (you do not want it to be watery)
  3. Line your muffin pan (size of choice - I used my muffin top pan) with parchment paper
  4. Spoon in your mixture to fill each of the empty wholes (I made 6 in total for 6 servings)
  5. Place the pan in the freezer for two hours
  6. Once frozen, remove the clusters from the freezer and peel them off one by one and...
  7. Feel free to enjoy one ooey gooey cluster of goodness!

Note:
  1. To store, add the clusters one by one in Tupperware container, separating each with a piece of parchment paper. Place in the freezer.
  2. Each cluster has about 25 grams of Protein so I'd suggest only having one (and not two or three per sitting)
  3. You may have to let the cluster de-thaw a little bit before biting into it :)

    I always eat protein with every meal since I'm active all day long and need the fuel. I eat high protein, high fiber, low carb, moderate fat.
