Little Things Monday #3: New Year's Edition

Good morning everyone and...

Happy Little Things Monday!


Seeing that today is the day we say...

Goodbye to 2012 and Hello to 2013 (and yes...I'm still sick!)...

Thank you all for the get well wishes yesterday!

I thought I would share with you all the little things that have made this year special in this New Year's Edition of....

LittleThingsMonday

With every single experience I have had this year on top of...

All the things I have been able to take part in...

All of these events have enabled me to do a lot of self-reflection on who I am and who I want to be!

Through the good and not so good....

Every single little thing I have done and been through over the past year has contributed to the person I am today!

Me...
FU!

Over the past 365 days...

I've learned...

Life isn't always going to be filled with sunshine and green grass because...

There are times that will call for cloudy periodsrain and even maybe a thunder shower but...

At the end of day....

A rainbow will eventually come to light!

That being said...

It is with this light (how you turn the negatives into positives) that will bring forth a new day and essentially...

A new beginning! (A fresh start or a new perspective of sorts that will help you continue along in your life journey!)


2013 is just around the corner and it is with this new year that...

We get another opportunity to do and experience anything it is we want! (The options are endless and they are yours to make and pursue!)

Having shared all of this with you...

Here are just a few little things that have helped me grow as an individual over this past year!

Bikram Yoga: I was never able to still/quiet my mind and be present until I started this practice! (Though I haven't attended a class in far too long, many lessons were learned throughout the months I attended regularly which, have transpired into my every day living!)

5 reasons I love it!

Running: this sport pushed me in ways I never would have imagined! (Both in body and mind! )

My Mizunos became my best friend!
My first 10k race!
Deciding to commit to the Spartan Beast Race then...
Actually doing it!
Running my very first half-marathon!

Becoming an Ambassador for FitFluential and Sweatpink: I am so grateFUl for being a part of these two amazing groups! The friendships I've been able to make within these groups and the passion shared amongst those in it are like no other! I can't begin to tell you how amazing it has been to represent both FitFluential and Sweatpink

FitFluential Is Fitness Found

Competing in Fitness Competitions: Although this something I never thought I would do again, deciding to compete for a second time was a great decision. I was able to appreciate my journey so much more than the first time around and, I learned to be present throughout my transformation to the stage. I also learned how to accept the changes that came thereafter and overall, be happy with myself! (In and out of competition season!)

A year in comparison...

Taekwon-Do: my decision to go back to Taekwon-Do is something I thought about doing for a while but, wasn't quite ready commit to until recently. In less than a month of being back at it, my practising again has opened my eyes to the Art itself and me, as a Martial Artist. I never appreciated Taekwon-Do for what it was in my youth and going back 15 years later has enabled me to appreciate it for what it is.


My blog and you: This venue has allowed me to express myself in ways I never thought imaginable.Thank you all so much for making this year so special! I am so grateFUl for all the love and support you've given me since the beginning of my journey to Health and Fitness and my blog (which is soon going on year 2). Not for one second do I take that for granted! (Words can't express how blessed I am!) 


My Family, my friends, my loved ones: no words could ever describe how thankFUl and grateFUl to have you in my life! I love you all so much!


Teddy Bear (who just turned 1): The power of love one could have towards a puppy (pet) is unreal! (Getting Teddy Bear has shown me a whole new level of love!)! As cheesy as it may sound, he brings lots of joy and happiness into my life!


All in all...

In everything that I have worked towards and accomplished over the past year (and/or still working on)...

I know I have become stronger as an individual! (Both inside and out!)

Yep!

I must say...

This past year has really taught me a lot about...

Being present, mindFUl and grateFUl!

To be quite honest..

I don't think I would have been able to discover parts of myself that have unfolded if it weren't for...

Everything I have been able to experience!

No words can describe the level of appreciation I have towards all  things that surround and are a part of me!

It's been an eventFUl and memorable year and...

I can't wait to see what 2013 holds for you and me both!

Sick...

Good morning everyone!

I hope this day finds you well and that...

You are ready to welcome the new year that is fast approaching us!

As I mentioned earlier this week...

I caught a terrible cold (and SuperFit a flu) so...

We've been at home resting and sleeping a ton! (SuperFit more than I as he is suffering from a sinus infection on top of it all!)

In light of us falling ill...

We had to cancel our trip to Qu├ębec City! (We had planned on celebrating the New Year in QC as we had done last year but, being sick really took a toll on the both of us!)

As much as it sucks (yes, it sucks big time)...

Our health had to come first!

Let's just say...

We've been in our PJs waiting for our bodies to get better! (I did go to the gym yesterday as I needed  to get my body moving a little bit! SuperFit, on the other hand, has not been able to do a thing in 3 days!)

In light of this bad A$% cold...

I made a Chinese soup that always used to make me feel better as a child!


I remember...

My Dad (The Masta) often making this for me when I was younger! (He called me last night and reminded me of it!)


So...

Here I am sharing with you a FU Chinese Remedy! (It's quick and easy to make and does a world of wonders to the body!)

Chinese Chicken Congee

Cook Time: 20 minutes








Ingredients
  • 1/2 cup Short Grain Rice
  • 2 cups Water (you could add 4 but I like mine thick)
  • 2 tbsp minced Ginger
  • 1/2 Pulled Chicken Breast (cooked)
  • Salt to taste
optional ingredients
  • 1 tbsp chopped green onions
Instructions
  1. In a pot, add the rice, water, ginger and pulled chicken
  2. Turn your element on to high
  3. Once a boil has been reached, turn the element to low
  4. Cook for 20 minutes
  5. Once ready, remove from heat, add green onions, bowl and enjoy!

#RECIPEFRIDAY: Toffee Crunch Chocolate Bark!

Of course...

The first thing that comes to mind when I think of the word 'bark' is...

Teddy!

WoOf!

But today...

I'm not talking about my little Teddy Bear (nope!)...

I'm talking about tasty edible bark!


Although, mind you...

I'm sure Teddy would bark for a taste of it!  ;)


Throughout the many holiday parties we've attended over the past week...

Celebrating January Babies!

I came across a dessert that had me at the first bite!


It was a dessert that left me wanting more to the point where I had to tell myself...

STOP! (And get yourself the recipe!)

On it!

As you know...

I typically don't put up (or make) 'unhealthy' recipes but...

Seeing that it's the holiday season and all...

I thought it would be the perfect time to share with you something I had, enjoyed and then...

Made myself!

I'll have you know that the bonus about this delectable recipe is...

It's simple and easy to make! (Just my kind of baking!)

So...

On this edition of #RECIPEFRIDAY...


I have for you a dessert recipe that is sure to please! (Well, I hope so! lol)

Toffee Crunch Chocolate Bark!

Prep Time: 10 minutes
Cook Time: 15-20 minutes

Ingredients

Instructions
  1. Pre-heat your oven to 350F
  2. Line a baking tray with tin foil and place your soda crackers in a row
  3. Over medium-low heat, melt your butter and mix in your brown sugar until it's dissolved
  4. Pour the mixture over the sodas crackers and place in the oven to bake for about 6-8 minutes (crackers will float a bit)
  5. Remove the tray from the oven and cover with chocolate chips
  6. Return to oven for 1-2 minutes to melt chocolate (you could, alternatively, melt the chocolate over the stove top and pour onto the crackers)
  7. Remove from oven and spread the chocolate with a knife or spreader of sorts
  8. Top with pumpkin seeds and cranberries (or you can add these ingredients when adding the chocolate chips)
  9. Refrigerate overnight
  10. Remove tin foil and break into pieces
  11. For safe keeping: Put the bark in a Tupperware container lined with wax pepper and place in the fridge.

***This recipe was given to me by my Aunt, which was given to her by her friend. The only changes I made were the amount of crackers and chocolates chips used as well as the addition of the cranberries and pumpkin seeds.***
