The WonderFUl World of Egg Whites and Oats!

When it comes to my Oats...

I honestly crave them be it in whatever and whichever form they come!

Be it in a bowl, on plate, in a ramekin dish, on the floor (kidding!)...

I just really, truly enjoy my Oats and OatFUlly you do to! (Good play on words, yes, no?! It made me laugh, which probably means someone out there is shaking there head. cough cough, SuperFit! lol)

When it comes to my Egg Whites...

Not a day goes by that I go without them!

I absolutely love them!

I like my Burnbrae Farms Naturegg Simply Egg Whites!

They start my day, they meet me in the middle of the day and they simply make my day! (Well, they make me happy and keep me totally satisfied! lol)

There are just so many ways I can make use of them!

On a day to day basis...

You're definitely bound to hear me say...

Pass me the Egg Whites! (At least once! lol)

I've got plenty to go around!

So where am I going with this?! Well...

I've decided I'm going to share with you some of my favorite recipes using Egg Whites and Oats! (If not alone then together! They make the perfect couple!)

Okay, so let the sharing begin!

Let's start with the simple stuff like...

A bowl of scrambled Egg Whites!


Recipe:


Add a few veggies into the mix and you get...


Recipe:

  • Naturegg Simply Egg Whites
  • 1 T Ground Flax Seeds
  • 1 large handFUl of Spinach
  • Sliced Cherry Tomatoes
  • Minced Ginger
  • Chili Peppers or Hot Sauce

Next we have one of my favorites...

Low Carb Protein Pancakes...


Blend:
  1. Naturegg Simply Egg Whites 
  2. 1 scoop of Revolution Whey Chocolate Protein Powder (brand and flavor of choice)
  3. 2 T Ground Flax Seeds
  4. 2 Packets of  NOW Vanilla Stevia.
Instructions:
  1. Pour mixture into a heated fry pan;
  2. Make the pancakes as big or as small as you like! (If you like to make the bite-size ones like me, have some pouring patience lol)
**FYI: I always throw all the cooked pancakes back into the pan to make them crispy (I wouldn't though if they were bigger!) I then sprinkle some cocoacinnamon or another packet of Vanilla Stevia for some added tastiness.**

Switch up the ingredients a little bit, add some oats and you get...

Gluten-Free Oatmeal Protein Pancakes!


Recipe:
  • Naturegg Simply Egg Whites
  • 1/2 Cup Uncooked Gluten-Free Avena Only Oats (I just discovered these oats and my tummy absolutely loves them!)
  • 2 T Ground Flax Seeds
  • 2 Packets of NOW Vanilla Stevia
  • Sprinkle a little Cinnamon to top! (And maybe some extra Stevia if you're feeling a little sweeter!) 

Instructions are same as the ones listed above.

Do you like baking?!
I just discovered that I sort of do! (I'm having FUn with it seeing that I'm very new to it!)
Here are some of my fave homemade baked goods!
Baked Banana Chocolate Protein Oats!

Mix together in a bowl:


Instructions:

Place mixture in 2 medium sized ramekin dishes and bake in the oven at 350F for about 15-20 minutes.

Soooo good!

I simply like to enjoy these baked goods in different forms!

My goal was to show how much you can cook up and bake up using both Egg Whites and Oats, so...

13 Week Countdown: Moving Forward!

As I'm finishing up the first FUll week in my competition prep...

Everything's been going well and I'm on track! (And I feel great!)

After starting up again with my carb cycling (once we got back from our Québec City trip)...

I had no issues returning to my egg whites and regular eats! (Nothing beats a home cooked meal right?! Right!)

Who said a mug is just for drinks?!
Char Crust Seasoned Chicken with Lettuce, Spinach, Cherry Tomatoes and Broccoli :)
Ground Chicken with Broccoli and Mushrooms.

~Recipe for my Ground Chicken Plate~

Ingredients:

1 lbs of Ground Chicken
1 Broccoli Head
1 pack of sliced Mushrooms
2 1/2 T of Cumin
1 T Dried Oregano
1 tsp Chilli Flakes
Salt and Pepper to taste

Instructions:

In a heated, lightly coated olive oil sprayed pan, throw in your veggies.
Add your meat once veggies are about 1/2 way cooked.
Add your spices.
Stir around until meat has slightly browned.
Once cooked, plate and enjoy! (You will have leftovers!)

If you're wondering if the food I consumed while away had any effects on my weight or progress...


It didn't!

Although...

We had planned that in those few days away, I would load up! (With some FUn and yummy wiggle room to play around with!)

The only real 'rule' was...

No sugary treats were to be included in my FUeling!

So no my friends...

I didn't have any sweets! (It's all good though because I enjoyed some really great meals! Plus, with all of the work I had already put into the progress I had made since my goal to lean out, I didn't want to see my efforts go to waste, if you get my drift!)

*CaNdY*  heaven.

I will admit though...

We were both curious to see how my body was going to react given the added carbs as...

My body does have its ways of surprising us in the oddest of ways!

Let's just say...

I (we) was pleasantly surprised that nothing changed! (WoO HoO!)

In terms of my training...

I've been keeping to my workouts at the gym and I've been training hard! (No doubt! I love me some weights!)

I enjoyed a little extra caffeine the other day with ABB's Turbo Tea!

When it comes to my Yoga practice...

I was thrilled to have and introduce Little M (who will be competing again this Fall!) to her very first Bikram Yoga class!

She did absolutely amazing! (And, she's super flexible!)

I didn't realize until the Instructor told us but...
I situated ourselves in what they refer to as
"Hell's Kitchen"
In other words...
We were in the hottest spot in the room!
That would explain why I was so hot the last time! lol

For an update on my half-marathon training...

I've been doing my best to stick to a concrete schedule! (Since I've been lagging a bit behind for the past couple of weeks and let's just say, now is not the time!)

The plan was that...

I get back to a routine this week but...

I've been having pains in my left calf! (I went out on Tuesday and called it quits after hobbling down the road trying to get a normal stride in!)

I should also mention...

My last run wasn't my best either as I suffered from some abdominal cramping!

I did end up doing 14K (with a little walking) but...

I won't deny, it was definitely a painFUl run. (Both in mind and body!)

**I'm grateFUl for Nookie who brought out my inner-beast when I was ready give in to my mind's weakest point! (I pushed through and finished the run as strong as I could!) Thanks Nooks for your words of encouragement and motivation! xo**

All that being said...

I hope that by giving my calf some time to heal up...

I can get back to it next week! (Cross your fingers and toes for me!)

**Note: I need to make running just as much a priority as my weight training, which is a huge passion of mine! Right now, I need to commit to it to the same degree as my lifting, which is engraved into my schedule!**

So now moving forward...

I'm going to continue to 'putt' ahead as I go along in reaching my goals! (You better believe it!)

Playlist Thursday: Vacation Songs That Make You Think of Being Someplace Else!

Another Thursday another edition of...

Pavement Runner's Playlist Thursday!



Here's how it works (if you missed the first one I posted):

I have to choose three songs following the specified theme, this week being...

"Vacation Songs"

Meaning...

Songs that make you think you're on vacation! (Or someplace else! Mmmm beach!)

With that in mind...

Side Note: The Beach Boys bring me back to my childhood days! My brother and I absolutely loved this group so much we played the cassette (yes I said cassette! lol) until we wiped the tape clean! It wouldn't play any more so my Mom had to get us another! A few years ago, I bought myself The Beach Boys Greatest Hits...I still love them!

I must say, it was hard just picking one of The Beach Boys songs, so I'm going to sneak in a few others here and here!

Side Note: I just heard this song yesterday! I got all excited about it because it had all sorts of *CaNdY* love intertwined within it. It made me smile. I thought it was sweet....literally ;)

A Whale of a Good Time! Now It's Time to Rock & Roll!

On the last day of our summer holiday in Québec City...

We went on a road trip to Tadoussac!


In addition to the beautiFUl drive there...


And the pit stops we made to eat...


The main purpose of our road trip was to see us some Whales!

A couple of hours into our drive and a fairy ride later...

SuperFit was a wee bit excited lol
Me made sure to get out of the car on our fairy ride
once we were given the go ahead :)

We arrived in Tadoussac! (Only to be welcomed by rain! Boooo!)


Rain or shine...

We weren't going to go home without seeing exactly what we came for so...

We bought our tickets to go Whale watching on a Zodiac!


To our lovely surprise...

The sun came out as if it had never rained!

I told you I never saw my purse again after getting my MEC Bag!
It came with me everywhere!
So much for bringing my umbrella ;)

So...

We toured around this quaint little town...


And...

Enjoyed the scenery...


All before we got ready to...

"Get on the boat, ya, banana Zodiac boat!"


You better believe...

I made sure to take some Gravol before I got on because I get major motion sickness! (The non-drowsy kind since I didn't want to miss a thing! lol)

After a two hour Zodiac ride with 16 people on board...

We saw about a dozen Whales (and a Blue Whale too!)!

It was really neat! (No doubt!)

We weren't supposed to take pics on the boat :S

**I should note I was totally expecting a Free Willy moment, which didn't happen. Did I set too high of expectations?! lol**

Either way...

We had a whale of a good time!

Before getting ready to head back to our hotel...

We had dinner at a really cute looking café!


I ended up ordering a Chicken Burger topped with Goat Cheese, Sundried Tomatoes, Red Onions, Peppers and a Pesto Mayo!

It was delish!

After we FUeled up on the goods...

We also got our caffeine fix before our 3 hour drive back to the hotel!

As this would be our last day before heading home...

We were definitely happy to have spent our time in Tadoussac!

It made for a great end to our holiday!

Would you agree SuperFit?! (Now here's where my man gets to chime in a little on what he thought of our vacation thanks to a great idea I received from Miz on yesterday's post!)

We had the most amazing time filled with laughter, random dancing, food, walking, and oh ya, crying! (She didn't mention it, but I got all teary-eyed during the Spiderman movie too! Yep. lol)

Also...

I'm still positive she made up the round-off!

After 16 hours of total driving... 


And a few hill repeats on a old cobbled road...


The only thing we didn't do (and would have liked to have done) is visit Iles D'Orléans and the Mont-Montmorency Falls (which we did drive by, but that doesn't count!)!

Should I point out...

She didn't let me sleep in at all! (Bright eyed at 7am!)

Hey...

I thought I was on vacation too! ;)

I definitely got us up and running at the break-o-dawn! You can thank me.....NOW! lol

All in all...

This was the perfect getaway for us and I'm so happy we decided to go back after our New Year's Eve trip!


I must admit...

I was starting to miss my Teddy Bear!

I was really looking forward to a big bear hug!

There's no denying...

We had a great time and it made for a great start to my competition prep!

I'm all loaded up now and...

I'm ready to rock & roll with my preparations towards the stage in October and my first half-marathon coming up in September!

I've got a lot on the go and...

I look forward to my journey ahead!
