It's Been 2 Years!

SuperFit and I recently celebrated our two year anniversary!

I got flowers delivered to my work!!! :)
Gorgeous aren't they?!

Did I ever tell you that on our very first date...

I fell asleep at the movie theatre?!

To make matters even more interesting (I reFUse to say worse!)...

I snored. Loud. Verrrrryyyyy loud.

I mean...

The movie was great (well, from what I saw of it), but...

3D glasses make FU one great cover to 'rest' your eyes! (You should know I have a hard time staying awake FU any movie! Although, I'm doing a bit better now. I last until the Popcorn and *CaNdY* are finished! Kidding! Sort of! lol) ;)

At least I can keep my eyes open FU a picture or six!


As our special day fell on a weekday...

We put our celebration supper on hold!

That being said...

I hadn't put much thought into dinner on the night of our anniversary! (Actually not at all because I was in meetings all day! Is that bad?! lol)

So when I got home...

I threw some Extra Lean Ground Turkey on the defroster! (SuperFit was really impressed. I could tell!)

Mmmmm.

While the meat was defrosting...

I went to the gym FU a Back workout...

**1 warm up set and 2 working sets of 6-10 reps to failure.**

Hammer Pulldowns.
Seated Rows.
Pull Ups (not the Diaper).
a.k.a. Chin Ups 
Leverage Rows.

And...

007's Spin class!

During the class...

I had the bright idea to make a Spaghetti Sauce with Ground Turkey! (Something quick and tasty using a meat I never once used FU a pasta sauce! Worth trying out I figured!)

**I swear I was paying attention to what was going on around me! lol**

Since I got home beFUre SuperFit...

I started dinner without telling him about my awesome plan! 

Better to surprise him right?! (That's what I thought!)

Well...

I had 45 minutes to getter done!

So I got to working! (Recipe is shared at the end of this post!)

Badda Bing...


Badda Boom!


As things started rolling...

I decided to make his fave salad and dressing! (Dinner was becoming a little more special as I got things going!)

Balsamic Vinaigrette

I have to say the best part of getting supper together was...

The explosive Tomato Paste!

It literally flew all over the place!

Once I cleaned up the bloody mess (I left one area FU SuperFit as you will see)...

I finished off the sauce!

Is it weird that I used a wok?!


Either way...

Everything was coming together quite nicely!


As soon as SuperFit got home...

He was thrilled to see what was cooking! (And interested to find out what Lean Ground Turkey spag. sauce would taste like!)

He was even more excited when...

I showed him the area that needed cleaning!


That's okay though because...

There's nothing his favorite salad couldn't fix! (Riiiiiight lol)

I added Cherry Tomatoes, Goat Cheese and Walnuts.

And of course...

A big ol' plate of Spaghetti with a lean, mean Meat Sauce!

Despite his cute face...
He loved it!
He was pleasantly surprised :)
Yessssssssssss!

As promised...

Here's the recipe! (I threw in the ingredients at random! It seems to be working FU me! lol)

**It took a total of 50 minutes! This included prep time!**

Ingredients are as follows:

  • 1/2 lb of Extra Lean Ground Turkey;
  • 1 Small Chopped Onion;
  • 1 1/2 cup of Sliced Mushrooms;
  • 1 tbsp. of Extra Virgin Olive Oil;
  • A little over 1/2 a large can of Diced Tomatoes (with juices);
  • 1 small can of Tomato Paste;
  • 2 tbsp. of Dried Oregano;
  • 2 tbsp. of Dried Basil;
  • 3/4 cup of Chicken Stock (1 cube with water, dissolved in microwave);
  • 3 Dried Bay Leaves;
  • Salt and Pepper to taste; and
  • Crushed Chilies (optional).

Instructions:

- Heat Extra Virgin Olive Oil in a sauce pan (I know, I know, I used a Wok lol).

- Brown Onions then add Mushrooms.

-Once browned, add in the Ground Turkey.

- Add spices (minus the Bay Leaves) and spread around evenly.

- Add Diced Tomatoes, then Tomato Paste and Chicken Stock. Stir.

- Add Bay Leaves. Stir in.

- Cover the sauce and let simmer.


- Stir occasionally and salt and pepper to taste as you go!

I'm a BIG...

Believer. 

I believe in myself and my true potential.

I believe in change. I believe we all have the capacity to make our dreams a reality. I believe if we commit ourselves to a goal, we will reach it. I believe anyone can accomplish anything if they put their minds to it. I believe in the sharing of information and ideas. I believe there is always more to learn, whether or not we are experts. I believe in motivation and motivating others. 

Having said that...

I'm also a Knower.

I know if we really want something, we will get it. I know if we are determined to make something happen, it will happen. I know given the proper direction, guidance, support and encouragement, we will achieve our goals. I know we can make positive lifestyle changes at any point in our lives, and...

I know we all have what it takes to...

Just do it!

After blogging FU a little over a year's time...

I've fallen in love with writing! (Or is that obvious enough not to state?! lol)

Okay fine...
Typing! ;)

It has truly become a passion of mine I never quite knew existed! (I mean I had a journal I sometimes wrote in and I personalized holiday/greeting cards, but that was the extent of it lol) 

Through my blog, I have been able to share...

My life before *CaNdY FiT* (which was a sedentary one!) and everything else that followed thereafter!

My sedentary life was one that involved...

No physical activity (FU seven years), proper nutrition, let alone any kind of balance! (Unless it was balancing a tray of food!)


That was...

Until I made a commitment to myself to make the old me...

Hi!

Into...

A Healthier Me...

Why Hello There!

Let alone...

A Competition Me!

I won 1st place!

Since making the switch...

I vowed never to go back to the exercise-free and 'lack of anything healthy' lifestyle I led.

I can't believe how much has changed in the past two years!

And believe me...

I know I won't! (How could I?! I've never felt better!)

By continuing to share my journey and experiences (through my writing)...

The hope is to motivate and encourage others to see that it is possible FU anyone to lead a healthy lifestyle FUeled by...

Exercise...


Healthy Eating...


And...

Balance!


I strongly believe...

Health and Fitness is a lifestyle, it is not a fad nor is it a diet.

It is a healthy way to be and live and...

I know...

We all have what it takes to live and be healthy!

And that's my goal...

To share various ways and tips you can use to commit yourself to this lifestyle!

As well as make you...

See, believe and know that...

You can make this way of living stick! 

Whether it be through my...

  • Recipes;
  • Workouts;
  • Motivation and Determination to Succeed;
  • Cheesy Sense of Humour (although perhaps I'm the only one who laughs at my jokes! lol); and (not limited to)
  • My *CaNdY* Lovin' Ways...

My goal is to show you that all things are possible, whether or not we need to make a few left and right turns to get there! (You can do whatever it is you put your mind to! You just have to want it, then chase after it!)

In finding a passion FU my newfound lifestyle and in my writing...

This opportunity is one I am super thrilled about! (Like, super duper thrilled!)

Why? Because...

I would be able to speak to and write on what I love doing most, like...
Training.
And...
Wearing matching jackets ;)

Through an additional medium!

Having shared all of this with you...

This is FU Real!

Since joining the FitFluential Family as an Ambassador...


The amount of amazing, like-minded individuals I have been able to connect with (in this short of time) has been astounding!

The supportmotivationencouragement, tipsadvice and overall sharing of ideas through our passion FU Health and Fitness has simply been...

Incredible! (The constant flow of information shared with one another is beyond what I ever imagined it to be!) 

As an Ambassador...

There are opportunities that present themselves as we share our stories, follow and promote Healthy and Active lifestyles.

One of which was presented by FitFluential most recently! (This got me really, really, excited!)

This potential opportunity is one that would give me the chance to branch out through an additional (and huge) medium.

One that would allow me to write FU a top...

Health and Fitness Magazine!!! (OMG! I know right?!)

Thanks to FitFluential...

This amazing opportunity is a dream (I haven't yet had but will tonight I'm sure!) come true!!! 


I often read Health and Fitness Magazines, but...

Never would I have thought or imagined that one day I'd be given the chance to write FU one because of...

The lifestyle I was leading!

To be quite honest...

Never did I think I would be part of anything that had to do with Health and Fitness...

Let alone be able to relatespeak to or write on such a topic. (I took my family and friends by surprise, including me, to even attempt to follow such a lifestyle...then share it with others!)

But now...

believe I can! (The past two years have opened my eyes to so many things I never once knew existed, within and outside of me! I have shown myself that you can do whatever it is you put your mind to, if you really want it!)

Words cannot express (FU once! lol)...

How excited I am!

Are you FU real?!!
Yipppeeee!

Now...

I'm working on putting something together as I audition FU this huge opportunity! (An audition post to be more specific!)

Enter The Dragon!

As you may or may not know...

Today is Chinese New Year and...

We are celebrating the year of The Dragon, which represents Power and Strength! (SuperFit is a Dragon...of course he is! lol)

To keep up with FU Family Tradition...

We had a big Chinese feast over the weekend! (It was held at The Masta's house!)

I was happy to see my Aunts, Uncles and Cousins! (It had been a little while!)


When we arrived at The Masta's...

Everything was already chopped & diced up FU all the fine dishes he was about to make! (This saved me from losing another finger tip! lol)


So before you knew it...

The Masta got Wok & Rollin'...

Wokin' with FU.

And...

SuperFit patrolled the area! (To make sure nothing got in his way!)

He took his job very seriously.

Once everything was ready...

The Masta gave us the go-ahead to dig in!

We all lined up FU some Chinese Eats! (My Aunt and Uncle also brought some traditional dishes FU us to feast on!)

These mushrooms were amazing!!!!
I was determined to replicate this dish after tasting it!

As SuperFit patiently waited his turn...

FU I'm hungry FU.

Everyone was filling up their plates!


Mine ended up looking like this...

Salmon, Chicken, Beef, Bok Choy and Mushrooms.

As soon as we were done eating...

A bunch of satisfied FU's!

It was time FU dessert! (Yes, we all had room FU something sweet!)

Dessert please!

There were two options...

1. Chocolate Fondue (The Masta's staple dessert)

Bananas are the best FU dipping in your chocolate!

And/or...

2. A Traditional Sweet Red Bean Soup (if you didn't know, the color red signifies happiness and luck in Chinese Tradition...making this soup a popular one! Also, you may have noticed I've been using lots of red colors throughout this post! There's a reason FU that! lol) 

My Aunt V. made it!

As I assumed my Chocolate Fondue Making Role (It's my duty as a FU!)...

I may or may not have dipped my finger.

The Masta warmed and served the Red Bean Soup!


Once we were done indulging  in these great desserts...

We spent the evening talking until we called it a night!

**Traditionally, a red envelope is handed out during Chinese New Year. In it is what we call Lucky Money. I always liked this tradition! ;)**

The next evening (last night)...

SuperFit and I had a Chinese Feast of our own! (We invited another couple over to celebrate! But only one could make it due to illness. Boo, I know!)

I took out my China (literally)!

As my goal was to replicate my Aunt's Mushroom Dish...

We went to the Chinese Grocery Store to FUel up on some essentials! (Yes, we braved the craziness!!!)

Let's go!
It's surprising we picked a sauce out of the 100s available.
Actually, no. I knew which one I wanted lol
Fish Balls.
Used FU Chinese Fondue!
Lucky *CaNdY*
I used to eat these as a kid all the time!

As soon as we got home...

I got to cooking!

First...

I started with the Mushrooms! (Hoping they'd turn out! lol)

I was told to get the dry mushrooms in the medium price range!
They can get very expensive!!!

I soaked them FU about 45 minutes! (But overnight would have been better!)


I then threw them in a heated Wok and crossed my fingers FU good things to come! (I got the gist of what the recipe called FU based on my asking the evening prior. The measurements I used were at random lol If you're looking to make it...try this recipe!)


Once cooked...

I had SuperFit try it! (He fell in love with this dish at our Family dinner! He was excited when I said I'd try to make it!)

Both of us agreed it was really good but next time...

We'd buy the Mushrooms without the stem! (I will also soak them overnight as per my Uncle/Aunt's suggestion!)


The other dishes I made were:

**Note: I made these specially FU Chinese New Year, so be mindful of the ingredients (re: sauces) I used if you're wanting to try out the recipes shared below. Use of the ingredients listed are entirely up to you. This was a 'special occasion meal' and was enjoyed as such :)**

1. A Beef and Broccoli Stir-Fry...

Ingredients:

  • 1/2 lb. Sliced Beef;
  • 2 1/2 cups Broccoli;
  • Spray Olive Oil (or 1tsp. Olive Oil);
  • 1 tbsp. Minced Ginger Root;
  • 1/4 cup Water; and
  • 1 1/2 tbsp PC Korean BBQ Sauce.

Instructions:

- Heat your Olive Oil over medium/high heat in a medium sized pan or wok. Add Ginger.
- Add Broccoli, then Water. Cook for about 5-7 minutes.
- Add Beef then Sauce.
- Mix sauce around until evenly spread.
- Cook until desired Beef preparedness.


And...

2. A Chicken and Bell Pepper Stir-Fry...

Ingredients:

  • 1/2 lb. Sliced Chicken;
  • 2 diced Large Bell Peppers (colors of choice);
  • Spray Olive Oil (or 1tsp. Olive Oil);
  • 1 tbsp. Minced Ginger Root; and
  • 1 tbsp. Vegetarian Sauce or Hoisin sauce (you can usually find these at your local grocers in the International aisle); and
  • 1 tsp. Vietnamese Chili Garlic Sauce (optional).

Instructions: 

- Heat your Olive Oil over medium/high heat in a medium sized pan or wok. Add Ginger.
- Add Diced Bell Peppers and cook for about  5-6 minutes.
- Add Chicken then Sauce (including Hot Sauce - optional).
- Mix sauce around until evenly spread.
- Cook until Chicken is done.

Oh...

And I also made some rice! 

Once it was all ready to serve...


I put the dishes on the table and we all dug in!


FU dessert...

We shared a bowl of Dragon Eyes! (I can't promise you'll spit fire after eating them!)

And just so you know...

There's a process to eating these...

You don't eat the outer shell.
Trust me, I've seen this done!
Peel it!
Make sure to bite into it first..that way you can peel more easily..
Then put it in your mouth and enjoy the sweet juices.
Be sure not to eat the seed though!
Too complicated FU SuperFit ;)

After a great weekend celebrating Chinese New Year with Family and Friends...

Tonight was spent at the gym doing...

1. A Chest Workout; and
2. A Spin class!

Let's just say...

I had lots of FUel to burn after my celebration eats! ;)
