You are ready to welcome the new year that is fast approaching us!
As I mentioned earlier this week...
I caught a terrible cold (and SuperFit a flu) so...
We've been at home resting and sleeping a ton! (SuperFit more than I as he is suffering from a sinus infection on top of it all!)
In light of us falling ill...
We had to cancel our trip to Québec City! (We had planned on celebrating the New Year in QC as we had done last year but, being sick really took a toll on the both of us!)

As much as it sucks (yes, it sucks big time)...
Our health had to come first!
Let's just say...
We've been in our PJs waiting for our bodies to get better! (I did go to the gym yesterday as I needed to get my body moving a little bit! SuperFit, on the other hand, has not been able to do a thing in 3 days!)
In light of this bad A$% cold...
I made a Chinese soup that always used to make me feel better as a child!
My Dad (The Masta) often making this for me when I was younger! (He called me last night and reminded me of it!)
Here I am sharing with you a FU Chinese Remedy! (It's quick and easy to make and does a world of wonders to the body!)
Chinese Chicken Congee
Cook Time: 20 minutes
- 1/2 cup Short Grain Rice
- 2 cups Water (you could add 4 but I like mine thick)
- 2 tbsp minced Ginger
- 1/2 Pulled Chicken Breast (cooked)
- Salt to taste
- 1 tbsp chopped green onions
- In a pot, add the rice, water, ginger and pulled chicken
- Turn your element on to high
- Once a boil has been reached, turn the element to low
- Cook for 20 minutes
- Once ready, remove from heat, add green onions, bowl and enjoy!
