Sick...

Good morning everyone!

I hope this day finds you well and that...

You are ready to welcome the new year that is fast approaching us!

As I mentioned earlier this week...

I caught a terrible cold (and SuperFit a flu) so...

We've been at home resting and sleeping a ton! (SuperFit more than I as he is suffering from a sinus infection on top of it all!)

In light of us falling ill...

We had to cancel our trip to Qu├ębec City! (We had planned on celebrating the New Year in QC as we had done last year but, being sick really took a toll on the both of us!)

As much as it sucks (yes, it sucks big time)...

Our health had to come first!

Let's just say...

We've been in our PJs waiting for our bodies to get better! (I did go to the gym yesterday as I needed  to get my body moving a little bit! SuperFit, on the other hand, has not been able to do a thing in 3 days!)

In light of this bad A$% cold...

I made a Chinese soup that always used to make me feel better as a child!


I remember...

My Dad (The Masta) often making this for me when I was younger! (He called me last night and reminded me of it!)


So...

Here I am sharing with you a FU Chinese Remedy! (It's quick and easy to make and does a world of wonders to the body!)

Chinese Chicken Congee

Cook Time: 20 minutes








Ingredients
  • 1/2 cup Short Grain Rice
  • 2 cups Water (you could add 4 but I like mine thick)
  • 2 tbsp minced Ginger
  • 1/2 Pulled Chicken Breast (cooked)
  • Salt to taste
optional ingredients
  • 1 tbsp chopped green onions
Instructions
  1. In a pot, add the rice, water, ginger and pulled chicken
  2. Turn your element on to high
  3. Once a boil has been reached, turn the element to low
  4. Cook for 20 minutes
  5. Once ready, remove from heat, add green onions, bowl and enjoy!

  1. Wishing you a quick, full recovery! I've been a little under the weather too (mostly sinus issues) so I just make sure to stay hydrated (as usual), get enough rest (also as usual), and try to stay home when possible. Hang in there!

    Definitely excited for 2013 - time for a new beginning! :)

  7. I am so sorry you're sick. I can empathize because I'm feeling pretty crummy too. Not quite sure if we'll make it out for NYE, but we aren't traveling so it can wait until the last minute.

  8. I LOVE Quebec City!! I stayed at the fairmont and will never forget the old town (or whatever that historic area is) and all the really big beers? lol Montreal is my favorite tho... I have better luck with my Frenglish there.

    1. We stayed there this summer! It was fabulous! We absolutely love Quebec City..it's like our little getaway place :) The area is called Quartier Petit Champlain...so quaint...so lovely!

      MTL...awesome city to shop, play and eat :)
