Baked Oatmeal Protein Muffin Tops!

Ohhh goody goody gosh....

Do I ever have some FUn and delicious recipes to share with y'all!

Mmm Mmm.

As my pre-comp diet doesn't give me too many options to play around with...

I decided to get creative with the ingredients I already use to make my Gluten Free Oatmeal Protein Pancakes! (<---A new contender has presented itself for my #1 fave breakfast! Who knew blending and stirring the contents would end up making THE difference! Yep!)

Without blabbering on about how amazingly delicious this warm and satisfying little plate of goodness is (I'm not biased at all lol)...

Get ready for these two super simple, no fuss, no muss recipes!


So step aside Protein Pancakes...


You have a new contender!

Alright, enough talking...

Let's get cooking!

Recipe #1

~ Baked Oatmeal Protein Muffin Tops~
**Gluten-Free** Makes 6 Muffin Tops

Ingredients to mix in a bowl:

1/2 cup *Only Oats* Pure Whole Grain Quick Oat Flakes (as you know, I love these Oats as does my tummy!)
6-8 Burnbrae Farms Egg Whites
1 tsp Ground Flax Seeds
1 T Ground Cinnamon
2 packets of Vanilla Stevia
1 T Baking Powder

Optional Ingredients: 

Berries
Banana
Chocolate/Carob Chips (mmmm chocolate!)

Instructions:

Be sure to have your oven pre-heated to bake at 350F.

Stir contents.

Once combined...

Pour your mixture into a Muffin Top baking pan!


Bake for about 15-20 minutes!


Remove from oven, let cool for about a minute, plate and enjoy!


 Recipe #2

~Baked Oatmeal Chocolate Protein Muffin Tops~
Makes 6 Muffins

Ingredients to mix in a bowl:

1/2 cup  *Only Oats* Pure Whole Grain Quick Oat Flakes
6-8 Burnbrae Farms Egg Whites
1 tsp Ground Flax Seeds
1/2 Scoop Chocolate Protein Powder (I use Revolution High Whey, it's amazing!)
2 packets of Vanilla Stevia
1 T Baking Powder

**Instructions same as those listed in recipe #1**

I sprinkled some Vanilla Stevia and Cinnamon to top :)

And...

If you're wanting to give this recipe a sweet little twist...

Drizzle some chocolate protein goodness over-top! (Note: I am no longer drizzling until post-competition!)

Recipe for Chocolate Drizzle:

1 tsp Cocoa Powder
Splash of water (until it becomes thick in texture)

Optional Ingredient:

Mix in 1 T of PB2 and add enough water to create a frosting like texture

**Obviously you can make more...it's like FUdge!**

Drool.

TIP: It's best to eat them right out of the oven (once slightly cooled) as they do not keep for long. There's nothing in them that would preserve their moistness! Nikki, my good friend who has tried these muffins, adds Greek Yogurt to keep them moist, so feel free to try that out! (If you're watching your carb intake, be 'portionally' mindFUl.)

And, just when you thought I was done...

I'm not! (I'm having a blast getting creative with the ingredients I can use! The possibilities are truly endless!)

    These bakes looks awesome! One way to preserve them is to freeze them immediately. I do that a lot and it makes for an easy 30-sec-int-the-micro post-workout snack.
