Random Ramblings and No Bake Oatmeal Protein Balls!

It's Tuesday night...

I'm on the road (in a different city), relaxing after a good upper body workout at a local gym nearby!

Keeping my FU Face alive and well :)
I love me some Dumbbells!

Just to give a quick update on some life randomness...

We painted the kitchen this past weekend, which Teddy didn't find FUn whatsoever!

Poor Puppy!

I also FUeled up on some much needed fridge essentials...

Because let's get real...

I can't go without my Gluten Free Oatmeal Protein Pancakes...

Egg Whites Veggie Bowl...

Egg Whites, Spinach, Cherry Tomatoes, Pepper.

And some juicy Peppers to crunch on!

Crunch Crunch.

Before packing up my suitcase...

SuperFit and I had a date night at Caffe Mio!

One of our favorite restaurants!

We started with the Muscles Mussels...

And for my main...

I had the same Chicken and Roasted Beet Salad I had the last time we went! (It's super tasty!)

Nom Nom.

Of course...

With all of this FUel....

Coffee.
No-bake Protein Balls.
Recipe is at the end of this post.

I went out for my long run of the week with Nookie!

13K.
We incorporated some hills.
I  really need some hill training!
Still loving my Mizuno Waves Inspire 8s!
We had an amazing, sunshiny morning run together!

 I also got SuperFit to train me for my Back Workout! (He's amazing!)

Once packed up and ready to go...

I made sure to prepare a salad for the road!

Char Crust Seasoned Chicken, mix of greens, hot peppers and
cherry tomatoes lightly dressed in my Balsamic Vinaigrette.

I mean...

You know I never leave the house unprepared! :)

I should also mention that during the time I've been away...

I've been sticking to my program! (Although I won't deny, I do miss my home cooking and having the freedom of making my own meals!)

Not a day without my Egg Whites.
Veggies.
Greens.
And...
Protein!
Ever tried Fiddleheads?

All in all...

The past few days have been busy yet filled with good times!

What really put the icing on the cake was the fact...

I got a chance to Skype with my friend who's been in Chile for the past six months! (You gotta love Skype for that!)

It was great to catch up!

Alright well, I hate to cut it short but...

That's it for me!

I'm going to continue relaxing the night away!

Have a great evening!

Oh and as promised...

Here's the recipe for my No-Bake Chocolate Oatmeal Protein Balls!

**I did this totally on the fly and so the measurements may not be exact!**

Instructions and Ingredients:

  1. Add water (a little less than 1/4 cup) in a bowl with 1.5-2 scoops of Chocolate Protein Powder. (Add just enough water to make the Protein Powder thick in consistency- similar to my shot of Protein Pudding);
  2. Add in about 1/4 cup (more or less) of Oatmeal to the mixture;
  3. Spoon it all together until the oatmeal and protein become one;
  4. With your hands (or with a small ice cream scoop), make mini ball-like shapes out of the mixture;
  5. Place the Chocolate Oatmeal Protein Balls on a plate and put them in the fridge for about 30 minutes (or in the freezer for 15ish).
  6. Once cooled, enjoy!

Optional ingredients you can add to it (if you want!):

1 T PB2
1 T Peanut Butter
1 T Ground Flax Seeds
1 T Dried Fruit.

**I'll be sure to take down the measurements once I make these again! I'll update you with a better, more concise recipe soon! I was just too excited about these Protein Balls that I wanted to share them with you sooner rather than later!**

Questions FU You...

1. How's your week going so far?
2. What are some of your grocery essentials?
