We're going to break up this post into three different sections:

1. Eat (all things food);
2. Play (FUn & Exercise); and
3. Love (all around!).

**I should point out all of these three things are found within each of the different sections lol**

Here we go!

I've started eating my ultra-low carb Protein Pancakes again! (I forgot how much I used to enjoy these during my pre-comp days!)

  1. 5 Egg Whites;
  2. 1 scoop of Revolution Whey Chocolate Protein Powder (brand and flavor of choice);
  3. 2 T Ground Flax Seeds;
  4. 2 Packets of Vanilla Stevia.

Optional Ingredients and toppings (which would up the carbs obviously):

  • Blueberries
  • 1/2 Banana
  • PB2
  • Anything you like :)

  1. Pour mixture into a heated fry pan;
  2. Make the pancakes as big or as small as you like! (If you like to make the bite-size ones like me, have some pouring patience lol)
Big ones :)

**FYI: I always throw all the cooked pancakes back into the pan to make them crispy (I wouldn't though if they were bigger!) I then sprinkle some cocoa, cinnamon or another packet of Vanilla Stevia for some added tastiness. If you want to add oatmeal to your pancakes - see this recipe.**

Next on the food list...

I recently went out for roll-ups with my little sister Kiki, Mr. FUntastic and SuperFit at...

La Pie!

Mr. FUntastic was leaving again on one of his Geology Missions out in the bush so...

We sent him off on a FUll tummy!

He didn't mind this one bit :)

All things to make some yummy chicken roll-ups!
Not staged.
Definitely staged.

What I love about this dish is the assortment of fresh veggies and protein you get to assemble into...

One big roll! (Well, you get to make multiple rolls if you don't try and stuff everything into one which, quite honestly, wouldn't work lol)

And trust me...

It still (to this day) takes me a couple of tries to get it right! (As in to make it all stick together without making a mess! lol)

In terms of dinners and what not...

I've been recycling some of my fave recipes like...

  1. 1 T Extra Virgin Olive Oil;
  2. 1 1/2 Cup Mushrooms;
  3. 1/2 Cup halved Cherry Tomatoes;
  4.  Maison Le Grand Pesto;
  5. HandFUl of Walnuts;
  6. Pulled Chicken (fancy word for sticking a fork through your cooked chicken breast. Don't worry, you can also cut your chicken into cubes and cook it with the remainder of the ingredients.);
  7. Goat Cheese to top.
Photo instructions:
Place veggies and pesto into an olive oil heated pan.
Add Walnuts.
Then Chicken.
Mix it all together.
Cook your pasta of choice.
Once ready and drained...
Combine all of the ingredients into the pasta pot until
everything has been evenly coated.
Top with Goat Cheese.
Enjoy :)

2. Pesto Pizza:

3. Chili:

4. Turkey Veggie Bowl:
  1. 1/2 lb of Lean Ground Turkey or Chicken;
  2. 3 big handFUls of Spinach;
  3. 1 large Red Pepper;
  4. 1 large Yellow Pepper;
  5. 1 chopped bunch of Asparagus;
  6. 4 T of Ground Cumin;
  7. 2 T of Chili Powder;
  8. 1 tsp. Chili Flakes;
  9. Salt and Pepper to taste.;
Cook up your veggies and add the spices.
Then add lean ground meat of your choice.
Once cooked...
Enjoy :)

5. Chicken Balsamic Salad:

There are many different versions of this salad, which has everything to do with the extras I may add to it, such as:
  1. Goat Cheese;
  2. Dried Cranberries or Raisins;
  3. Sunflower Seeds;
  4. A few Croutons (I used to eat Croutons out of the bag back in the day!).

The regular sightings in this salad are:

  1. Lettuce (duh! lol);
  2. Cherry Tomatoes; and
  3. Chicken.

Vinaigrette Ingredients (I tweaked it a tad from my original one):

Whish together....

  1. 1/4  to 1/3 cup Extra Virgin Olive Oil;
  2. 2 T of Raspberry (or regular) Balsamic Vinegar;
  3. 1 1/2  T of Dijon Mustard
  4. Pepper to taste.
You could also serve it without Chicken if you're having...
Salad as your starter.

Okay now moving on to....

Spring has arrived!

The sun is shining, the sky is blue so...

SuperFit and I took FUll advantage of picking up the dogs' winter poo! (Pooooo-e! lol)

Speaking of dogs...

Teddy Bear is doing FUntastic!

He just turned 13 weeks!

But before starting our stinky job...

We went out to play!

Riding is just so much more appealing lol

I should mention...

This was my first 35km ride of the year! (Short and sweet!)

And, as you know...

One of my new year resolution's is to become a better climber! (Trust me, as strong as my legs may be ~ Yes, I do believe they're strong! ~ they sure kick me in the A$% when it comes to getting up a hill in the Gatineau Park! Ugh.)

That being said...

We didn't go in the park because it was closed due to the snow that hadn't yet melted! (Either way, the plan was just to get rolling again, outside! YaY!)

But I was happy because...

We kept a pretty steady pace of 35-40km/h! (This was a good day!)

From what we noticed...

I did do better in those areas I would have typically slowed down and...

I did get a bit faster! (Those millions of spin classes I took over the winter season sure paid off! WoOt WoOT!)

I should point out that while we were riding...

It was really awesome to see everyone outside taking advantage of the gorgeous weather! (Walking, running, biking, rollerblading...whatever!)

I could just feel all the positive energy in the air!

I love the fact my blog post made its way into our local paper in promoting SuperFit's gym!

Original blog post:

(Click on image to enlarge)

I love that I'm getting stronger at the gym!

I also love our recent date night at one of our favourite restaurants...

Caffé Mio!

Best Salad Ever.

I love how SuperFit has become my personal Barista! (Thanks to his new machine!)

He makes a great Cappuccino!
I was not paid to say that ;)

I love my little puppy...

Did I already say that?!

I love how I've added  Bikram Yoga to my weekly schedule...

Now they have! lol

I love the fact I got to meet one of my blog followers!

We went to visit Joan MacDonald from Daydreams Fitness Wear for her first ever Fitness Competition Suit!

I remember how excited I was when I went the first time!!!

Nicole and Joan :)
We had loads of FUn designing her suit!

As you can tell...

There's been loads of eating, playing and loving, and...

Needless to say...

I've been having loads of FUn!
