Super Bowl Recipe Roundup!

Let's get something straight...

I don't watch the Super Bowl. (But I do eat FU Bowls! lol)

I'm just not that into it. (It's just something I never got into!)

Oddly enough, I played Rugby in High School.
That's me on the far left kneeling in the red bandana.

To be completely honest...

I couldn't have told you when the Super Bowl was taking place up until recently! (It's February 5! If you didn't know this already....then you probably don't watch football either! lol)

Having said all of this...

Why then I am doing a recipe roundup for this big event?!

I don't know! (Kidding!)

It's because...

There's food involved and I've got recipes to share for those wanting to make healthier eats! (I was also given this great idea for a post via a friend of mine! Great idea don't cha think?!)

If you like (love) Football, Food, or both...

Here's a list of new (and older) recipes you can make to entertain with and/or enjoy while watching the game or simply because you're hungry and want to eat something! ;)

1. 3 Layer Greek Yogurt Dip

Layer in order listed above.

Try it with Baked Pita Chips.

2. Curry Greek Yogurt Dip

  • 2 cups 0% Greek Yogurt
  • 3 tbsp. Honey
  • 3 tbsp. Grated Onions
  • 1 tsp. Curry Powder
  • 1 tbsp. Lemon Juice
  • 2-3 drops of Tabasco Sauce

Mix together and serve cold.

Try it with Raw Veggies (Bell Peppers, Cucumbers, Celery, Carrots etc...).

3. Hummus & Olive Tapenade Dip

  • Hummus
  • Olive Tapenade
  • Parsley and Pine Nuts to top (translation: to make pretty)

Try it with Baked Pita Chips or Pita Bread and/or Raw Veggies.

4. Baked Nachos

Top the Nacho Chips with Salsa and Grated Allegro Cheese and bake at 350F until cheese has melted.

Dip in Natural Greek Yogurt (instead of Sour Cream). Optional.

5. Collard Green Chips

  • Wash and pat dry the collard green leaves
  • Tear the leaves into chip size bites
  • Discard the middle 'white' stem

Toss the greens into a large bowl and combine the following ingredients (making sure the leaves are evenly coated):

  • Pam Olive Oil Spray (enough to coat the leaves)You can also use 2tbsp of olive oil
  • 2 tbsp of lemon juice
  • Salt to taste ~ I like Garlic Salt - personal preference
  • Chili Flakes (if you like it hot)

Bake at 300F for 20 minutes or until they look crisp.

6. Crispy Filled Shells

Siljans Crispy Shells

1. Hummus and a Sundried Tomato.
2. Goat Cheese, Olive Tapenade and a sprinkle of Paprika and Parsley to top.

Bake at 350F for about 10 minutes (or until slightly browned).

Link above directs you to recipe.

8. Oven Baked Chicken Fingers

  • 2 Sliced Chicken Breasts (makes about a total of 6-8 fingers)
  • 4 Egg Whites or 2 whole Eggs
  • 1 tbsp. Dijon Mustard
  • 1 tbsp. Ground Flax Seeds
  • 1 cup Oatmeal
  • 1/2 tsp. Garlic Salt (or table salt to taste)
  • 1 tsp. Oregano
  • Pepper (to taste)
  • 1 tsp. Chili Flakes (optional)

**You can replace the Oatmeal, Garlic Salt, Oregano, Pepper and Chili Flakes with Italian Bread Crumb Seasoning - Store bought**

Mix the dry ingredients together in a bowl.

Mix the wet together too.

Dip your sliced Chicken into the wet mixture then the dry (make sure to evenly coat - adjust ingredients as you see fit - if you're running out that is.).

Place the coated Chicken onto a baking sheet and bake at 375F for about 15 minutes.

Turn over to cook other side.

Remove from oven when brown, crispy and cooked (no pink!).

I like dipping my Chicken Fingers in Hot Sauce. (Totally up to you!)

Never mind the rice and broccoli in this example lol

9. Chicken Pesto and BBQ Pizzas!

Links above direct you to recipes.

For the BBQ Pizza, switch the Pesto with BBQ sauce of choice.

You can also make mini cheese pizzas using the extra small pita breads available at your local grocers.

10. Oatmeal Carob Protein Cookies

Link above directs you to recipe.

And that's it folks...

Enjoy the game! (And/or the food! lol)

"He shoots, He scores!"

Oh wait, wrong sport...

Touchdown! ;)

I'm wearing a Football looking like shirt! ;)
