It's Been 2 Years!

SuperFit and I recently celebrated our two year anniversary!

I got flowers delivered to my work!!! :)
Gorgeous aren't they?!

Did I ever tell you that on our very first date...

I fell asleep at the movie theatre?!

To make matters even more interesting (I reFUse to say worse!)...

I snored. Loud. Verrrrryyyyy loud.

I mean...

The movie was great (well, from what I saw of it), but...

3D glasses make FU one great cover to 'rest' your eyes! (You should know I have a hard time staying awake FU any movie! Although, I'm doing a bit better now. I last until the Popcorn and *CaNdY* are finished! Kidding! Sort of! lol) ;)

At least I can keep my eyes open FU a picture or six!

As our special day fell on a weekday...

We put our celebration supper on hold!

That being said...

I hadn't put much thought into dinner on the night of our anniversary! (Actually not at all because I was in meetings all day! Is that bad?! lol)

So when I got home...

I threw some Extra Lean Ground Turkey on the defroster! (SuperFit was really impressed. I could tell!)


While the meat was defrosting...

I went to the gym FU a Back workout...

**1 warm up set and 2 working sets of 6-10 reps to failure.**

Hammer Pulldowns.
Seated Rows.
Pull Ups (not the Diaper).
a.k.a. Chin Ups 
Leverage Rows.


007's Spin class!

During the class...

I had the bright idea to make a Spaghetti Sauce with Ground Turkey! (Something quick and tasty using a meat I never once used FU a pasta sauce! Worth trying out I figured!)

**I swear I was paying attention to what was going on around me! lol**

Since I got home beFUre SuperFit...

I started dinner without telling him about my awesome plan! 

Better to surprise him right?! (That's what I thought!)


I had 45 minutes to getter done!

So I got to working! (Recipe is shared at the end of this post!)

As things started rolling...

I decided to make his fave salad and dressing! (Dinner was becoming a little more special as I got things going!)

Balsamic Vinaigrette

I have to say the best part of getting supper together was...

The explosive Tomato Paste!

It literally flew all over the place!

Once I cleaned up the bloody mess (I left one area FU SuperFit as you will see)...

I finished off the sauce!

Is it weird that I used a wok?!

Either way...

Everything was coming together quite nicely!

As soon as SuperFit got home...

He was thrilled to see what was cooking! (And interested to find out what Lean Ground Turkey spag. sauce would taste like!)

He was even more excited when...

I showed him the area that needed cleaning!

That's okay though because...

There's nothing his favorite salad couldn't fix! (Riiiiiight lol)

I added Cherry Tomatoes, Goat Cheese and Walnuts.

And of course...

A big ol' plate of Spaghetti with a lean, mean Meat Sauce!

He loved it!
He was pleasantly surprised :)

As promised...

Here's the recipe! (I threw in the ingredients at random! It seems to be working FU me! lol)

**It took a total of 50 minutes! This included prep time!**

Ingredients are as follows:

  • 1/2 lb of Extra Lean Ground Turkey;
  • 1 Small Chopped Onion;
  • 1 1/2 cup of Sliced Mushrooms;
  • 1 tbsp. of Extra Virgin Olive Oil;
  • A little over 1/2 a large can of Diced Tomatoes (with juices);
  • 1 small can of Tomato Paste;
  • 2 tbsp. of Dried Oregano;
  • 2 tbsp. of Dried Basil;
  • 3/4 cup of Chicken Stock (1 cube with water, dissolved in microwave);
  • 3 Dried Bay Leaves;
  • Salt and Pepper to taste; and
  • Crushed Chilies (optional).


- Heat Extra Virgin Olive Oil in a sauce pan (I know, I know, I used a Wok lol).

- Brown Onions then add Mushrooms.

-Once browned, add in the Ground Turkey.

- Add spices (minus the Bay Leaves) and spread around evenly.

- Add Diced Tomatoes, then Tomato Paste and Chicken Stock. Stir.

- Add Bay Leaves. Stir in.

- Cover the sauce and let simmer.

- Stir occasionally and salt and pepper to taste as you go!
