FU's Protein Muffin Tops and Galettes!

After attending SuperFit's killer spin class on Sunday morning...

I continued making more Protein Snacks! (Well, after spending the day out and about and enjoying the sunshine during this cold winter season!)

In my new-found passion FU baking (I don't know what's gotten into me!)...

I decided to make...

Protein Muffin Tops and Galettes! (Inspired by SuperFit's FUvorite Oatmeal Protein bars!)

FU's Protein Muffin Tops!

I made the Galettes right beFUre my Chest Workout and Spinning Sesh...(The day FUllowing!)

In my experimental mood...

I winged the recipe and...

It came out great! (SuperFit really, REALLY loved these baked goods!!!)

3 bars, 20-25 grams of protein each!

Ingredients to mix in a bowl are as FUllows:
**Makes 12+ Muffin Tops or 3 Galettes! Total prep and cook time: 30-40 minutes. If you want to make more, adjust the ingredients/measurements accordingly. Also, feel free to add ingredients to give them a personal twist!**

  • 2 cups Oatmeal;
  • 2 1/2 scoops Revolution Whey Chocolate Protein Powder;
  • 2 scoops of Fitlicious Chocolate Royale (or Cocoa Powder);
  • 1 tbsp. Flax Seeds;
  • 2-3 packets of Vanilla Stevia;
  • 1 tbsp. Baking Powder;
  • 1/3 cup Carob Chips (sweetened or unsweetened...I used both. How many you choose to add is really up to you and completely optional!); and
  • 1/2 cup of Unsweetened Vanilla Almond Milk;
  • 1/2 cup Egg Whites;
  • 2 tbsps. of Sunflower Oil (optional - makes it moist)

Optional ingredients:
  • 1/2 a medium sized Banana;
  • 10 Blackberries (You can also try blueberries or raspberries too!).

**Note: I've included photos from two separate batches. This is to show you both the Muffin Tops and Galettes!**

Combine the dry ingredients in a bowl....

I made two diFUrent batches...
This being the one with FUruit!

Then the wet!

Mush Mush Mush!

Spoon out the mixture into a non-stick Muffin Top Pan! (I used a mini aluminium foil pan FU the protein bars! My bakeware only goes so far! I need to stock up!)

Set the oven at 350F and Bake FU about 15-20 minutes!

Once cooked...

Remove them from the oven and let stand until cool!

If you lose your patience and want to taste them when warm...

Go ahead! (I know I did!)

So FUreakin' Good!

FU those who have patience...

Place the Muffin Tops and Galettes on a cooling rack!

Once cooled...

Seal them up tight and refrigerate! (They are amazing warm, so heat em' up!)

He was really happy I made him Protein Galettes!
So much so that he packaged them! lol
Ziploc bags will do :)

All in all...

They are deliciousProtein filled, and best of all...

A Healthy Treat!
