FU's Oatmeal Carob Chip Protein Cookies!

What better way to treat yourself than with a Cookie! (One that has Protein as a main ingredient! And remember, I said 'treat', not eat the whole batch lol!)

SuperFit was impressed by them!

As I'm sticking to my New Year Resolution of adding more FUn recipes to my list...

I thought I would attempt a little baking! (I've never baked in my life...My Mom is the Master Chef when it comes to that department, so I never thought to do it myself lol!)

BeFUre sharing this yummy recipe...

I should note I got the itch to bake (some more) after making my Banana Chocolate Baked Oats/Loaf two mornings ago! (Recipe to come!) 

It was delish!

After playing around with some ingredients while making my Baked Oats/Loaf...

I decided make some Cookies! (How hard could it be right?! lol)

I should let you know now that one of the 'secret ingredients' is...

Apple Sauce! (Very little of it, but it's what makes it all stick together!!!)

** I knew of this secret ingredient after coming across it in the various recipes I've seen over the past couple of years! Google and Clean Eating Magazine are wonderFUl things!**

Okay so enough blabbing and onto the baked goods!

Ingredients to mix together (with a spoon! No blender or mixer required!) are as FUllows:

Not too much required to make 1 batch of delish treats!
That's my kind of baking!

1. 2 Cups of Oatmeal (I used one minute Oats because it's what I had in the pantry);


2. 1/4 cup of Apple Sauce (I quickly went to the corner store the other night after the gym!);


3. 1/3 Cup Carob Chips (I mixed both sweetened and unsweetened together! I got them at the Health FU'd store some time ago!);


4. 1 scoop of Revolution Whey Chocolate Protein Powder (your brand of choice);
5. 1/3 cup of  Egg Whites;
6. 1 tbsp. Flax Seeds;
7. 1 tsp. of Cinnamon;
8. 2 packets of Vanilla Stevia (Optional);
9. 1-2 tsp. of Chocolate Royale Flavour Blastor (optional...you can try Cocoa Powder); and...
10. 1/2 tsp of Xanthan Gum! (Optional: you can also use 1/4 tsp. Baking Powder);

I could have mixed it all in one bowl but I unconsciously used a separate one FU some ingredients!
Trust me, it makes NO difFUrence!
I added the Flavour Blaster last as I had FUrgotten about it!

Once all the ingredients were together in one single bowl...

I mixed it all together!

It looked delish already!
I made sure everything was combined!

I then spooned the mixture onto a non-stick cookie sheet! (I bought one over the Holiday Season simply because it was on sale! I didn't think I'd be making cookies with it! I thought it would make a better pan to bake my Asparagus!)


And...

Baked them in the oven at 325F FU about 17 minutes! (I didn't have to sit long in front of the oven window! I was really excited seeing it would be my very FUrst batch of cookies using the oven....EVER! lol)

**I got a sense of when they were ready based on their colour change....then by tasting them!!!)

As soon as I took them out of the oven...

I let them cool FU about 6 minutes! (I couldn't wait any longer...Plus, I love warm cookies!)

They smelled amazing!

I then spatula'd (is that a word?!) them onto a cooling rack! (I actually think it's a roasting rack lol)


After eating two cookies...(I could have eaten the whole batch but had to resist the temptation lol!)

It made about 20-24 small cookies!

I brought one (I guess I could have brought two!) to SuperFit to try out at the Gym! (Where I would then train Biceps and Triceps!)

He shared half of it with his friend Eric (it made the testing less biased lol)...

And (with the look of worry and anticipation on my face)...

They both really liked them!!! (YAY!!! Trust me, I was happy they didn't spit it out!)

When SuperFit got home...

He had another! (That made my day!)

SuperFit approved!

And on top of that...

Super Sly stopped by FU a visit and SuperFit ofFURed him one of my Cookies! (That says a lot right there!)

To his surprise (he didn't seem too impressed when we said it was a 'healthy treat')...

He liked them! (He 'Mmmmm'd' and it was genuine! I think! lol)

"Miammm Baby FU! C'est super bon!"

Again...here's the recipe:

Oatmeal Carob Chip Protein Cookies!

  • 2 Cups Oatmeal;
  • 1 scoop of Revolution Whey Chocolate Protein Powder (brand of your choice);
  • 1/3 cup of  Egg Whites (it provides a light, airy texture, gives the cookies crunch and acts as a strengthener. You could also use 1 egg yolk but I haven't tried it yet! Next time!);
  • 1 tbsp. Flax Seeds;
  • 1/4 cup Apple Sauce (brand of your choice);
  • 1/3 cup Sweetened/Unsweetened Carob Chips (Optional. Measurement is really up to you!);
  • 1 tsp. of Cinnamon;
  • 2 packets of Vanilla Stevia (optional):
  • 1-2 tsp. of Chocolate Royale Flavour Blastor (optional...you can try Cocoa Powder);
  • 1/2 tsp. of Xanthan Gum! (Thickens, makes the 'dough', 'doughy' and helps it rise...Optional: 1/4 tsp. Baking Powder);

**Remember: there is no butter (which tenderizes and gives plenty of moisture), or egg yolk (also tenderizes) in these cookies. They are still moist but they are not comparable to your super high in fat and sugar type of cookie! lol** 

- Mix together in a bowl until all ingredients are combined.

- Spoon out the mixture onto a non-stick cookie sheet.

- Place the cookie sheet in the oven and Bake FU about 15-20 minutes at 325F.

- Once ready, remove from the oven and let cool on a cooling rack FU about 5-10 minutes.

- Place the leftover cookies in a tin can or air sealed container!
