Baker FU: Mini Blueberry & Raspberry Protein Loafs!

Well it only took me until now to use a loaf pan! (I'm sticking to my New Year resolution of adding more to my list of clean eating recipes!)

Let's hope this is a good thing!

After playing around with the recipes I've shared over the past week:


I decided to try something new by varying the measurements around and changing up the bakeware! (I'm having loads of FUn experimenting!)

So what did I make?!

Mini Blueberry and Raspberry Protein Loafs!

Coming out of the oven...
They smelled amazing!

The 1st batch made enough FU 6 mini-loafs! (I wasn't sure how much the recipe would generate...clearly not enough FU 8 lol)

Hmmmm.

So I opted to fill the holes by making the same thing but shifting the ingredients and method around.

**The second batch is actually my fave of the two. Oh, and don't get me wrong, Batch #1 is still delicious but you really have to try both to see which you prefer lol** 

Batch #1

Ingredients to blend (minus the berries - add in after)

  • 1 1/4 Cup Oatmeal;
  • 1 scoop Revolution Whey Chocolate Protein Powder (flavor/brand of choice);
  • 1 tbsp Ground Flax Seeds;
  • 1/2 Cup Egg Whites;
  • 1/4 Cup Unsweetened Vanilla Almond Breeze;
  • 1 HandFUl of Blueberries/Raspberries (optional: you can substitute with a banana, which you would blend);
  • 1 tbsp. Cinnamon;
  • 2 packets of Stevia (or sweetener of choice);
  • 1tbsp. of Chocolate Royal FUlavor Blaster (or Cocoa powder); 
  • 2 tsp. Sunflower Oil; and
  • 1 1/2 tsp. Baking Powder.

**TIP: Add the Baking Powder last!**

Once blended...

Scoop out mixture into a mixing bowl, add the berries as well as (optional)...

- 1/3 Cup of Carob Chips! (I used a combination of both sweetened and unsweetened! Amount added is to your own discretion!) 

**Remember, Carob Chips have calories, sugars and fats too! I consider them as a healthier alternative (free of chemicals) to Chocolate Chips! They are, in my books, a treat and I will 'treat' them as such! The use of Carob Chips is up to you and is not essential to the recipes given.**

Mix it around so as to evenly spread the Carob Chip goodness!

Scrape out the bowl into a mini non-stick loaf pan!

Make sure to scrape out as much as you can!

And...

Bake FU 15-25 minutes at 350F! (Keep an eye on it! No two ovens are the same!)

When ready...

Nom.

Let cool and then place onto a cooling rack...


Then...

Enjoy!

Batch #2

In a bowl mix together the following ingredients (do not blend!):

**This makes 1 serving, which generates 2 mini loafs. If you want to make more, adjust the recipe accordingly.**

  • 1/2 Cup Oats;
  • 3/4 Scoop Revolution Whey Chocolate Protein Powder (flavor and brand of choice);
  • 1 tsp. Ground Flax Seeds;
  • 1/4 Cup Egg Whites;
  • 1/4 Cup Unsweetened Vanilla Almond Milk;
  • 2 Packets of Stevia;
  • 1tbsp. of Chocolate Royal FUlavor Blaster (or Cocoa powder); 
  • 5 Blueberries (or raspberries);
  • 8-10 Carob Chips (optional);
  • 1 tsp. Sunflower Oil; and
  • 1 tsp. Baking Powder.


Scoop out the mixture into your loaf pan and FUllow the same instructions as batch #1!

I really enjoyed both, but you'll have to try them out to see FU yourself!
