Clean Recipes: *CaNdY* Cane Beets, BBQ Char Crust Chicken & Lemon Dressed Greens!

As my Holiday Shopping has FUlly come to a wrap (FU me at least!)...

I made sure my sister Kiki crossed out the remaining people on her list too!

I needed to stock up on wrapping paper!
We ended up taking advantage of all the Xmas sales (60% off) at The Bay!
Nothing like saving $$$ during the Holiday Season!
Notice SuperFit in the background staring at the
Chocolates from Godiva lol

BeFUre putting an end to our shopping excursion...

We stopped at Starbucks FU a well deserved drink!

She got the Skinny, Decaf, Peppermint Mocha Latte.
I had the Skinny Vanilla Latte and SuperFit the Skinny, 1/2 Sweet Chai Latte!

Once warmed up and re-energized...

It was time FU dinner at my Mom's Place!

Prior to arriving...

We discussed our options and decided on the FUllowing buffet menu:

1. Salad with a Lemon and Olive Oil based dressing;
2. BBQ Char Crust Chicken (it's soooooo good!);
3. Basmati Rice;
4. Roasted CauliFUlower; and
5. *CaNdY* Cane Roasted Beets!!! (We had to make it FUstive!)

It's the Holiday Season after all!

We FUrst started preparing the *CaNdY* Cane Beets as they would take the longest to cook!

I wasn't kidding when I said *CaNdY* Cane Beets!

We took them out of the bag and made sure to scrub them clean...

Then it was time to slice and dice!

You can see why they are called *CaNdY* Cane beets!

Once cut up (with no fingers gone missing!)...

We added the ingredients to this simple recipe! (Remember, I really like to keep my ingredients list to a bare minimum lol)

It called FU:

- 1 1/2 tbsp of Olive oil; and
- Salt and Pepper to taste! (I told you it was simple!)

Sprinkle the salt and grind some pepper over top.

Once the ingredients were added...

We mixed everything together and placed the pan in the pre-heated oven set at 400F FU 45 minutes.

Toss and Turn from time to time when in the oven...
Obviously not with your hands! lol
This was our mixing tool to lather all the Beets with the ingredients lol

Next on the making list was the BBQ Char Crust Chicken!

We used the Sun-dried Tomato and Garlic Dry-Rub! (Among the array of FUlavors they have to ofFUr!)

Generously sprinkled some dry-rub all over the Chicken!

We then...

Squeezed our FUvorite BBQ Sauce from President's Choice! (You can use whichever brand you like!)

PC Smokin' Stampede and Beer Chipotle BBQ Sauce!

The recipe is simple yet so incredibly delicious!

Per Chicken Breast add:

- 1 1/2 - 2 tbsp of Char Crust Dry-Rub; and
- 1 tbsp of your FUvorite BBQ Sauce.

Once seasoned...

We fired up the BBQ to get those great grill marks! (Yes, we braved the icy cool weather!)

As the *CaNdY* Cane Beets and Chicken were cooking...

The salad dressing was up FU the making!

I love Lemons, so...

This recipe was perFUct to satisfy my citric taste buds!

The recipe asked FU:

- 3 tbsps of Extra Virgin Olive Oil;
- 2 tbsps of Lemon Juice (FUreshly squeezed);
- 1 small clove of Garlic (minced);
- 2 tbsps of chopped Parsley; and
- Salt and Pepper to taste!

Shake it up and chill until you are ready to dress!

Optional Ingredient:

Croutons! (A childhood nickname! I have a lot of nicknames if you haven't yet noticed lol)

We added a FU of the PC Black Label of Croutons.
They are delish!

As soon as everything was ready to serve...

We dressed the greens...

Plated the Protein...

Removed the Beets and CauliFUlower from the oven...

Add a touch of Olive Oil, Salt and Pepper to taste.
Place in Oven FU about 20 minutes at the same temperature as the Beets!

And dug in!!!

SuperFit was weary about the *CaNdY* Cane Beets because he didn't recall ever liking Beets, period! (He actually thought they were potatoes when plating them!)

After testing them out...

He had no choice but to try 'em! lol

He ended up really liking them!

All in all...

It was an awesome dinner FUeled with great FUlavors!!!

I have to say...

This meal is deFUnitely one of my FUvorites!!

Stay Tuned FU more on *CaNdY FiT*

  1. I was scared of beets until about a year ago when I discovered roasting them. Now they're one of my faves :)

  2. One of my ultimate favorite vegetable! Oddly enough, I don't eat them very often! These were so yummy! :)
